1/2 cup sour cream
3 tablespoons white vinegar
1 tablespoon sugar
Pepper to taste
4 medium cucumbers, peeled if desired and thinly sliced
1 small sweet onion, thinly sliced and separated into rings

Steps:

  • In a large bowl, whisk sour cream, vinegar, sugar and pepper until blended. Add cucumbers and onion; toss to coat. Refrigerate, covered, at least 4 hours. Serve with a slotted spoon.

Fresh dill and sour cream turn the summer staple into something cool, creamy and refreshing. Try this classic Midwestern salad with black bread and smoked salmon, or as a simple side for chicken or fish.

4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
  • Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
  • Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
  • To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.

2 cucumbers, thinly sliced
1 (8 ounce) container sour cream
¼ cup distilled white vinegar
⅓ cup white sugar
salt and ground black pepper to taste

Steps:

  • Place the cucumber slices in a container and cover with cold water. Refrigerate 4 hours to overnight.
  • Whisk the sour cream, vinegar, sugar, and salt in a mixing bowl until the sugar has dissolved. Drain the cucumbers and squeeze out the excess water; add to the bowl and mix to coat with dressing.

1 large cucumber (with or without seeds, washed, trimmed, and peeled)
Salt to taste
For the Dressing:
1/2 cup sour cream
1 teaspoon sugar
Optional: 2 teaspoons white vinegar
1 tablespoon fresh dill , (chopped), plus more for serving
Black pepper to taste

Steps:

  • Gather the ingredients.
  • Slice the cucumber thinly.
  • Place the cucumber slices in a colander and salt the cucumbers liberally.
  • Allow the salted cucumbers to stand for 30 minutes.
  • While the cucumbers are sitting, make the dressing. In a small bowl, mix together the sour cream, sugar, vinegar (if using), and fresh dill until well blended.

This was one of my Mom's favorite "snackies" during the day while we were all at school...I used to love it too, and it was really refreshing! 1 1/2 cups sour cream
2 tablespoons white vinegar
1/4 teaspoon black pepper

1 dash paprika

  • Combine in a bowl with sour cream, vinegar and pepper.
