KELLY'S KIHEI, MAUI TERIYAKI SAUCE
This is a recipe that we used growing up on Maui. We mostly used it to marinade chicken or beef short rips and then grill the. Because of the sugar content, like barbecue sauce, be careful because it burns easily. I always cook on the grill using indirect heat.

Steps:
- Grate ginger root, crush garlic, and dice scallion. Mix all ingredients together until sugar dissolves pretty well.
- Marinade your choice of meat (I use a ziplock bag) for at least 4 hours, but better overnight.
- Grill and enjoy! Serve "local style" with sticky rice and macaroni salad! Note: preparation time does not include marinating time!

TERIYAKI MAHI MAHI
After trying a few mahi mahi recipes, this one is definitely my favorite. This glazed mahi mahi is good with rice, vegetables or salad. Blotting the fillets before cooking allows a nice brown crust to form. Cod or halibut can be used, too. -Michelle Ibarrientos, Torrance, California

- Sprinkle mahi mahi with garlic powder and pepper. In a large skillet, cook mahi mahi in oil over medium-high heat for 4-5 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., In the same skillet, saute ginger for 30 seconds. Stir in teriyaki sauce; heat through. Serve over mahi mahi.

MAUI TERIYAKI SAUCE MARINADE
My family likes to use this marinade for pork chops, pork ribs or basically any meat that you choose to grill on the BBQ. It has a nice flavor and is quick and easy to do. You can marinate over night or just an hour... of course like most things the longer the marinating the stronger the flavor. This can also be halved for smaller family meals (1/2 recipe covers 4 small pork chops nicely.) I hope you enjoy :)

- Add first two ingredients into a large mixing bowl, stir until sugar is dissolved. Then add the remaining ingredients and stir well. Pour over whatever meat you wish, beef, pork or chicken cover and marinate anywhere from 2 hours to 24 hours.

Steps:
- Mix soy and sugar in small sauce pan over low heat just enough to dissolve sugar. Remove from heat and add remaining ingredients.
- Let cool and store in a glass jar in refrigerator.
- A light inexpensive soy works well for this, just make sure it is real not one with caramel coloring as an ingredient. Tamari is a bit too heavy for this, though will work in a pinch.
- I use my parmesan cheese grater to grate ginger--comes out well that way.
- This is also great on noodles, tofu, vegetables, added to stir frys, besides grilled meats and burgers.
