Number Of Ingredients 25

INGREDIENTS:
4 pds fresh chicken wings (approximately 14-16 wings)
1/3 cup dry rub for Chicken ( see below )
1 cup Bourbon Barbecue Sauce ( see below )
DRY RUB
¼ C brown sugar
1/8 C paprika
1 Tbsp salt
1 tsp black pepper
2 tsp coriander
2 tsp garlic powder
2 tsp onion powder
½ tsp cayenne
1 tsp basil
1 tsp celery salt
KENTUCKY BOURBON SAUCE
1 cup Kentucky bourbon whiskey
1/2 cup water
1/4 cup brown sugar
1 ½ cups ketchup
2 Tbsp tomato paste
2 Tbsp balsamic vinegar
4 Tbsp molasses
1/8 cup Worcestershire sauce
½ tsp liquid smoke

Steps:

  • Place wing pieces into a large bowl.. Combine all of the ingredients listed for the dry rub in a medium bowl and then stir to combine. Store in an airtight container. Pour the Spice Rub over the chicken wings. Toss to coat and place the chicken wings into a gallon zip lock bag. Place in your refrigerator for 1-2 hours. Now, it is time to prepare your Kentucky Bourbon Barbecue Sauce. In a medium saucepan, bring the bourbon to a boil. Simmer for about five to ten minutes. Add the water and all of the other ingredients, stir to combine. Simmer for 10-15 minutes, until you reach a thick and smooth consistency. Turn off your heat and allow to cool to room temperature. Store in an airtight container. Heat your grill to medium-high heat. Place the chicken wings in a single layer over the heat. Cook 8 to 10 minutes per side with the grill lid closed. Once fully cooked, remove wings from the grill and place in a large bowl. Add one cup of Bourbon Barbecue Sauce to the cooked wings and toss to coat. Place the wings back on the grill and cook for 1-2 minutes on each side. Serve and enjoy!

Tired of the same old red pepper and butter 'hot sauce' on your wings? Try this on your next batch for a change of pace. We're crispy wing lovers, so we always make them fried. It might work for baked wings as well, but that hasn't been tested...yet. Make your fried wings according to your favorite recipe, coat the wings in this sauce, and sprinkle with sesame seeds just prior to serving. You should be able to coat about a dozen wing pieces with the recipe. Your wings are going to be sticky but the wing lovers I hang with claim they're well worth the mess.

¼ cup packed brown sugar
⅓ cup ketchup
1 tablespoon white vinegar
1 tablespoon hot sauce (such as Frank's RedHot ®)

2 tablespoons butter

Steps:

  • Stir the bourbon, brown sugar, ketchup, white vinegar, hot sauce, cayenne pepper, garlic powder, honey, and butter together in a saucepan over medium heat; cook, whisking occasionally, until the mixture begins to bubble. Reduce heat to low and cook at a gentle simmer, whisking occasionally, until the sauce thickens nearly to the consistency of maple syrup or molasses, about 15 minutes. Remove from heat and allow to cool.

STICKY BOURBON BBQ WINGS WITH BLUE CHEESE DIP

The cool blue cheese & soured cream dip takes the edge off the heat in the sauce. Dip in the chicken wings or the celery and radishes - or do both!

1kg whole chicken wings
2 tbsp olive oil
4 celery sticks , each cut into 4 small sticks (keep some with their leaves)
bunch French breakfast radishes (with their leaves if you can get them)
150ml tomato ketchup
100ml cider vinegar
100ml bourbon
4 tbsp dark brown sugar
2 tbsp hot chilli sauce
1 tbsp Worcestershire sauce
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground paprika
1 tbsp butter
100g gorgonzola
150ml soured cream
50g mayonnaise
good squeeze lemon juice

Steps:

  • Heat oven to 220C/200C fan/ gas 7. Cut the chicken wings into winglets by slicing through each of the joints. Keep the two meaty pieces and discard the wing tips, or freeze for stock.
  • Put the winglets on a large baking sheet, drizzle with the olive oil, then season. Roast in the oven for 20 mins, then reduce the temperature to 180C/160C fan/ gas 4 and cook for a further 25 mins.
  • Meanwhile, make the barbecue sauce. Put all the ingredients, except the butter, in a pan and mix together with plenty of black pepper. Let it bubble away for 3-5 mins to thicken up a little, then add the butter and stir until it has melted and made the sauce nice and shiny. Season to taste.
  • Half an hour before the chicken wings are ready, take them out of the oven and brush over three-quarters of the barbecue sauce. When they're fully cooked, toss them in the rest of the sauce so that they become sticky.
  • In a small bowl, mash the blue cheese dressing ingredients together with some seasoning, until combined. The barbecue sauce and dip can be made a day ahead, covered and chilled. Serve alongside the wings with the celery sticks and radishes for dipping.
