12 ounces cream cheese, room temperature
½ cup white sugar
3 eggs, room temperature
3 tablespoons heavy whipping cream
2 tablespoons coffee-flavored liqueur (such as Kahlua®)
3 (1 ounce) squares milk chocolate, coarsely chopped
½ cup heavy cream
1 cup whipped cream for garnish
2 tablespoons Shaved chocolate, to garnish

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a mixing bowl, blend cream cheese and sugar until smooth. Beat in the eggs one at a time, mixing until fully incorporated before adding the next egg. Mix in 3 tablespoons whipping cream and the coffee-flavored liquor. Pour into an 8-inch glass pie pan.
  • Place chocolate in a small heat-proof bowl and set aside. In a small saucepan, bring 1/2 cup whipping cream just to a boil. Pour it over the chopped chocolate; let chocolate soften for about 3 minutes. Whisk until smooth.
  • Drizzle chocolate in a spiral pattern over filling. Stir lightly with tip of a paring knife to achieve a marbling effect. Set the pie pan in a larger pan with water that comes halfway up side of pie pan.
  • Bake in preheated oven until firm in the center, about 55 minutes. Cool completely and refrigerate, covered with plastic wrap, overnight.
  • Garnish with whipped cream piped or dolloped around edges and shaved chocolate in center.

Steps:

  • Cut softened cream cheese into pieces.
  • Prepare chocolate crumb crust and press firmly into a nine-inch springform pan.
  • Preheat oven to 350F degrees.
  • In a small saucepan over medium heat, melt chocolate with Kahlua and butter; stir until smooth.
  • Set aside.
  • In bowl, combine eggs, sugar and salt; add sour cream and blend well.
  • Add cream cheese to egg mixture; beat until smooth.
  • Gradually blend in chocolate mixture.
  • Turn into prepared crust and bake for 35 minutes or until filling is barely set in centre.
  • Turn off heat and let stand in oven for 15 minutes with door open; then take out of oven and let stand at room temperature for one hour.
  • Refrigerate several hours or overnight.

50g butter
225g plain chocolate digestive biscuit , crushed
225g dark chocolate (at least 50% cocoa solids), broken
2 x 200g full fat soft cheese , at room temperature
100g golden caster sugar
4 medium eggs
284ml carton double cream
5tbsp Kahlúa
200ml tub crème fraîche
2tbsp Kahlúa
cocoa powder , for dusting
extra Kahlúa to serve

Steps:

  • Lightly oil the base of a 23cm spring-form tin. Melt the butter in a pan, stir in the crushed biscuits and press on to the base of the tin with the back of a spoon. Chill while you make the filling.
  • Melt the chocolate in a bowl over a pan of gently simmering water, stirring halfway through. Remove the bowl from the pan. Preheat the oven to 160C/gas 3/fan 140C.
  • Beat the cheese and sugar together with an electric hand mixer until fluffy. Add the eggs, one at a time, but don't over-beat. With the beater on low speed, blend in the melted chocolate, the cream and the Kahlúa. Pour on to the biscuit base and bake on a baking sheet for 55 minutes-1 hour or until set. Test by touching the surface, which should be shiny, and a bit wobbly and darker in the centre. Loosen the cheesecake from the tin with a round-bladed knife and leave to cool. Chill for 3 hours or overnight.
  • Take the cheesecake from the tin. For the topping, combine the crème fraîche with the Kahlúa and spread over the top. Dust lightly with cocoa powder and serve in wedges with a little Kahlúa poured over each slice.

Steps:

  • Prepare chocolate crumb crust. Preheat oven 350. In small saucepan, over medium heat, melt chocolate with Kahlua and butter; stir until smooth. Set aside. In bowl, combine eggs, sugar and salt. Add source cream; blend well. Add cream cheese to egg mixture; beat until smooth. Gradually blend in chocolate mixture. Turn into prepared crust. Bake 40 minutes or until filling is barely set in center. Remove from oven and let stand at room temp. 1 hr. Then refrigerate several hours or overnight. Garnish, if desired. Serves 12-14. 1 packet of chocolate cookies (no icing or chips, eg chocolate ripple biscuits)
90g melted butter
250g cream cheese (at room temperature)
1/3 cup icing sugar
600ml cream
1/3 cup kahlua or other coffee liqueur
1 Tbs gelatine
1/4 cup water
150g melted dark chocolate
2 Tbs Nutella

