1 stick unsalted butter, plus more for the baking dish
1 pound sweet Italian sausage, casings removed
4 stalks celery, chopped
2 onions, chopped
1 tablespoon chopped fresh thyme
2 teaspoons chopped fresh rosemary
Kosher salt and freshly ground pepper
1 bunch kale (preferably Tuscan), stemmed and chopped
3 cups low-sodium chicken broth
2 large eggs
1/4 cup chopped fresh parsley
16 cups 1/2-inch stale white bread cubes (about 1 1/2 pounds)
4 ounces provolone cheese, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 375 degrees F and butter a 3-quart baking dish. Melt 6 tablespoons butter in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until lightly browned and cooked through, about 7 minutes.
  • Add the celery, onions, thyme, rosemary, 1 teaspoon salt and a few grinds of pepper to the pot. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Add the kale and cook, stirring, until just softened, about 3 minutes. Add the chicken broth and bring to a simmer, then remove from the heat and set aside.
  • Whisk the eggs and parsley in a large bowl. Add the bread cubes and the sausage mixture; stir to combine. Fold in the provolone. Transfer the stuffing to the prepared baking dish. Cut the remaining 2 tablespoons butter into cubes and dot over the stuffing. Cover with foil and bake 30 minutes, then uncover and bake until golden brown, about 20 more minutes.

  • Brown sausage in large skillet sprayed with cooking spray, stirring occasionally; drain. Return sausage to skillet.

3 tablespoons extra-virgin olive oil
3 links hot Italian sausage, casings removed
3 garlic cloves, minced
6 ounces kale, tough stems removed and leaves coarsely chopped
1/4 cup water
1/4 cup chopped golden raisins
2 tablespoons toasted pine nuts
1 tablespoon coarsely chopped fresh sage
Coarse salt and freshly ground pepper

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium heat. Cook sausage, breaking up large pieces with the back of a spoon, until browned, about 8 minutes. Transfer sausage to a bowl.
  • Add garlic to skillet. Cook until soft, about 1 minute. Add kale and water. Cook until kale wilts and is almost completely cooked, about 3 minutes. Drain on paper towels, squeezing out excess water.
  • Add kale mixture, raisins, pine nuts, sage, and remaining 2 tablespoons oil to bowl with sausage. Season with salt and pepper. Transfer to a cutting board, and finely chop. Transfer to a bowl, and refrigerate until ready to use.

1/2 sprig rosemary
2 t thyme leaves
2 sliced chile de arbol
1 t kosher salt
Black pepper
1 lb lacinato kale tough ribs removed and roughly chopped
3 oz deglet noor dates-about 16 halved lengthwise
1c dry sherry
2c chicken or turkey stock
4 T uns butter
3/4 c chopped toasted almonds

Steps:

  • Heat oven 400. cut crust off of bread and tear remaining loaf into 1" croutons Place on rimmed baking sheet and drizzle w/4T oil, squeezing and tossing bread Toast till golden brown crispy on outside and tender inside, 12-15 min. Cool Heat large Dutch oven over med-high heat add 2 t oil and crumble sausage into pan Saute until browned and just cooked thru, 5-7 min Transfer sausage to bowl w/croutons w/a slotted spoon Return pot to med heat and add 2 T oil, onions, rosemary, thyme and chile Season w/ 1/2 t salt and few grinds of pepper Cook 3-4 min until onion is soft and starts to color slightly Add half the kale and remaining 2 t of oil Use tongs to turn greens and to coat in oil When greens are wilted add rest of kale and season w 1/2 t salt and a few grinds of pepper When all kale is wilted add to bowl. Remove rosemary Add dates and stir well to combine Return pot to stove over high heat and carefully pour in sherry Boil unitl sherry is reduced by 3/4, then add stock Boil until mixture is reduced by half, then swirl in butter till melted Pour hot liquid over mixture Add almonds Use hands to integrate flavors and make sure bread has soaked in all of the liquid Transfer to a ceramic baking dish Cover and bake 15 min in 400d oven Uncover and bake 1-15 min until golden and crisp

Sourdough Stuffing with Sausage, Red Onion and Kale image

1/2 stick unsalted butter, cubed, plus more for greasing
1 pound sweet Italian sausage, casings removed and meat crumbled
2 medium red onions, cut into 1-inch wedges through the core
1/4 cup extra-virgin olive oil
1 pound curly kale, leaves torn
4 large eggs
2.5 cups chicken stock or low-sodium broth
1.25 pounds sourdough bread, torn into 2-inch pieces
1/2 cup chopped parsley
1 tablespoon thyme leaves
1 teaspoon crushed red pepper
1 pinch Kosher Salt
1 pinch Black Pepper

Steps:

  • The recipe can be prepared through Step 2 and refrigerated overnight. Bring to room temperature before baking.
  • Preheat the oven to 375°. Butter a 9-by-13-inch baking dish. On a large rimmed baking sheet, toss the sausage, onions and oil and season with salt and black pepper. Roast for about 20 minutes, until browned and softened. Scatter the kale on top of the sausage and onions and roast for about 5 minutes, until just wilted. Transfer one-fourth of the mixture to a plate and reserve. Let cool slightly.
  • In a large bowl, beat the eggs with the chicken stock. Add the bread, the 1/2 stick of butter, the parsley, thyme, crushed red pepper, 1 1/2 teaspoons of salt and 1 teaspoon of black pepper; mix well. Fold in the three-fourths of sausage-kale mixture, then scrape into the prepared baking dish. Decoratively scatter the reserved sausage-kale mixture on top, gently pressing it into the stuffing. Cover the baking dish tightly with foil.
  • Bake the stuffing for 30 minutes, until hot. Uncover and bake 30 minutes longer, until lightly browned. Let stand for 10 minutes before serving.

The state remains extravagantly proud of the bounty of its land, and all of the best West Coast cooks (both in restaurants and in homes) integrate local agricultural blessings into their handiwork. We can think of no one who does a finer job of that than Suzanne Goin, a Los Angeles native who has adapted Mediterranean cuisine to the Pacific Coast at spots like Lucques, The Hungry Cat and A.O.C. Her stuffing recipe here pays tribute to the whole length of the state, with nods to the sourdough that you associate with fog-strewn San Francisco and to the almonds and dates of the Central Valley. As Ms. Goin explained in an email, â??There is no egg and no real attempt to emulsify it like your momâ??s stuffing â?? itâ??s loose, laid-back and doing its own thing, California-style.â?

  • Heat oven to 400 degrees. Cut the crust off the bread and tear remaining loaf into 1-inch croutons. Place torn bread on a rimmed baking sheet and drizzle with 4 tablespoons olive oil, squeezing and tossing bread with your hands to help it absorb the oil. Transfer to oven and toast, tossing once or twice, until croutons are golden brown and crispy on the outside but still a little soft and tender inside, 12 to 15 minutes. When croutons have cooled, place them in a large bowl.
  • Heat a large pot or Dutch oven over medium-high heat. Add 2 tablespoons olive oil and crumble sausage into pan. Sauté, breaking up sausage with a wooden spoon, until browned and just cooked through, 5 to 7 minutes. Transfer sausage to the bowl with the croutons using a slotted spoon.
  • Return the pot to medium heat and add 2 more tablespoons olive oil, the onions, the rosemary sprig, the thyme and the chile. Season with 1/2 teaspoon salt and a few grinds of black pepper. Continue cooking another 3 to 4 minutes, stirring often, until onion is soft and starting to color slightly.
  • Add half the kale and the remaining 2 tablespoons olive oil to the pan. Use tongs to turn the greens to coat them in oil and help them wilt and cook down. When there is room in the pan (from the greens wilting), add the rest of the kale and season with another 1/2 teaspoon salt and a few grinds of pepper. As soon as all the kale has wilted, transfer mixture to the bowl with the croutons and sausage. Remove rosemary. Add dates and stir well to combine.
  • Return pot to stove over high heat and carefully pour in sherry. Boil until sherry is reduced by three-quarters, then add stock. Boil until mixture is reduced by half, then swirl in butter until melted.
  • Pour hot liquid over crouton-kale mixture. Add almonds and toss well to combine; using tongs or your hands, squeeze and massage the stuffing to integrate the flavors and make sure bread has really soaked in all the liquid.
  • Transfer stuffing to a ceramic baking dish or casserole. Cover and bake 15 minutes in the 400-degree oven. Uncover and bake 10 to 15 more minutes, or until top is golden and crisp.

1 pound sweet Italian fennel sausage, casings removed, broken into small pieces
3 large leeks, white and light-green parts only, sliced
1/2 medium butternut squash, peeled and diced
Kosher salt and freshly ground pepper
1 bunch kale, leaves trimmed and chopped
1 pound stale onion focaccia, cubed
1 large egg
2 cups low-sodium chicken broth or turkey stock
1 cup diced parmesan cheese, plus 1/4 cup shredded

Steps:

  • Preheat the oven to 350 degrees F. Butter a 3-quart casserole dish. Heat 1 tablespoon butter in a large Dutch oven or heavy pot over medium heat. Add the sausage and cook until golden brown, about 6 minutes. Add the leeks and squash and season with 1 teaspoon each salt and pepper; cook until the leeks are soft, about 3 minutes. Add the kale, toss and cover until the kale wilts, about 4 minutes. Add the focaccia cubes and the remaining 3 tablespoons butter and toss until the butter melts. Whisk the egg and chicken broth in a bowl until smooth; stir in the diced parmesan and 1 teaspoon salt. Pour the broth mixture over the bread mixture; cook until the liquid is absorbed by the bread, about 1 minute. Transfer the bread mixture to the prepared casserole dish. Scatter the shredded cheese evenly on top and bake until golden and cooked through, about 40 minutes. Set aside for 5 minutes before serving.
