2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup sugar
3/4 cup packed brown sugar
3/4 cup butter flavor shortening
2 eggs
1/4 cup coffee-flavored liqueur
1 teaspoon vanilla extract
1 (12 ounce) package semi-sweet chocolate chips
1/2 cup pecans or 1/2 cup walnuts

Steps:

  • Heat oven to 375°F
  • Line baking sheet with parchment paper.
  • In small bowl, combine flour, baking soda and salt; mix well.
  • In large bowl, combine sugar, brown sugar and shortening; mix well.
  • Add eggs, liqueur and vanilla; mix well.
  • Slowly stir in flour mixture until of uniform consistency.
  • Stir in chocolate chips and pecans.
  • Drop onto baking sheet in teaspoonfuls 3 inches apart.
  • Bake 10 to 11 minutes or until light brown.

1/4 cup margarine, softened
1/2 cup sugar
3 tablespoons Kahlua
1 egg
2 cups flour
1 1/2 tablespoons instant coffee granules
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons powdered sugar
1/2 teaspoon unsweetened cocoa

Steps:

  • Cream margarine in a medium bowl; Gradually add sugar, beating at medium speed of an electric mixer until light and fluffy.
  • Add kahlua and egg, beating well.
  • Combine flour and next 3 ingredients, stirring well.
  • Gradually add flour mixture to creamed mixture, beating at low speed of an electric mixer until well blended.
  • Cover and chill dough for 15 minutes.
  • Combine powdered sugar and cocoa.
  • Shape dough into 1-inch balls; Roll each ball in sugar mixture.
  • Place on cookie sheets coated with cooking spray.
  • Flatten each with a fork in a crisscross pattern.
  • Bake at 400 degrees for 9 minutes.

PRE-HEAT OVEN TO 350 DEGREES
3/4 c granulated sugar
1 c brown sugar
1 c butter, unsalted
1 1/2 tsp pure vanilla extract
1 1/2 tsp kahlua
2 eggs, slightly beaten
1 1/2 c all purpose flour
1 1/2 c oatmeal, uncooked
3/4 tsp baking soda
3/4 tsp salt
1 c semi-sweet chocolate chips
1 c milk chocolate chips
1 c toffee chips

Steps:

  • 1. Preheat oven to 350°. (I always forget this so I added it above the ingredients, too.)
  • 2. In large bowl, combine the white and brown sugars. Add butter and cream together with the sugar. Add vanilla, Kahlua and eggs, mixing well.
  • 3. In a separate bowl, mix the flour, oatmeal, baking soda and salt together. Add dry mixture to the creamed mixture. Mix well; the dough will be stiff. Add the chocolate/toffee chips.
  • 4. Line cookie sheets with baking parchment or wax paper. Using a small ice cream scoop, drop dough onto the cookie sheets. Bake 10-12 minutes. Remove from oven and cool on wire racks.

3/4 c packed light brown sigar
1 stick of softened butter
3 Tbsp kahlua
1 egg
1 pinch of salt about 1/4 tsp
4 Tbsp unsweetened cocoa powder
1 1/4 c all purpose flour
1/2 tsp baking soda
6 oz chopped milk chocolate candy bars. such as dove or hershey.
1/2 c chopped pecans or walnuts if desired
OPTIONAL FOR A SWEET TOUCH
1 c powdered sugar
2 Tbsp cocoa powder

Steps:

  • 1. Heat oven to 350 degree's Parchment line or grease cookie sheet. Chop up the candy bar or bars and set aside.
  • 2. Beat sugar and butter together on low until mixture is smooth and well combined.
  • 3. On low speed. Beat in the Kahlua. Add in the egg and combined.
  • 4. Add in the flour, salt, baking soda and cocoa powder. Beat on low until combine. Do not over mix.
  • 5. Add in the chopped milk chocolate bar, and nuts if desired. Mix well with a spoon. Refrigerate for 15-30 minutes until vhilled.
  • 6. Optional: mix powdered sugar and cocoa together in a bowl. Roll cookie balls in powdered sugar mixture before baking.
  • 7. Bake 10 to 12 minutes. Let cookies cool on pan before moving to platter.