Steps:

  • 1) Crush cookies in a blender or food processor 2) Combine the crumbs and melted butter in a bowl and mix well. Press over the base of a 22cm springform tin. Refrigerate while making the filling 3) Beat cream cheese in a large bowl until smooth 4) Beat in sifted icing sugar until combined 5) Add cream and liqueur until just combined (tip: add a little bit at a time to slowly thin out the cream cheese and prevent lumps) 6) Sprinkle gelatine over water in a cup. Dissolve by sitting the cup in a pan of simmering water (altenatively, put it in the microwave for ~10 seconds on the lowest power) and then cool slightly. Ad the gelatine to the mixture and beat until combined 7) Divide the mixture into two bowls and place one bowl in the fridge until the mixture just begins to set 8) Add the melted chocolate and Nutella to the other bown and mix) 9) Drop spoonfulls of both mixtures over the base and swirl the mixture with a knife 10) Refrigerate for several hours Optional: decorate with whipped cream and cocoa Note: for optimal serving, take the cake out of the fridge ~20 mins before serving

What he doesn't know is that I substituted Splenda for sugar & also used fat free sour cream & fat free cream cheese. He couldn't tell the difference. He needs to lose a few pounds around the middle, so what he doesn't know won't hurt him. The ingredients below are for the Cheesecake, the Caramel Nut Crust & the Kahlua Cherry Sauce. I hope you enjoy this cheesecake, my boyfriend Marvin says it is a keeper. There are alot of steps in this recipe but the end result is definitely worth every step.

1 cup sugar, divided
1/2 teaspoon salt

  • For Cheesecake:.
  • Beat cream cheese until smooth.

  • Pour onto crust.
  • Set on baking sheet.
  • Bake at 350ºF., for 35-45 minutes, depending on whether you have an electric stove or a gas stove.
  • My electric stove baked the cheesecake in 35 minutes.
  • Cool 5 minutes. Stir the sour cream, and then spread over cake top.
  • Sprinkle coconut on top of sour cream
  • Then pour cherry sauce onto top of cheesecake.
  • For Caramel Nut Crust:.
  • In skillet, over low heat, stir 3 tablespoons butter with 3 tablespoons sugar.
  • Add 1 tablespoon Kahlua, then heat and stir for 2 minutes.
  • Add 1/2 cup chopped pecans to 1/2 cup graham cracker crumb mix.
  • While mixture is warm, press in even layer in bottom of 9-inch spring form pan.
  • For Kahlua Cherry Sauce:.
  • Drain 1(19 ounce) can pitted DARK SWEET CHERRIES in syrup, reserving syrup.
  • Mix cherries, 1 tablespoon Kahlua and 1 tablespoon Stoli vodka, (you can use any brand of Vodka.).
  • In pan, mix 2 tablespoons each sugar and cornstarch with dash salt which is about 1/8 teaspoon of salt.
  • Stir in cherry syrup and 1 tablespoon lemon juice.
  • Cook, and stir until boiling, thick and clear.
  • Add cherry mixture to top of cheesecake.
  • Cool and enjoy.

3/4 box gingersnap cookies (16 oz box; use 12 oz)
about 1 sleeve of graham crackers
1 c sweet pecans
7 Tbsp butter
1/4 tsp cayenne pepper
1 dash(es) sea or kosher salt
CHEESECAKE
3 box cream cheese, 8 oz each
1 c sugar
4 eggs lightly beaten
1 c eggnog
1 Tbsp pure vanilla extract
2 Tbsp Kahlua
1 Tbsp rum flavoring
CARAMEL TOPPING
1 c butter
1/2 c evaporated milk
1 1/2 c light brown sugar
1 tsp vanilla extract

Steps:

