My Favorite French Toast image

I'd been polishing this recipe for a while, then found the absolute best bread to use and now The Beau says I've ruined him for all other French Toast. It's called shoku pan, it's from the Japanese bakery. Shoku pan is wonderfully square and comes sliced either thin or thick--each of the thick slices are an inch fat! Look for it at an Asian market, I get mine at Uwajimaya or 99 Ranch Market and buy it a couple of days before I'm planning to make this so the bread is slightly stale. If you can't find shoku pan, substitute another thick sliced Texas Toast style bread.

1/4 cup Wondra Flour or 1/4 cup all-purpose flour, can be substituted
1 cup milk, whole is best,room temperature
1 pinch salt
3 eggs, room temperature,slightly beaten
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 teaspoon vanilla extract
1/2 tablespoon sugar
1 tablespoon cognac or 1 tablespoon Grand Marnier
1 loaf shoku pan bread, thick slice

Steps:

  • Pour flour into a large mixing bowl.
  • Slowly whisk in the milk.
  • Whisk in salt, eggs, spices, vanilla, sugar and cognac or Grand Marnier until smooth.
  • Heat a lightly oiled griddle or frying pan over medium heat.
  • Soak bread slices in mixture until saturated.
  • Cook bread on each side until golden brown, keeping cooked slices warm in a 250° oven until ready to serve.
  • Serve hot with butter and your favourite syrup, 2 slices per person.

Steps:

  • In a large shallow bowl, whisk the egg and milk until slightly frothy.

1 loaf French bread
8 large eggs
2 cups whipping cream
1 cup milk
2 tablespoons sugar
2 teaspoons vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch salt (1/16 tsp., just half of an 1/8 tsp. approx.)
1 cup butter
1 cup packed brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Slice the bread into 20-1" slices and arrange the slices in a generously buttered 13x9 or larger baking dish, in 2 rows, overlapping the slices.
  • In a large bowl, combine rest of ingredients beating with whisk til well blended but not foamy.
  • Pour over the bread slices, making sure all are covered spooning some in between the slices.
  • Cover and refrigerate overnight.

3/4 cup plus 3 tablespoons butter, very thinly sliced
3/4 cup dark brown sugar
2 teaspoons vanilla extract
1/4 cup plus 2 tablespoons maple syrup, divided
kosher salt
4 large eggs
1 1/2 cups milk
3/4 cup heavy cream
1/2 teaspoon cinnamon, divided
1 loaf challah, cut crosswise into 1-inch slices (lightly toasted or a day old)
3 tablespoons granulated sugar
2 cups mixed berries, such as raspberries, blackberries and strawberries
1 lemon, juice of
1/2 cup heavy cream, lightly whipped for serving

Steps:

  • In a small saucepan, combine 1 1/2 sticks butter, dark brown sugar, vanilla extract, 3 tablespoons maple syrup, and ½ teaspoon salt. Bring to a boil over medium-high heat, whisking until smooth. Reduce heat to maintain a brisk simmer and continue cooking until thickened and slightly reduced, 3 minutes more. Transfer to an 8" x 8" baking dish and set aside to cool slightly.
  • In a large measuring cup, whisk to combine eggs, milk, cream, remaining 3 tablespoons maple syrup, ¼ teaspoon cinnamon, and ½ teaspoon salt. Place challah in two layers on top of syrup in baking dish, ripping pieces to fill spaces if necessary. Pour milk mixture over challah. Let sit one hour, flipping the top pieces of challah 2-3 times, to help custard saturate slices.
  • In a small bowl, combine 2 tablespoons sugar and remaining ¼ teaspoon cinnamon. Distribute remaining 3 tablespoons butter slices on top of bread and sprinkle cinnamon-sugar mixture on top. Place baking dish on a parchment-lined baking sheet and transfer to oven. Bake until puffed, golden, and a toothpick inserted in the middle comes out clean, about 45 minutes.
  • While French toast bakes, combine berries, lemon juice, and remaining 1 tablespoon sugar in a bowl. Toss to combine and set aside to macerate.
  • Remove french toast from oven and scoop, serving with pan syrup and macerated berries. If desired, serve with additional syrup and lightly whipped, unsweetened cream.

I was certain this was adapted from a Kraft recipe, but search as I might, I can't find it anywhere. Thank goodness I wrote it down. This is a quick and delicious breakfast item and one of my daughter's favourites. Surprizingly filling too. You can change up the cereal and fruit to whatever you prefer, however I don't think I'd try it with Fruit Loops. ;) I make this in two - 3" ramekins, but it could easily be made into a single serving. You would however, have to increase the cooking time slightly.

1 egg
2 tablespoons milk
1/2 teaspoon vanilla
1 slice multi-grain bread, cubed
1/4 cup cereal, I like Bran Buds
1 tablespoon dried cranberries
1 tablespoon walnuts, chopped
1 teaspoon butter
1 tablespoon syrup

Steps:

  • In a small bowl, beat together the egg, milk and vanilla.
  • Add bread, cereal, cranberries and nuts. Allow a minute for the liquid to be absorbed.
  • Scoop into two - 3" ramekins, or one of a larger size.
  • Microwave separately, on HIGH for 1-1/2 - 2 minutes.
  • Serve with butter and syrup.
