1 ring of hot Italian sausage
1 ring of sweet Italian sausage
1 tablespoon extra virgin olive oil
6 bell peppers (sliced (I use assorted colors))
2 large onions (sliced)
8 cloves of garlic (thinly sliced)
3 28 oz cans of crushed tomatoes
2 tablespoons dried oregano
2 leaves bay
Salt and pepper to taste
1/2 cup parmesan cheese (grated)

Steps:

  • Cut sausage into 2 inch chunks.
  • Heat olive oil in a large skillet.
  • Brown sausage over medium high heat. You may have to do this multiple batches to avoid over-crowding the pan.
  • Remove sausage from skillet and add peppers and onions.
  • Saute until cooked through and slightly charred.
  • During the last 2 minutes of cooking, add garlic.
  • Transfer sausage, peppers, onions and garlic to a stock pot.
  • Add crushed tomatoes, oregano, bay leaves, salt and pepper.
  • Simmer for 30 minutes or until sauce has thickened slightly.
  • Stir in parmesan cheese and simmer for 10 minutes more.

1 lb mild Italian sausage
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 cup chopped onion
2 cloves garlic, minced
1 1/4 cups light cream
1/4 cup snipped fresh parsley
1 teaspoon dried marjoram, crushed
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated parmesan cheese
10 ounces cooked hot pasta, your choice

Steps:

  • In large skillet, cook sausage, peppers, onion and garlic until meat is browned and vegetables are tender.
  • Drain off fat, if necessary.
  • Stir in cream, parsley, marjoram, salt and pepper.
  • Bring to boiling, reduce heat.
  • Cook and stir over medium heat for 6-8 minutes or until slightly thickened.
  • Toss sausage mixture and cheese with pasta until coated.
  • Serve immediately.

This is one of the few things that my fiancée will let me make. It is a great meal to make for football Sundays or any time you want to try something different. John's Killer Quesadillas son muy bueno.

1 bell pepper, chopped
1 vidalia onion, chopped
1 cup shredded cheese
2 grilled chicken breasts, chopped
oil (to fry)
butter (to saute veggies in)
4 tortillas
jalapeno (optional)

Steps:

  • Begin by grilling chopped chicken breasts in separate pan.
  • Grill until meat is white on the inside.
  • Use one tbsp of butter to sauté.
  • While grilling chicken, chop pepper and onion into small pieces (add jalapeño if desired) Once chicken is white on the inside add the vegetables.
  • Grill these with the chicken until they are browned.
  • While grilling the vegetables, put a separate pan on medium heat with one tbsp of olive oil for the actual preparation of the quesadillas.
  • After vegetables are done grilling, place one tortilla in the pan and top with 1/2 cup of shredded cheese and half of the chicken veggie mix.
  • Place another tortilla on top of this and grill until the bottom tortilla is browned and the cheese is beginning to melt, then flip.
  • Repeat step 6 on the other side once the other side is browned and cheese is melted the quesadilla is ready for serving.
  • Cut into wedges and garnish with sour cream and your favorite salsa.

Easy Italian Sausage and Peppers image

My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

8 hot Italian sausages (if you prefer) or 8 italian sweet sausage (if you prefer)
2 tablespoons olive oil
1 large onion, halved and sliced
2 large red peppers, seeded and sliced
1 green pepper, seeded and sliced
2 garlic cloves, minced
salt and pepper, to taste
1 pinch crushed red pepper flakes (optional)
1 teaspoon dried oregano
8 Italian rolls
mustard (optional)

Steps:

  • Heat the oil in a large pan, over medium heat.
  • Add the sausages and cook, turning frequently.
  • You want them browned all over and this takes about 10 minutes.
  • Add the onions and stir up the browned bits on the bottom of the pan.
  • Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
  • After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced

¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.

This dish from Quick Cooking Magazine is as colorful as it is delicious. We hope you enjoy it as much as our family does. Instead of using herb and garlic soup mix we use a regular envelope of onion soup mix with 1 t cornstarch mixed in the water. I also add zucchini slices.

1/2 lb fully cooked kielbasa or 1/2 lb Polish sausage, cut into 1/2 slices
3 teaspoons olive oil or 3 teaspoons vegetable oil

1 green pepper, cut into 1 chunks
1 onion, cut into small wedges
1 cup water
1 (1 1/4 ounce) package herb with garlic soup mix

  • Remove with slotted spoon and keep warm.
  • In drippings, saute peppers and onion until crisp tender.
  • In a bowl, combine the water and one soup mix envelope.
  • Add soup mixture, hot pepper sauce and sausage to the vegetables.
  • Reduce heat.
  • Cover and simmer for 5 minutes or until thickened.
  • Serve over hot, cooked rice.
