SMOKY CHICKEN SALAD

2 large skinless, boneless chicken breasts (about 1 1/2 pounds)
1/4 cup extra-virgin olive oil
1/2 teaspoon smoked paprika
Kosher salt and freshly ground pepper
1 clove garlic
3 jarred piquillo peppers (2 whole, 1 thinly sliced)
1/3 cup mayonnaise
Juice of 1/2 lemon
3 tablespoons chopped fresh cilantro
16 small Bibb or romaine lettuce leaves
2 stalks celery, thinly sliced
3 tablespoons salted Marcona almonds, roughly chopped

Steps:

  • Preheat a grill to high. Toss the chicken with 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Grill the chicken until marked and cooked through, about 7 minutes per side. Let cool slightly, then thinly slice.
  • Meanwhile, make the dressing Combine the garlic and the remaining 3 tablespoons olive oil in a small microwave-safe bowl; microwave until the garlic is softened, about 1 minute. Transfer the garlic and oil to a blender; add the 2 whole piquillo peppers and puree until smooth. Transfer to a bowl and whisk in the mayonnaise, lemon juice and 2 tablespoons cilantro; season with salt and pepper.
  • Divide the sliced chicken among the lettuce leaves; drizzle with the dressing. Top with the celery, almonds, the remaining sliced piquillo pepper and 1 tablespoon cilantro.

I lost my Grandma a year ago, and have been copying her recipes for my family (my cousin wanted all of grandma's recipes so this turned into a MAJOR project) and this has been one of my favorites growing up, and now that I have a copy of it I can make it.

2 cups diced cooked chicken or 2 cups cooked turkey
1 (8 ounce) can water chestnuts, drained and sliced
1 teaspoon salt
2 tablespoons lemon juice
1/2 cup slivered almonds
1/4 teaspoon celery salt
2 stalks celery, chopped
1/8 teaspoon pepper
1 cup mayonnaise
3/4 cup grated or finely chopped cheddar cheese
1/2 cup crushed French-fried onions

Steps:

  • Mix all ingredients together, except for cheese and onion.
  • Cheese and top and cover with onions.
  • Bake at 350 degrees for 30 minutes.

This is a very nice salad, especially in the summer. Smoked chicken could be substituted for the turkey.

8 large red potatoes, cut in eights
1 lb green beans, trimmed
4 ears corn, shucked,kernels removed with a sharp paring knife
1/2 red onion, thinly sliced
1/2 lb smoked turkey breast, diced
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons balsamic vinegar
2 teaspoons Dijon mustard
1 teaspoon dried sweet basil leaves
4 tablespoons olive oil

Steps:

  • In a large pot bring 2 quarts of water to a boil.
  • Add the potatoes and cook until almost tender, about 15 minutes.
  • Add the green beans and corn and cook for 3 minutes.
  • Drain in a colander.
  • Place the vegetables in a salad bowl.
  • Add the red onion slices and turkey; toss to combine.
  • In a bowl, combine the salt, pepper and balsamic vinegar.
  • Whisk until the salt dissolves.
  • Add the mustard and basil, whisk well.
  • Slowly drizzle in the olive oil, while whisking constantly, to form an emulsion.
  • Pour the dressing over the salad and stir to combine.

The great smoky flavor comes through the simple dressing, and the sweet taste of red grapes complements it nicely. Serve over lettuce for a stand alone salad, or use in a sandwich, if you prefer.

2 cups chopped leftover smoked chicken
⅔ cup chopped celery
½ cup halved seedless red grapes
¼ cup chopped pecans
3 medium scallions, white and green parts, chopped
½ cup mayonnaise
1 teaspoon raspberry vinegar
½ teaspoon ground paprika
freshly ground black pepper to taste

Steps:

  • Combine chicken, celery, grapes, pecans, and scallions in a medium bowl.
  • Stir mayonnaise, vinegar, paprika, and pepper together in a small bowl until well blended. Pour over chicken mixture and stir until well combined.

Toss penne with smoked turkey, sharp Cheddar, hard-boiled eggs and a creamy lemon dressing.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
8 ounces dried penne
1 cup shredded sharp Cheddar
1 cup diced smoked turkey
2 hardboiled eggs, chopped
1/2 cup shredded carrots
1/4 cup thinly sliced celery

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add to the bowl with the dressing.
  • Add the Cheddar, turkey, eggs, carrots and celery to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

Kat's Smoked Chicken or Turkey Salad Italiano image

I invented this because I needed to do something with leftover smoked turkey from Christmas, and I was hungry for some Italian flavors. Voila, oops, that's French. I wonder what the Italian equivalent of that is. LOL This is really very good, and not at all an ordinary chicken or turkey salad.

2 1/2 cup(s) smoked turkey or chicken, chopped
1/2 cup(s) onion, chopped
1/2 cup(s) red bell pepper, chopped
1 cup(s) baby portebello mushrooms, chopped
1 1/4 cup(s) fresh spinach, chopped
1 can(s) (2.25 oz.) sliced black olives, drained
1/3 cup(s) fresh grated parmesan (opt.)
1/4 cup(s) rehydrated sun dried tomatoes (opt.)
1 cup(s) mayonaisse (more if needed to moisten the ingredients)
- garlic powder, salt, black pepper, and cayenne to taste. i like a lot of cayenne
- fresh basil to taste (in season) (opt.)
BREAD
8 - hard rolls
- pam cooking spray
- garlic powder, parsley, and thyme

Steps:

  • Chop and place into a bowl, the smoked chicken or turkey, onion, red bell pepper, mushrooms, and spinach; add the sliced olives(1/4 cup to one can), the sun dried tomatoes and parmesan if you choose to use them. (It is perfectly good without them, but it just adds a little more Italian flavor.) Add the garlic powder, black pepper, salt, and ground cayenne pepper, and during the spring and summer, fresh basil is a great addition.
  • Stir in mayonnaise to moisten. Be sure to taste. You might want more cayenne (LOL), salt, pepper, or basil. I only use basil in season when I have it in my herb garden. I don't use the dried. The recipe is good without it too.
  • Slice open hard rolls, spray with pam, then sprinkle garlic powder, parsley and thyme on them and toast them. Use mayonaisse or creamy italian dressing on the roll, and then spread on the chicken or turkey salad. Enjoy.
