1 package (8 oz slivered almonds)
1 tbsp butter
1/4 cup sugar

Steps:

  • Line a baking sheet with parchment paper.
  • Melt butter on a non-stick frying pan over medium heat.
  • When the butter is melted, add sugar and stir to combine.
  • Add the slivered almonds and cook, stirring every 30 seconds, for 4 minutes, or until slightly browned.
  • Remove the toasted sugared almonds from a frying pan onto the parchment paper and spread in a single layer.
  • Let the almonds cool, then transfer to a serving dish.

1 tablespoon ground cinnamon
2 cups whole almonds

Steps:

  • Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil; add the almonds. Cook and stir the mixture until the liquid evaporates and leaves a syrup-like coating on the almonds. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds using forks. Allow to cool about 15 minutes.

6 cups sugar
2 cups water
1 tablespoon liquid glucose or 1 pinch cream of tartar
blanched whole almond

Steps:

  • For the fondant:.
  • Put the sugar and water into a large saucepan, set it over the fire, and stir until the sugar is thoroughly dissolved; then stop stirring.
  • Wash down the inside of the pan to the syrup's edge with a small brush dipped in water.
  • When the syrup first boils, add the glucose or the cream of tartar.
  • Continue the boiling without stirring until, when tested in cold water, it forms a soft ball, or registers 240° on the thermometer.
  • Remove from the fire at once, allow to stand for four minutes, or until the air-bubbles have ceased, then pour into a large wet platter, a wet basin, or on a marble slab between candy bars. The syrup should not be deeper than one and a half inches.
  • Set it in a cool place, and when it has cooled down so much you can comfortably bear a finger in the middle of the syrup, begin to cream it with a wooden spoon or a hardwood paddle.
  • Turn the sugar backward and forward, leaving no part untouched, until the whole mass becomes white and opaque.
  • Knead till smooth and free from lumps. Wet and wring a small towel, place it over the fondant, and allow it to remain there for at least one hour. This is called the curing process.
  • Remove the cloth, and knead just as you would bread dough.
  • Keep in an air-tight jar. If left exposed to the air, it will get hard and dry. Small quantities can be taken out and flavored, then colored to form many pleasing effects.
  • The fondant can be colored and flavored while it is warm. (It can be colored cold too, but it's easiest when it's warm.)
  • Covering the almonds:.
  • Melt the fondant for covering the almonds.
  • See that the almonds are totally dry after blanching and peeling.
  • Dip them one and one in the melt fondant, pick up with a fork, tap the fork against the edge of the pot and wipe the underside of the excess coating.
  • Put the almonds to dry on wax paper. After about 5 minutes, when the top has hardened, turn the almonds around so that the bottoms may dry.

1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
¼ teaspoon salt
½ teaspoon ground cinnamon

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.

Easy Sugar Roasted Almonds image

Here in Germany, at every festival or celebration (specially during the Christmas time or the Octoberfest) we love to eat sugar roasted almonds. Usually you roast them in a pan, which takes quite some time and they burn easily. Here´s the quick version with a microwave, which is also safer and a lot easier to clean up.

2 teaspoons cinnamon
1 pinch salt
2 tablespoons water
2 cups almonds (with skin)

Steps:

  • Put all ingredients (except for the almonds) into a bowl and microwave at 600 Watt for 2 minutes.
  • Add the almonds into the bowl and mix thoroughly. Put it another 2 minutes into the microwave oven.
  • Mix again and microwave it another 2 minutes.
  • Let the almonds cool on a baking sheet or paper. (I usually use a plastic tray.) Use two forks to separate sticking almonds immediately from each other. Enjoy!
