SKILLET CORN CAKES

3 cups fresh or frozen corn off the cob
1 cup unsalted butter , softened
1/3 cup sugar
1 teaspoon salt
1 cup masa harina
1/4 cup flour
1 tablespoon unsalted butter, for greasing skillet
Tomatillo Guacamole, recipe follows
Mango Salsa, recipe follows

6 to 8 tomatillos, husked and coarsely chopped (about 8 ounces)
3/4 cup coarsely chopped fresh cilantro leaves
1 avocado, halved, pitted, peeled and diced
1/2 onion, coarsely chopped
1/2 jalapeno, coarsely chopped with seeds
2 cloves garlic, smashed and quartered
Juice of 1 lime
1 teaspoon ground cumin
1 teaspoon salt
1/2 cup diced mango
1/2 cup diced tomatoes
2 tablespoons minced onion
2 tablespoons chopped fresh cilantro
2 teaspoons minced Serrano chile
Zest and juice of 1 lime

Steps:

  • Add 2 cups of the corn to a food processor and puree. Combine the pureed corn with the softened butter, sugar, and salt. Mix well.
  • Stir in the masa harina, and flour, and mix until blended. Fold in the remaining corn kernels.
  • In a large cast iron skillet, heat 1 tablespoon butter over medium-high heat. Drop 1/2 cup portions of the batter into the hot skillet forming patties. Cook until the cakes are golden brown on one side, and flip over. Continue cooking until the cakes are cooked through and golden brown on both sides.
  • Serve the corn cakes as they are, or adorned with shredded cabbage, tomatillo guacamole, sour cream, and mango salsa.
  • To make guacamole:
  • Combine the tomatillos, cilantro, avocado, onion, jalapeno, garlic, lime juice, cumin, and salt in a food processor or blender and pulse until combined.
  • To make salsa:
  • Combine the mango, tomatoes, minced onion, cilantro, chile, lime zest, and lime juice in a small bowl. Allow the flavors to macerate. Serve as a garnish for the cumin seared scallop tacos.
  • Corn Cake Variations:
  • Bacon Corn Cakes: Add 1/2 cup cooked and crumbled bacon to the batter just before cooking.
  • Green Chile Corn Cakes: Add 1/4 cup chopped green chiles to the batter just before cooking.
  • Cumin-Spiced Corn Cakes: Add 2 teaspoons ground cumin to the batter just before cooking.

Verdens Beste Kake means the "world's best cake" in Norwegian. The cake brings together whipped cream, sponge, pastry cream, and meringue.

2 cups (500 ml) whole milk
1 vanilla bean, seeds scraped
1 whole egg plus 1 egg yolk
½ cup (100 g) superfine sugar
¼ cup (30 g) cornstarch
½ tsp. salt
2 Tbsp. (25 g) butter
1¼ sticks (150 g) butter
⅔ cup (130 g) granulated sugar
5 egg yolks
1 cup plus 2 Tbsp. (150 g) all-purpose flour or cake flour
1 tsp. baking powder
1 tsp. vanilla extract, or the seeds from 1 vanilla bean
⅓ cup plus 1 Tbsp. (100 ml) whole milk
⅔ cup (150 ml) whipping cream
½ portion of pastry cream
5 egg whites
A pinch of cream of tartar
1¼ cups (250 g) granulated sugar
⅔ cup (75 g) slivered almonds

Steps:

  • In a saucepan, heat the milk with the scraped out seeds from the vanilla bean.
  • In a separate bowl, whisk together the eggs and sugar and add the cornstarch.
  • When the milk has just reached boiling point, take off the heat and pour one third into the egg mixture while whisking continuously.
  • Once whisked through, pour the egg mixture back into the remaining hot milk. Return to the stove and bring to the boil, carefully. Whisk continuously as the mixture thickens, for just under a minute, then remove from the heat and stir in the salt and butter.
  • Pour into a cold bowl and place a sheet of baking parchment on top to prevent the cream from forming a crust as it cools. The mixture will keep well in the refrigerator for a few days.
  • Preheat the oven to 325°F. Prepare a 9 by 13-inch rectangular cake pan, greased and lined with baking parchment
  • In a stand mixer (or using a hand-held electric whisk) cream together the butter and sugar until pale and light. Add the egg yolks one at a time, beating to ensure everything is well incorporated. Sift in the all-purpose or cake flour, baking powder and vanilla and fold in.
  • Lastly, add the whole milk and fold again until fully combined. Spoon the mixture into the prepared pan and spread out evenly and set aside for a moment.
  • Next make the meringue topping. Using a completely clean bowl, whisk the egg whites with the cream of tartar until soft peaks form. Add the sugar very slowly, bit by bit, beating on high speed until stiff peaks form (about 5 minutes). Spread the meringue mixture on top of the cake mixture. Scatter the slivered almonds on top.
  • Bake in the preheated oven for 35-40 minutes or until a skewer inserted into the middle comes out clean and the meringue is firm. Leave to cool for a few minutes in the pan then turn out carefully, so the meringue is still on top. Leave to cool completely.
  • Whip the cream until stiff and fold together with the pastry cream.
  • To assemble, cut the cake into two halves. On one half, spread the pastry cream mixture, then carefully layer the other half on top. Leave to set in the refrigerator for an hour before serving. The meringue will stay mallowy and the base soft.

1 1/4 cups all-purpose flour
1/3 cup sugar
3/4 cup stone ground yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 tablespoon honey
1/4 cup canola or vegetable oil
1 large egg or 2 large egg whites

  • Coat a large griddle with cooking spray and preheat to medium-high.
  • In large bowl, combine flour, sugar, cornmeal, baking powder, and salt. Mix well with a fork and make a well in the center.
  • In small bowl, whisk together milk, honey, oil, and egg. Pour mixture into center of dry ingredients and mix until just blended.
  • Pour 1/4 cup batter onto griddle for each corn cake. Cook 2 minutes per side, until puffed up, golden brown and cooked through.

1 7oz box corn muffin mix (Again, cheaper is better for this dish)
2 Tbs sugar
2 eggs
1 cup sour cream (Non-fat preferred)
1/4 cup margarine

It's extremely kid-friendly, but is also enjoyed as anju, or food that pairs well with alcohol. (Soju, a popular Korean alcoholic beverage, is a great match.) This versatile, sweet-savory dish is best enjoyed hot and accompanied by an array of dishes, like kimchi, gochujang-glazed eggplant, bulgogi or galbi.

1 (15-ounce) can corn kernels, drained
1/4 cup finely chopped red bell pepper
3 tablespoons mayonnaise
1 teaspoon granulated sugar
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 tablespoon unsalted butter
3/4 to 1 cup shredded mozzarella cheese (see Tip)
1 scallion, thinly sliced

Steps:

  • Heat your broiler. In a medium bowl, combine corn, bell pepper, mayonnaise, sugar, salt and pepper.
  • In an 8-inch cast-iron or ovenproof skillet, melt the butter over high. Add the corn mixture and sauté just until warmed, 2 to 3 minutes.
  • Spread the mixture evenly into a single layer, then cover with cheese.
  • Set the skillet on the rack nearest the broiler and cook until the cheese is golden brown in spots, about 3 to 4 minutes. (Keep a close eye on it, as oven temperatures may vary.)
  • Sprinkle with the scallions and enjoy while it's hot and cheesy!

  • Preheat oven to 375 degrees. Put margarine in 8x8 pan (9x13 pan when doubling the recipe) and place pan in oven to melt margarine during preheating. 1 1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
3 tablespoons coconut oil or vegetable oil
1/2 cup popcorn kernels
1/4 cup sugar

Steps:

  • Line a rimmed baking sheet with parchment paper. In a small bowl, mix together the salt and cinnamon. Set aside.
  • Heat a large Dutch oven, covered, over medium-high heat for 2 to 3 minutes. Add the coconut oil and heat 30 seconds. To check if the Dutch oven is hot enough, add one or two popcorn kernels to the pan and cover with the lid. Cook until you hear the kernels pop, 1 to 2 minutes.
  • Add the remaining kernels and the sugar, stir to combine and cover. Shake the pan vigorously to coat the kernels in the sugar and oil. Cook, shaking the pan often, until the popping has slowed to about 2 pops per second, about 2 minutes.
  • Remove the Dutch oven from the heat and carefully uncover. Pour the mixture onto the prepared pan and sprinkle with the cinnamon salt. Be careful: the popcorn is extremely hot at this point. Allow the kettle corn to cool for 5 minutes before enjoying.
