CROCK-POT HUNGARIAN BEEF GOULASH

I had been searching for a good goulash recipe for quite some time, and finally made my own from bits of several others. No potatoes in this one (my crock-pot usually doesn't get them tender enough). It will need salt at the end or at the table - I cook with very little salt and add it at the end because many of my friends need low-sodium food. My SO has been telling people 'It was GOOD goulash' for days since I made it. Enjoy!

3 lbs beef stew meat
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons paprika
1/8 teaspoon cayenne
1 large onion, diced
1 garlic clove, minced
1 cup tomato puree
2 tablespoons Worcestershire sauce
8 ounces sliced mushrooms
1 tablespoon brown sugar
1 1/2 teaspoons dry mustard
2 tablespoons lemon juice
1 cup beef stock
1 tablespoon flour
1 tablespoon butter, at room temperature
1 teaspoon salt (to taste)

Steps:

  • Blot meat cubes dry and dredge with flour mixed with salt and pepper.
  • Heat oil in large skillet; brown meat cubes. Drain off excess fat. Brown meat in batches if necessary.
  • Place meat in crock-pot. Sprinkle meat with paprika and cayenne, stirring and turning cubes to season evenly.
  • Add onions and garlic to crock-pot.
  • Combine tomato puree, Worcestershire sauce, mushrooms, brown sugar, dry mustard, lemon juice and beef stock. Blend. Pour over meat.
  • Cover and cook on low for 6 to 8 hours.
  • Knead butter with flour to make a paste. Add to crockpot and stir well. Cook on high 15 minutes or until thickened.
  • Add salt at end of cooking, or salt to taste at table.

2 lbs boneless beef stew meat, cut into bite-sized pieces
2 tablespoons butter
1 cup onion, chopped
1 garlic clove, minced
3/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
2 teaspoons paprika
1/2 teaspoon dry mustard
cayenne pepper, to taste
1 1/2 cups water
2 tablespoons flour
1/4 cup water
3 cups hot buttered egg noodles
caraway seed (optional)

Steps:

  • Brown beef stew meat in butter.
  • Put onions, garlic, ketchup, worcestershire sauce, brown sugar, salt, paprika, dry mustard, cayenne pepper, 1 1/2 cups water and stew meat into a crock pot.
  • Cover and cook on low for 7 to 8 hours.
  • To thicken goulash, about 1/2 hour before serving mix 2 tablespoons of flour and 1/4 cup water in a bowl. Mix well.
  • Add to crock pot and stir well.
  • Cover, turn heat to high and cook approximately 1/2 hour.
  • Serve over hot buttered egg noodles. Caraway seeds can be added to buttered noodles if desired.

1/4 cup red wine
1/4 cup tomato paste

2 garlic cloves, minced

Steps:

  • Place onions and carrots in crock pot.
  • Combine next four ingredients; toss beef with this mixture and add to crock pot.

1/4 cup all-purpose flour
1 tablespoon sweet Hungarian paprika
1 1/2 teaspoons salt
1/2 teaspoon hot Hungarian paprika
1/2 teaspoon ground black pepper
2 lbs beef stew meat, cut into 1 1/4-inch pieces
4 tablespoons vegetable oil, divided
1 large onion, chopped
2 garlic cloves, minced
28 ounces beef broth
14 1/2 ounces stewed tomatoes, undrained
1 cup water
1 tablespoon dried marjoram, crushed
3 cups medium egg noodles, uncooked (about 6 ounces)
1 large green bell pepper, chopped

Steps:

  • Combine flour, sweet paprika, salt, hot paprika and black pepper in resealable plastic food storage bag. Add 1/2 of beef. Seal bag; shake to coat well. Repeat with remaining beef.
  • Heat 1 1/2 tablespoons oil in Dutch oven over medium heat. Add one-half of beef; brown on all sides. Transfer to large bowl. Repeat browning with 1 1/2 tablespoons oil and remaining beef; transfer to same bowl.
  • Heat remaining 1 tablespoon oil in same Dutch oven; add onion and cook 8 minutes or until tender. Add minced garlic cloves and cook for 2-3 more minutes, stirring often.
  • Return beef and any juices to Dutch oven. Add broth, tomatoes with liquid, water and marjoram. Bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer 1 1/2 hours or until meat is tender, stirring once.
  • When meat is tender, stir in noodles and bell pepper; cover. Simmer about 8 minutes or until noodles are tender, stirring once. To serve, ladle into 8 soup bowls. Dollop with sour cream.

Unlike the Hungarian version, Viennese goulash is not soup-like. This hearty recipe will warm you on cold days! The recipe comes from an Austrian travel brochure.

2 1/2 lbs beef chuck, trimmed of excess fat
1 tablespoon vegetable oil
2 lbs onions, diced
1 garlic clove, chopped finely
1/4 cup red wine vinegar
2 tablespoons paprika
1 bay leaf
1/2 teaspoon ground marjoram
1/2 teaspoon ground caraway
3 cups beef stock (approximate)

Steps:

  • Cut beef into 1-inch cubes. Brown meat in oil in batches to avoid overcrowding the pan. Remove cooked beef to a bowl and set aside.
  • Saute onions and garlic until limp. Add vinegar, stirring to deglaze the pan.
  • Add remaining ingredients and cooked beef to pan; stir to blend. Heat to a boil, then reduce to a simmer and cover.
  • Cook 3-4 hours, until beef is very tender, adding more beef stock if needed.
  • Remove bay leaf and serve over spaetzle or egg noodles. (A baby gherkin sliced into a fan is the traditional garnish.).
