Another no clue where I got this from, maybe from Peter Pan's mother, maybe not. Good way to serve Gefilte Fish for Passover. Serve with horseradish

2 lbs gefilte fish, reserve 1/3 of the liquid
1 large onion, chopped fine
1/2 cup diced carrot
1/2 cup diced celery
1 pinch salt and pepper
2 eggs
2 tablespoons matzo meal
prepared horseradish

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl mash the gefilte fish and set aside.
  • Process the remaining ingredients in a blender or food processor.
  • Add to the mashed fish.
  • Grease a 9x5 loaf pan, I use cooking spray.
  • Pour in fish mixture.
  • Bake at 350 degrees for 1 hour.
  • Remove from oven and cool.
  • Turn loaf onto a platter.
  • Chill.
  • Serve with horseradish.

Both my father and my aunt served this during those months, when fresh carp is not available. There are many versions of " Gefilte Fish", "Fish Balls", "Falsher Fish" or what my dad called "Polish Carp". Theirs was sweeter than most others I sampled, but it must closely resemble the taste they remembered from their home in Sosnowitz, Poland. Unfortunately I could not ask them for their recipe, so I adapted the one I found in Harriet Roth's "Deliciously Healthy Jewish Cooking".

8 cups chicken stock
1 large onion, sliced
3 carrots, peeled and sliced thinly
6 celery ribs, sliced
6 peppercorns
1 tablespoon salt
3 tablespoons sugar
1 onion
3 carrots
2 lbs ground chicken
3 eggs
2/3 cup matzo meal or 2/3 cup breadcrumbs
1/3 cup stock, cooled
pepper
2 1/2 teaspoons salt
2 1/2 tablespoons sugar
parsley, chopped

Steps:

  • Bring water and stock ingredients to a boil and simmer for half an hour.
  • Meanwhile, grate onion and carrots, and mix with the chicken, eggs, and reserved stock. Add the matzo meal or bread crumbs and season with salt, pepper, and sugar. Form into medium-sized balls.
  • Bring stock to a boil, reduce heat to a simmer and add meat balls and parsley. Cover partially. Simmer for 2 hours.
  • Place meat balls in a casserole dish. Reduce the stock to about half, strain, and pour over the meat balls. Top with cooked carrot slices.
  • Cool thoroughly in the refrigerator.
  • Serve with horseradish sauce.

2 eggs, lightly beaten
3 tablespoons mayonnaise
1 teaspoon prepared horseradish
1 teaspoon dried parsley
½ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon ground black pepper
1 (5 ounce) can tuna packed in water
1 cup soft bread crumbs
½ cup chopped onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a glass loaf pan with cooking spray.
  • Beat eggs, mayonnaise, horseradish, parsley, paprika, cayenne pepper, and black pepper together in a large bowl until smooth. Add tuna in water, bread crumbs, and onion; mix until evenly moistened. Pack tuna mixture into prepared loaf pan.
  • Bake in preheated oven until hot and fully cooked in the center, about 30 minutes.

This recipe originally came from Cooks.com. It tasted very flat, so the next few times I made it I added and subtracted and came up with this. I haven't changed too much the last few times I made it. I can't seem to make anything without adding or subbing something.

1 (14 3/4 ounce) can salmon or 1 (14 3/4 ounce) can mackerel, undrained
1 cup crushed soda cracker crumbs (about 24)
1/2 cup milk
1 cup onion, chopped or diced
1 egg, beaten
2 tablespoons melted butter
1/8 teaspoon salt
1/2 teaspoon pepper
1 teaspoon crushed basil
2 teaspoons garlic powder

Steps:

  • Preheat oven to 350 deg F.
  • In a medium sized mixing bowl, combine all ingredients, and mix thoroughly.
  • Press mixture into a lightly greased 9x5 loaf pan.
  • Bake for 45 minutes or until done.
  • Let stand 10 minutes before attempting to slice.

1 (10 3/4 ounce) can cream of mushroom soup, divided
3/4 cup milk, divided
2 eggs, beaten
2 cups seasoned stuffing mix
1 (12 ounce) can tuna, drained, and flaked

Steps:

  • Place 2/3 of the undiluted soup, and 1/2 cup of the milk in a small saucepan. Blend together and set aside.
  • Grease inside of slow cooker, with cooking spray, and mix together the resy of the ingredients in the slow cooker.
  • Cover and cook on high for 1 hour, and allow 15 minutes to stand before serving.
  • Heat the reserved soup and milk in the saucepan.
  • Serve over the cooked tuna as a sauce.

1/4 cup olive oil, plus more for drizzling
2 teaspoons paprika
2 teaspoons dried parsley
2 pinches ground allspice
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
One 22-ounce loaf frozen gefilte fish, paper removed, not thawed
1 large onion, sliced in rounds
2 garlic cloves, minced

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Pour the olive oil into the bottom of a 9 x 5-inch loaf pan. Add the paprika, parsley, 1 pinch of the allspice, the salt, and pepper. Roll the frozen loaf in the oil and spices to coat. Remove the loaf from the pan, arrange the onion on the bottom of the pan, and place the loaf on top of the onion. Sprinkle with the garlic and the remaining 1 pinch allspice. Finish with a drizzle of olive oil. Bake, covered, for 2 hours.
  • 3. Cool the gefilte fish completely, then place it in a resealable container and refrigerate it for at least 4 hours or overnight. Serve cold, sliced and topped with the onions.

Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

14 3/4 ounces canned tuna, drained and flaked
1/2 cup breadcrumbs
1/2 cup egg substitute
1/2 cup diced green bell pepper
1/2 cup onion, finely chopped
1/4 cup milk
1/2 teaspoon Worcestershire sauce
salt and pepper
1 dash Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, stir together tuna, breadcrumbs, egg, bell pepper, and onion. Then add milk, Worcestershire sauce and Tobasco, and salt and pepper, mixing with your hands.
  • Pack ingredients into a large, greased loaf pan.
  • Bake about 45-50 minutes, until top is golden brown and center is thoroughly cooked. Allow to cool about 10 minutes before slicing and serving. Enjoy!
