SKI SLOPE SOUP
This is a comfort food that's very easy to throw together! Originally from a Southern Living magazine.

Steps:
- Brown sausage and drain well.
- Combine all ingredients in a 4 quart saucepan or Dutch oven.
- Cover and simmer for 1 hour.
- Add potatoes and cook another 20 minutes.
- Remove and discard bay leaves.
- Beat soup with an electric mixer until all ingredients are well shredded, about 3 minutes.
- Serve.

We were brought up calling it slop growing up and it kinda looks like slop, but we all love to eat it and it's even better leftover. Call it whatever you want . . . no one asked you if you liked the title. Season to taste means exactly that . . . if someone who is eating this is on a salt-restricted diet, than make something a bit more healthy than a dish named Slop.

Steps:
- Slice onions and saute in butter.
- Add potatoes after 5 minutes.
- Saute potatoes until fork tender.
- Brown the ground beef in separate pan and drain drippings.
- Fold in mushroom soup and ground beef into potato mixture gently.
- Heat and simmer 5 - 7 minutes.
- Season to taste.
SLOPPY JOE SOUP
The soup version of this favorite sandwich is less sloppy than the original, but every bit as delicious.

Steps:
- Set a large soup pot over medium-high heat. Add vegetable oil and beef; cook, stirring occasionally, until meat is browned and cooked through, about 10 minutes.
- Remove meat from pot and set aside. Drain all but 2 tablespoons of grease from pot and discard.
- Add onion and green bell pepper; cook until softened, 8-10 minutes. Add garlic, thyme and cayenne pepper; cook just until fragrant, about 30 seconds.
- Add ketchup and cook, stirring, until it darkens in color, about 1 minute. Add tomato sauce, water, beef stock, Worcestershire sauce, apple cider vinegar and brown sugar.
- Sir well. Reduce heat to medium; add reserved ground beef. Simmer partially covered 15 minutes.
- Season to taste with salt and pepper. Serve with corn chips or toasted garlic bread.

"SLOP" (A YUMMY PORK CHOP RECIPE)
This is a recipe that my Grandmother always referred to simply as slop, but don't let the name fool you. It is a simple and delicious comfort food!!

Steps:
- Preheat oven for 350 degrees Season your pork chops with a bit of salt and pepper then pan sear them in a bit of butter in a frying pan for 3-4 minutes per side.
- Place pork chops in a baking dish, then add the two types of beans and carrots on top of that.
- Mix your soup with the milk and pour this on top of everything in your baking dish.
- Cover the pan and bake for 30 minutes. This is good served with your favorite mashed potatoes or with noodles or rice if you can't do potatoes.