CHOCOLATE KAHLUA TRUFFLE COOKIES (NO BAKE)

These are like a little bit of heaven!They're almost like a cookie fudge! I had them at a friend's house the other night and wasn't happy until I called her for the recipe! There are a few steps, but not that many, when you end up with one of the very best cookies you'll ever try! Making the cookie crumbs is a snap using a food processor! If you don't have Kahlua,you can use whatever you have on hand. Use something that will go well with Chocolate, orange, raspberry, mint, or caramel are good choices. Bake time is chill time. Note: For children, you may want to leave out the liqueur, and replace it with a flavoring or extract.

2 1/2 cups finely crushed chocolate cookie crumbs
1 cup finely chopped nuts
1 cup sifted powdered sugar
1/3 cup coffee liqueur
1 tablespoon water (may need 1-2)

1 tablespoon shortening (solid)
6 ounces white baking bar, chopped

Steps:

  • In a large mixing bowl, stir together the chocolate wafer crumbs, chopped nuts, powdered sugar, and Kahlua, if using. Add enough of the water so that the crumbs hold together. Shape mixture into 1-inch balls.
  • Place on a waxed paper cookie sheet.
  • In a small, heavy saucepan, heat semisweet chocolate and shortening over low heat until melted. In another small, heavy saucepan, heat white baking bar till melted.
  • With a fork, dip half of the cookies into the semisweet chocolate mixture to coat; place on cookie sheet. Dip remaining cookies in melted white baking bar to coat, place on cookie sheet.
  • With the tip of a spoon, thinly drizzle white baking bar mixture in a zigzag pattern over cookies coated with semisweet chocolate. Repeat with semisweet chocolate, drizzling over cookies coated with white baking bar mixture.
  • Refrigerate for about 30 minutes, or until chocolate is firm. Store in refrigerator.

1/3 cup Dutch-processed cocoa powder
1 teaspoon baking soda

1 teaspoon vanilla extract
1 1/2 ounces bittersweet chocolate, grated
6 ounces milk chocolate chips

Steps:

  • Heat oven to 375°F.
  • Line baking sheet with parchment paper.
  • In small bowl, combine flour, cocoa, baking soda and salt; mix well.
  • In large bowl, use medium speed on your mixer to whip shortening with the white and brown sugars for 3-5 minutes until it is light and fluffy and the grains of sugar are disolved.
  • Add eggs one at a time, liqueur, vanilla and grated chocolate and mixed well.
  • Slowly stir in flour mixture until of uniform consistency.
  • Stir in white and milk chocolate chips and pecans.
  • Drop onto baking sheet in 1 tablespoon sized scoops 3 inches apart. Flatten the balls just a smidge.
  • Bake 11 to 12 minutes or until light brown.

12 oz chocolate chips (dark or semi sweet)
1/4 c butter
2 eggs
1/3 c kahlua
4 Tbsp baileys irish cream or amaretto
NOTE: YOU MAY USE ALL KAHLUA OR BAILEY'S IN PLACE OF ADDITIONS OF 4 TB BAILY'S OR AMARETTO
TOTALING 1/2 CUP LIQUOR
3 Tbsp sugar granulated
1/4 tsp salt
1 Tbsp baking powder
1 1/4 c flour all purpose
1 c chopped wanuts or pecans
1 c powdered sugar

Steps:

  • 1. melt the 1/4 c butter and the chocolate chips in a double boiler, or stainless steel bowl over boiling water. Stir until just melted.
  • 2. whisk the eggs Liquors and the 3 TB of sugar together. Add the nuts to egg mixture.blend well.
  • 3. In another bowl sift the baking powder,salt,and flour together. Set aside.
  • 4. whisk the melted chocolate in to the egg mixture. Stir in flour a little at a time in to the mixture, and blend well. Dough will be like brownie batter. Refrigerate dough until it stiffens up enough to make cookie balls. The larger the bowl the better. It will cool quicker.
  • 5. make balls out of cookie dough about an inch wide. Roll in powdered sugar,and place on greased cookie sheet. Bake at 350 degree's until centers crack (about 10 minutes ) while baking I put dough back in fridge to keep iit cold. Remove cookies from oven and cool. Leave on pan to cool. Do not over bake. Centers should still be soft and a bit gooey.
  • 6. Remove cookies to a plate or wire rack. You may dust with additional sifted powdered sugar if desired. . Serve and enjoy!