  • 1. Heat oven to 375 and butter a 9-10" springform pan. Set aside.
  • 2. In food processor bowl, process the gingersnaps. Put aside in another bowl.
  • 3. Then process the graham crackers.
  • 4. While still processing, add sugar, cinnamon, cayenne, sea salt, and pecans.
  • 5. Add back in gingersnaps and slowly add butter til processed to crumb form.
  • 6. Press into a springform pan to about 1" up the side.
  • 7. Bake 10-12 min until lightly brown.
  • 8. In clean food processor bowl, add cream cheese until smooth.
  • 9. Add sugar until combined.
  • 10. Then add eggs scraping down sides until combined.
  • 11. Add eggnog, vanilla, rum flavor, and Kaluha until combined.
  • 12. Pour filling into crust.
  • 13. Bake 45 min until sides are slightly puffed (center will be soft). Turn off oven, leave the door ajar and let sit for 1 hr.
  • 14. Then transfer to the countertop and let sit 30 min. Once the cheesecake has cooled, loosen sides and refrigerate overnight.
  • 15. Make the caramel topping the next day prior to serving. To make the caramel topping, melt the butter in a saucepan.
  • 16. Add the milk and sugar; let come to a boil.
  • 17. Let it boil until sugar is all melted; stirring constantly.
  • 18. Take off the burger and add the vanilla.
  • 19. Continue stirring until mixture coats the back of the spoon.
  • 20. Drizzle sauce over cheesecake. Then cut and serve.

  • In a large bowl, beat the cream cheese, sugar and flour on low speed until well completely combined and smooth. Be sure to use low speed to reduce the amount of air added to the batter, which can cause cracks. Scrape down the sides of the bowl.
  • Add the sour cream and mix on low speed until well combined.
  • In a small bowl, combine the Kahlua and coffee granules and stir until the granules are dissolved.
  • Add Kahlua mixture and vanilla extract to the cream cheese mixture and mix on low speed until well combined.
  • Add the eggs one at a time, mixing slowly to combine after each addition. Scrape down the sides of the bowl as needed to make sure everything is well combined.
  • When the brownie is done baking, reduce the oven temperature to 300°F (148°C). Remove the brownie from the oven and pour the cheesecake batter evenly over the brownie.
  • Wrap the outside of the pan with aluminum foil, then place the springform pan inside another larger pan. (See my tutorial for preventing springform pans from leaking.) Fill the outside pan with enough warm water to go about halfway up the sides of the springform pan. The water should not go above the top edge of the aluminum foil on the springform pan.
  • Bake for 1 hour 15 minutes. The center should be set, but still jiggly.
  • Turn off the oven and leave the door closed for 30 minutes. The cheesecake will continue to cook, but slowly begin to cool as well.
  • Crack the door of the oven for 30 minutes to allow the cheesecake to continue to cool slowly. This process helps prevent cracking.
  • Remove the cheesecake from the oven and water bath wrapping and refrigerate until firm, 5-6 hours or overnight. Once completely cool and firm, remove from the springform pan.
  • Chocolate Ganashe:.
  • Place the chocolate chips in a small heat proof bowl.
  • Combine the heavy whipping cream and Kahlua in a glass measuring cup heat just until it begins to boil.
  • Pour the hot liquid over the chocolate chips and allow to sit for 2-3 minutes, then whisk until smooth.

  • Pour the chocolate ganache onto top of cheesecake and spread evenly.
  • Kahlua Whipped Cream:.
  • To make the whipped cream, add the heavy whipping cream, Kahlua and powdered sugar to a large mixer bowl. Whip on high speed until stiff peaks form.
  • Pipe the whipped cream onto the top of the cheesecake.
  • Sprinkle the top of the cheesecake with cocoa powder, if desired.
  • Refrigerate until ready to serve. Cheesecake is best for 3-5 days.

3/4 cup graham cracker crumbs
1/4 cup powdered sugar
1/4 cup (4 tablespoons) melted unsalted butter
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
4 eggs
1 (1-pound) can Farmer's Market Organic Canned Pumpkin
1/2 teaspoon pumpkin pie spice
1/2 cup Kahlúa

Steps:

  • Heat oven to 350°F. In bowl, mix gingersnap and graham cracker crumbs with powdered sugar and butter. Press onto bottom and part way up sides of 8-inch springform pan. Bake 5 minutes. Cool. In a bowl, beat cream cheese until smooth and light. Slowly beat in sugar until light. Add eggs, one at a time, beating well after each addition. Transfer 1 cup mixture to separate bowl; blend in pumpkin, pie spice and Kahlúa. Pour half of pumpkin mixture into prepared crust. Top with half of cheese mixture. Repeat layers. Draw knife through mixtures to marble. Place on baking sheet and bake at 350°F for 45 minutes. Let stand in turned-off oven 1 hour. Cool, then chill.

