This spread is so simple to make but it does need to be refrigerated at least 8 hours to allow the flavors to meld. It also may be frozen in an air- tight container for up to 1 month. Thaw in refrigerator at least 24 hours afterwards and stir before serving. Karpathos is a Greek Isle.

8 ounces neufchatel cheese, softened or 8 ounces cream cheese
4 ounces feta cheese, crumbled
1/4 cup mayonnaise
1 garlic clove, minced
1 tablespoon fresh dill, chopped
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
3 cucumbers

Steps:

  • Process all ingredients except cucumbers in a food processor until smooth, stopping to scrape down sides. Cover and chill at least 8 hours.
  • Peel cucumbers using a potato peeler leaving thin strips of the skin so it's striped. Cut them in half lengthwise.
  • Scoop out seeds using a teaspoon. Fill cucumber boats with cheese spread.

1 cup quinoa, rinsed
6 medium cucumbers
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1 package (4 ounces) crumbled tomato and basil feta cheese
1/2 cup pitted Greek olives, chopped
1/4 cup lemon juice
3 tablespoons honey
2 tablespoons olive oil
2 garlic cloves, minced
1/4 teaspoon pepper
1 carton (14 ounces) roasted garlic hummus
Minced fresh basil, optional

Steps:

  • Cook quinoa according to package directions. Transfer to a large bowl; cool slightly., Meanwhile, cut each cucumber in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Add garbanzo beans, tomatoes, cheese and olives to quinoa. In a small bowl, whisk lemon juice, honey, oil, garlic and pepper until blended. Pour over quinoa mixture; gently toss to coat. Spread about 2 tablespoons hummus inside each cucumber shell. Top each with about 1/3 cup quinoa mixture. Sprinkle with basil if desired.

Cucumbers grow abundantly throughout Eastern Europe and are often combined with sour cream or cheese. This is an easy Yugoslavian recipe and it makes a light appretizer or salad.

2 medium ripe tomatoes, chopped into 1/4 inch pieces
1 1/2 teaspoons olive oil
1 teaspoon vinegar
1/4 teaspoon dried oregano
4 1/2 tablespoons feta cheese, finely crumbled
2 large cucumbers
salt & pepper

Steps:

  • In a small bowl. combine chopped tomatoes, oil, vinegar, oregano, salt, and pepper. Toss gently until well mixed. Chill until serving time. (at least a few hours).
  • Just before serving, add feta cheese to tomatoes and mix well.
  • Peel cucumbers and cut them in half lengthwise. Using a melon ball scoop or a spoon, scoop out and discard seeds. Pile tomato mixture into cucumbers.
  • Serve right away.
  • Preparation time does not include chilling time.

3 medium-size English cucumbers
Kosher salt
One 8-ounce block cream cheese, at room temperature
1/2 cup mayonnaise, at room temperature (no more than 2 hours)
1 stalk celery, finely diced (1/2 cup)
1/2 red bell pepper, finely diced (3/4 cup)
1/2 yellow bell pepper, finely diced (3/4 cup)
1/2 pound lump crabmeat, picked through to remove any shells
1 1/2 teaspoons seafood seasoning (I like Old Bay)
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh dill, plus more for garnish

Steps:

  • Cut the cucumbers in half lengthwise. Use a spoon to scrape out the seeds. Cut each cucumber half crosswise into 4 pieces and place on a paper towel-lined baking sheet. Sprinkle with salt. Let stand while making the filling.
  • Beat the cream cheese and mayonnaise in a medium bowl until smooth. Fold in the celery, bell peppers, crabmeat, seafood seasoning, lemon zest, lemon juice and chopped dill.
  • Pat the cucumbers dry (to remove the liquid and salt). Spoon the crab salad into the hollowed cucumbers. Garnish with more dill. Refrigerate until ready to serve.

1 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cut cucumbers in half lengthwise; remove seeds.

1/3 cup elbow macaroni
1 (7 ounce) can tuna, drained
1 carrot, medium
1 stalk celery
1/3 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon salt
1 pinch pepper
3 medium cucumbers

Steps:

  • 3 cups of water and pinch of salt into a small saucepan. Bring to a boil. Add the elbow macaroni gradually and boil until tender-about 8 to 10 minutes Drain the macaroni and place in medium mixing bowl.
  • Add tuna to macaroni.
  • Grate carrot and chop celery into tiny pieces and add both to macaroni and tuna.
  • Add mayonnaise, lemon juice, salt, and pepper and stir with fork.
  • Peel cucumber and cut off ends. Cut each cucumber length wise. Scoop out seeds and watery flesh.
  • Fill each cucumber with tuna mixture.
