Grandma Goble's Molasses Cookies image

These are not the usual cookie. This unique cookie is large, soft, and not too sweet but wonderfully spicy. They are great with a cup of tea or coffee. My husband's mother has had this recipe handed down for several generations. These are true old German/Dutch Molasses Cookies, circa 1850-1870s.

1 c shortening
1 c brown sugar
1 1/2 c dark molasses
3/4 c very strong coffee
3 Tbsp water
1 tsp salt
1 Tbsp baking soda (mixed in the coffee)
1 Tbsp all-spice
1 tsp ginger
1 tsp cloves
1 tsp cinnamon
1 tsp nutmeg
6 1/2 c all-purpose flour

Steps:

  • 1. Mix shortening and brown sugar with a mixer. Add molasses and mix. Set aside. Mix coffee, salt, and baking soda together and set aside. Mix spices with the flour, and then mix all ingredients together well.
  • 2. Cover and refrigerate overnight in a 1 gallon freezer bag. (Dough also freezes well and can be used at a later date).
  • 3. Preheat oven to 325 degrees. Generously dust board with flour then roll out ½ to ¾ inches thick with a 2 ½ inch round cutter.
  • 4. Place far apart on greased baking sheet. (I only get 8 on one baking sheet). Use two pans and do not put both pans in the oven at the same time. Bake on parchment paper lined cookie pan until when lightly touched, no finger imprint remains. Bake for 18-24 minutes (Do not overbake).