M&M KAHLUA COOKIES

Something i found from the kahlua website (www.kahlua.com) which turned out really well. And man...who can refuse M&Ms and kahlua!! Turns out a nice brown colour, with brightly coloured candy bits. I think the wonderful texture came from the grounded oatmeal. Try this for something different.

2 -4 tablespoons Kahlua

2 egg yolks or 1 egg, slightly beaten
2 cups vanilla chips (or chunks)

Steps:

  • Preheat oven to 350°F.
  • Grease a foil-lined cookie sheet.
  • Sift flour, baking soda and salt.
  • Melt butter (don't let it get cool), add Kahlua.
  • Add sugars and beat well; add egg yolks, beat until very well blended.
  • Mix in flours on low speed until just blended.
  • Add vanilla chips or chunks.
  • Cover and chill for of 4 hours.
  • Drop by very heaping tablespoonfuls onto greased sheet, leaving 3" space between cookie dough.
  • Bake for 10-12 minutes, (I use a convection oven), or until cookies are brown around the edges and baked to desired doneness.
  • Note: Do not store the cookie dough in the freezer for later use, as it will upset the texture).

Steps:

  • Preheat oven to 350°F.
  • Place cake mix, Kahlua, melted butter, and egg in a large mixing bowl.

I love to bake with liqueurs and came up with this easy to make, versatile vegan cookie. These are chocolaty and delicious. I use soy creamer (SILK) hazelnut but any flavor of soy milk or creamer will do. You can switch up the flavor profile, for example, maybe use Hazelnut Liqueur with hazelnuts, Amaretto with almonds, etc... Please let me know what interesting combos you all come up with. 2 cups whole wheat pastry flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350.

  • In a separate bowl, sift together flour, cocoa, baking soda, and salt.
  • Fold the dry ingredients into the wet a ¼ cup at a time until dough forms. Add chocolate and walnuts (optional), best to use your hands for even distribution.
  • Roll dough into 1-inch balls and flatten into disks. Place the disks 1-inch apart on a lined cookie sheet.
  • Bake for 10 minutes, remove from oven and let cool for about 5 minutes on the cookie sheet before transferring them to a wire rack or countertop to cool completely.

1 Tbsp instant coffee crystals (see note about coffee quality in recipe intro)
2 Tbsp cream
1/2 cup unsalted butter, softened
1/2 cup white granulated sugar
1/2 cup light brown sugar, packed
1 large egg
2 Tbsp kahlua (or other coffee liqueur)
1/2 tsp vanilla extract
1 3/4 cups all-purpose flour, sifted
1 tsp baking soda

1 cup white chocolate chips (white baking morsels)

Steps:

  • 1. Heat oven to 350°F. Line 3 cookie sheets with parchment paper; set aside. Dissolve instant coffee in the cream; set aside.
  • 2. In a large mixing bowl, cream together the butter and both sugars. Add the egg, Kahlua, vanilla and coffee/cream mixture, and mix with electric mixer until ingredients are well combined.

1 (17 1/2 ounce) package dry chocolate chip cookie mix, found in baking aisle
7 tablespoons softened butter
1 large egg, beaten
4 tablespoons Kahlua or 4 tablespoons other coffee liqueur
3 tablespoons instant espresso or 3 tablespoons instant coffee crystals
1 tablespoon regular grind coffee (beans)
1 cup bittersweet chocolate, chunks (Rachael recommends Ghiradelli brand)
4 ounces walnut pieces

Steps:

  • Preheat oven to 375 degrees.
  • Place racks in center of oven.
  • In a mixing bowl, make a well in the center of dry chocolate chip cookie mix.
  • Add softened butter, egg, Kahluha, instant coffee and ground coffee, chocolate chunks and walnuts.
  • Mix well to combine all ingredients into cookie dough.
  • Scoop with a small scoop or by heaping tablespoons and drop cookies 2 inches apart on ungreased nonstick cookie sheet or sheets lined with parchment paper.

3 double stuffed oreo's ~ mint filled would also be an excellent choice
2 oz kahlua
3 large scoops, good vanilla ice cream
whipped cream & 1 crushed cookie for garnish
a little milk or cream if needed - i didn't use

Steps:

  • 1. Crush cookies and place in blender. Add the ice cream and Kahlua. Blend until smooth. if too thick, add a little milk or cream.
  • 2. Pour into glass or glasses and top with whipped cream and some crushed cookie. Delicious!