1/4 c coffee liqueur
1 1/2 c chocolate chips
2 T butter
2 eggs
1/3 c sugar
1/4 t salt
1 c sour cream
2 8 ounce pkg cream cheese (room temp)

Steps:

  • Chocolate Crumb Crust - In blender, blend oreos (with cream) to get about 1 1/2 c crumbs. press into 9 inch springform pan, freeze min 30 minutes. Melt chocolate and butter in sauce pan, set aside to cool. In mixer, beat eggs, then sugar, salt, sour cream until smooth. Add in cream cheese by large spoonfulls, until smooth. Add in melty chocolate mix. Let beat for 5 min. Pour into crust, bake at 325 for 40 min or until center is barely set. Let stand outside oven 1 hour, then move to fridge several hours or overnight.

Steps:

  • Crumb Crust:.
  • Crush biscuits finely.
  • Add melted butter and mix well.
  • Press crumb mixture on base and sides of 20cm springorm pan.
  • Refrigerate while preparing filling.
  • Filling:.
  • Beat cream cheese until softened.
  • Combine with sugar and flour.
  • Beat well.
  • Beat in eggs, sour cream and lemon juice.
  • Pour half cheesecake mixture into prepared crumb crust.
  • Put roughly chopped chocolate, coffee powder, liqueur, water and lightly beaten egg yolk in top of double saucepan.
  • Stir over simmering water until chocolate melts and mixture becomes thick.
  • Remove from heat and cool slightly.
  • Swirl half chocolate mixture gently through cheesecake mixture in crust with small spatula.
  • Top with remaining cheesecake mixture.
  • Swirl remaining chocolate through top half of cheesecake.
  • Bake in 170 degrees Celsius oven 1 hour to 1 hour ten minutes or until set.
  • Remove from oven.
  • Allow to become cold.
  • Refrigerate overnight.
  • Remove sides from pan.
  • Put cheesecake onto serving plate.
  • Top with prepared cream.
  • Cream:.
  • Dissolve coffee powder in hot water.
  • Put cream, coffee and sugar in bowl.
  • Refrigerate 30 minutes.
  • Beat until thick.

1 zwieback crust
2 pkg knox unflavored gelatine
1/2 c kahlua
1/2 c water
3 large eggs, separated
1/4 c granulated sugar
1/8 tsp salt
2 pkg 8 oz. each cream cheese, softened
1 c whipping cream
curled chocolate or mini chocolate chips

Steps:

  • 1. Make the Zwieback Crust found in Our Favorite Pie Shells Group
  • 2. In top of double boiler, soften gelatine in Kahlua and water. Beat in egg yolks, sugar and salt. Cook over simmering water, stirring constantly until slightly thickened. Beat cream cheese until fluffy. Gradually beat in kahlua mixture; cool. Beat egg whites until stiff peaks form. Whip cream until stiff peaks form. Fold egg whites and cream into kahlua-cheese mixture. Pour into prepared crust. Chill 4 hours or overnight. Remove from refrigerator 15 minutes before serving. Garnish, with chocolate curls or chips.
  • 3. For a tasty touch: Spoon kahlua over each serving.

  • Beat cream cheese in a mixer bowl until smooth. Gradually add sugar and beat until light. Add eggs one at a time, beating well after each addition.
  • Transfer 1 cup mixture to a separate bowl and blend in pumpkin, cinnamon, ginger, nutmeg and Kahlua. Pour half of pumpkin mixture into prepared crust, then top with half of cream cheese mixture.
  • Repeat layers using remaining pumpkin and cream cheese mixtures. Using table knife, cut through layers with uplifting motion in five places to create marbled effect.
  • Place springform pan on baking sheet. Bake in preheated oven for 45 minutes. Turn off oven, but do not open oven door. Let cake stand in warm oven 1 hour.
  • Remove cake from oven, cool to room temperature, then refrigerate. Remove from pan before serving.
