My mom rarely cooked us breakfast, but when we had company she went "all out". This is a very simple recipe. There are probably lots of similar ones out there, but this one is dear to my heart because it was TRULY a "special occasion" whenever my mom made this. I still love it to this day, although I've embellished it plenty from time to time--YUM! Note for Zaar World Tour II: Frittatas are Italian in origin.

6 eggs
1 cup milk (I like to use half milk and half heavy cream instead)
1 green onion, minced
1/8 teaspoon nutmeg
1/2 teaspoon salt
1/8 teaspoon pepper
1 (8 ounce) package shredded mild cheddar cheese
1/2 lb bacon (fried and crumbled)

Steps:

  • Fry bacon until crisp, then remove strips and drain. Crumble bacon.
  • Whisk all other ingredients together except cheese, and pour into an 8x8-inch greased glass pan.
  • Sprinkle bacon and cheese evenly over top.
  • Bake in a preheated 400°F oven for 20 minutes, watching so that it does not get too brown.
  • Garnish with chopped, fresh parsley.
  • I serve it with Pillsbury crescent rolls, butter and honey.

Country Frittata image

Start this on the stovetop and finish in the oven. Serve in wedges for a delicious and easy breakfast dish. Done in a jif.

Number Of Ingredients 7

2 teaspoons olive oil
1 lb cooked potato, diced small
1/4 cup diced ham
1/4 teaspoon minced garlic
8 eggs
salt and pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350°.
  • In a 12" non stick skillet with oven proof handle, heat olive oil until hot and add the potatoes, ham and garlic.
  • Saute just until browned.
  • In a bowl, whisk eggs and pour over the potato mixture.
  • Season with salt and pepper and cook over medium low heat, occasionally sliding a spatula around the edge of the pan to loosen the frittata as it cooks.
  • When nearly set, sprinkle with cheese and place in oven for 2 to 4 minutes or until evenly set and slightly golden.
  • Note: If you do not have a skillet with an oven proof handle, wrap two layers of aluminum foil over your handle before baking.

A potato and 6 eggs are fried in olive oil to make this simple frittata. Cut it into rectangles or wedges and serve between 2 slices of Italian bread either by itself or with tomato slices. Delicious!

2 tablespoons olive oil
1 large baking potato, peeled and sliced 1/4 inch thick
6 eggs, beaten
salt and pepper to taste

Steps:

  • Heat oil in a large skillet or frying pan over medium-high heat. Spread potato slices across bottom of the pan and cook, turning once, until golden on both sides. Remove slices from pan and drain.
  • When all potato slices have been cooked, return them to the pan. Turn heat to high. Pour on the beaten eggs and season with salt and pepper. Tilt the pan so that the eggs flow to the bottom of the pan. Turn heat to medium low. Cover pan with a plate and flip pan so that frittata is turned out onto plate. Slide the frittata back into the pan with the uncooked side down. Cover and let cook another 2 minutes.
  • When frittata is finished cooking, remove it from the pan and drain briefly on paper towels before serving.

1 1/4 cups egg whites
2/3 cup water
1/3 cup goat cheese
salt & pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare a 12-cup muffin tin by coating each cup with cooking spray. In a large bowl, whisk together eggs, salt & pepper.
  • Transfer egg mixture to a 2 cup measuring cup, add water till you have 2 cups of liquid(if you have extra water, dont worry just dump it).
  • Mix mixture till it is all even.
  • Fill each muffin cup with egg mixture to no more than 3/4 full.
  • Bake for 15min, take out of oven and sprinkle with goat cheese, continue baking for another 5-10 till egg is set and the tops of the frittatas are starting to brown. Run a knife around the edge of each frittata and gently life them out. Serve Immediately.

2 tablespoons olive oil (I used butter)
1/2 onion, sliced
salt, to taste
pepper, to taste
4 -6 cups broccoli, cauliflower, spinach, etc (any chopped or sliced or raw or barely cooked vegetable)
1 teaspoon mint leaves or 1 teaspoon any other herbs
2 -3 eggs
1/2 cup freshley grated paresman cheese

Steps:

  • Put olive oil in a skillet and turn heat to medium. When fat is hot, add onion and cook. Sprinkle with salt and pepper and cook 3 to 5 minutes.
  • Add vegetables, raise heat and cook, stirring occasionally until they soften, from a couple minutes for greens to 15 minutes for sliced potatoes. Adjust heat so vegetables brown a little without scorching. If vegetables are precooked just add to onions and stir before proceeding.
  • When vegetables are nearly done, turn heat to low and add herb. Cook, stirring occasionally, until vegetables are tender.
  • Meanwhile, beat eggs with some salt and pepper, along with cheese if using.
  • Pour over vegetables distributing them evenly. Cook, undisturbed, until eggs are barely set, 10 minutes or so.
  • Run pan under broiler for a minute or 2 if top does not set. Cut frittata into wedges and serve hot, warm, or at room temperature.

A dear friend gave me this delicious frittata recipe. It is wonderful to serve for a Saturday breakfast when you can sit and enjoy and your meal and not rush out the door in order to miss the morning traffic.

8 pitted kalamata olives, chopped
1 medium zucchini, cut into 1/2-inch cubes
1 sweet red pepper, diced
1/2 cup onion, chopped
1/4 cup olive oil
9 large eggs, lightly beaten
1 (4 ounce) package crumbled feta cheese
1/3 cup fresh basil, thinly sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup freshly grated parmesan cheese

Steps:

  • Cook the first four ingredients in hot oil in a 10" oven-proof skillet over medium-high heat, stirring constantly until vegetables are tender.
  • Combine eggs and next four ingredients, pour over vegetables in skillet.
  • Cover and cook over medium-low heat 10-12 minutes or until almost set.
  • Remove from heat, and sprinkle with Parmesan cheese.
  • Broil 5-1/2" from heat with oven door partially open 2-3 minutes or until golden.
  • Cut frittata into wedges.
