2 lbs chicken wings
1 teaspoon cayenne or 1 teaspoon chili pepper
2 teaspoons oregano
1 teaspoon curry powder
2 teaspoons paprika
2 teaspoons thyme

Steps:

  • Cut off wing tips and cut each in half at the joint.
  • Toss all spices in a bowl and mix vigorously.
  • Spread the mixture on the chicken wings and bake at 375°F.
  • for 25 minutes on each side, or until crispy.
  • Serve right from the oven with ranch or blue cheese dressing and celery sticks.

2 1/2 lbs frozen chicken wings (or both) or 2 1/2 lbs chicken drummettes, thawed (or both)
4 tablespoons butter
1/2 cup Frank's red hot sauce, 1 bottle
1 tablespoon barbecue sauce
1/2 teaspoon chili powder
1/8 teaspoon fresh coarse ground black pepper
1/16-1/8 teaspoon garlic powder
oil (for cooking)
1 cup thick and chunky bleu cheese salad dressing
2 tablespoons crumbled blue cheese (optional)
celery rib

Steps:

  • In deep chicken fryer or large deep skillet, cover bottom of pan with vegetable oil and heat over medium heat til oil is hot.
  • Add wings and drummettes, place on tight fitting lid, and turn down heat to medium-low.
  • Cook about 20-25 minutes til chicken pieces are done, turning several times.
  • *Cooking them with a lid on keeps them moist and tender.
  • While chicken is cooking, melt butter in medium-sized frying pan.
  • Stir in hot sauce, bbq sauce, chili powder, pepper and garlic powder.
  • Cook on low about 5 minutes.
  • When chicken is done, add pieces to sauce and toss.
  • Serve now, or bake in 375 oven for 3-5 minutes if desired.
  • Serve with celery ribs, and bleu cheese dressing topped with crumbled cheese for dipping.

All that's left is mixing them in a bowl with your favorite buffalo sauce and plating them with all the fixings -celery sticks, ranch, blue cheese dip. It doesn't really matter, because these juicy, crunchy wings will be the true game night stars no matter what!

¾ cup cornstarch, divided
2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 teaspoons baking powder
2 teaspoons salt
1 teaspoon black pepper
⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce
ranch or blue cheese dip, for serving
1 stalk celery sticks, for serving, cut into sticks

Steps:

  • In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
  • In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
