This is one of our favorite things to BBQ, everyone here loves sweet meat. I have experimented for years, and this is the best, lots of input from friends, and it started from Korean recipes. In Hawaii, we have alot of mixed up ethnic foods. This is almost always served with steamed white rice and some potato-mac salad and some salted cabbage.

5 lbs thin cut tender short rib of beef, cross cut, about 1/2 inch thick (can substitute chuck steak)
2 cups soy sauce (I use 1/2 aloha brand and 1/2 yamasa brand.)
2 cups white sugar
4 garlic cloves (pressed or chopped fine)
1 inch ginger, grated
1 teaspoon toasted sesame oil
sliced green onion (optional)
sesame seeds, toasted until they pop and turn light brown (optional)
1 little red pepper paste (optional) or 1 red chile (optional)

Steps:

  • Place ribs in a glass dish or a Tupperware marinator.
  • Mix all ingredients except for the optional ones in a pan and warm until the sugar melts, then cool.
  • Pour marinade over ribs, add optional ingredients if you like, and place in the refrigerator 4 hours or overnight, mixing up occasionally to make sure all ribs are covered with sauce.
  • Grill or broil until sizzling, being careful not to burn because of the sugar.

Aloha! I started making these when we lived in Hawaii and they are still one of my favorite things to grill. The recipe comes from "A Taste of Aloha" by the Junior League of Honolulu. Cooking time includes marinating time but not actual grilling time since it's up to the chef.

2 -3 lbs short rib of beef
3/4 cup soy sauce
3/4 cup sugar
3/4 cup water
3 inches piece fresh ginger, sliced
1 garlic clove, minced
1 tablespoon sesame oil

Steps:

  • Combine all ingredients and marinate ribs for 4 hours.
  • Broil or barbecue to desired degree of doneness.

Kalbi (KAHL-bee): A traditional Korean BBQ meat dish, kalbi is marinated short ribs (either on the bone or cut into pieces) cooked on a grill.

1/2 cup soy sauce
1 Korean pear or Asian pear, grated with juices
2 tablespoons finely chopped garlic
1/2 small white onion, grated or sliced
1 tablespoon grated fresh ginger
2 tablespoons light brown sugar
1 tablespoon honey
2 tablespoons sesame seeds, toasted
2 tablespoons toasted sesame oil
1 tablespoon ground red pepper
1/4 teaspoon ground black pepper
2 green onions, thinly sliced
1 (20-ounce) bottle lemon-lime soda, optional (recommended: Sprite or 7-Up)
4 pounds short ribs
Cooked white rice
Prepared kimchee (available at Korean grocers)

Steps:

  • For the marinade: Whisk together all the marinade ingredients in a large baking dish. Add the ribs and turn to coat. Cover and refrigerate for at least 1 hour or overnight; it is best if marinated overnight.
  • For serving: Heat grill to high. Remove short ribs from marinade and grill short ribs until slightly charred and tender and cooked to desired degree of doneness. Serve short ribs with white rice and kimchee.

This is the staple of Korean fine dining, but too expensive in the restaurants. It is also simple to make at home, and will leave your guests asking for more. Total time includes marinating time. Traditionally, should be served sliced, rolled in romaine lettuce leaves, along with white rice, lightly browned garlic slices, and gochujang (Korean red pepper paste).

¾ cup soy sauce
¾ cup brown sugar
¾ cup water
1 garlic clove, minced
2 green onions, chopped
1 tablespoon Asian (toasted) sesame oil
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the ribs from the bag, shake off the excess marinade, and discard the marinade. Grill the ribs on the preheated grill until the meat is still pink but not bloody nearest the bone, 5 to 7 minutes per side.

This is a very tasty marinade that my aunt brought to the family from Hawaii. It has a teriyaki flavor. We marinate the meat and then grill it on a gas grill.

¾ cup water
¾ cup white sugar
¾ cup soy sauce
1 tablespoon sesame oil
1 clove garlic, minced
2 pinches ground ginger
2 pounds beef short ribs, or more to taste

Steps:

  • Whisk water, sugar, soy sauce, sesame oil, garlic, and ginger together in a large glass or ceramic bowl. Add beef short ribs and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove short ribs from the marinade and discard marinade.
  • Cook short ribs on the grill until evenly browned, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
