2 lbs ground beef, cooked and drained
1 (1 1/4 ounce) packet taco seasoning
4 ounces sour cream
4 ounces mayonnaise or 4 ounces light sour cream
8 ounces cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix (I would find something else for this to many carbs!!!! )
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4 ounce) can sliced jalapeno peppers

Steps:

  • Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
  • In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
  • Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 inches greased casserole dish.
  • Saute remaining onions and bell peppers until slightly tender.
  • On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
  • Bake for 30-40 minutes or until edges of dough are lightly browned.

We just love John Wayne movies and a friend in Az. gave us this recipe John Wayne is famous around the Maricopa, Arizona, area as he was one of the owners of Red River Farms, a large feed lot near there.

8 ounces canned diced green chiles
1 lb monterey jack cheese, coarsely grated
1 lb cheddar cheese, coarsely grated
3/4 cup evaporated milk
4 eggs, separated
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 tomatoes, thinly sliced

Steps:

  • Preheat oven to 325 degrees F.
  • Mix chiles and cheeses and put into a buttered shallow casserole.
  • In a small bowl combine milk, egg yolks, flour, salt and pepper.
  • In a large bowl beat egg whites to stiff peaks.
  • Gently fold whites into the yolk mixture.
  • Then pour the mixture over the cheese and chile mixture and carefully blend.
  • Bake for 30 minutes.
  • Remove from oven and lay tomato slices over the entire top.
  • Return to oven and bake 30 minutes longer, or until an inserted knife comes out clean.
  • Garnish with a sprinkling of green chiles. Serves 8.

2 pounds ground beef
1 (1 ounce) package taco seasoning mix
3/4 cup water
1/2 cup sour cream
1/2 cup light mayonnaise
1 cup shredded cheddar cheese (divided)
1 onion (diced and divided)
2 cups Bisquick biscuit mix
1 cup water
1 green bell pepper (diced)
2 Roma tomatoes (diced)
1 (4 ounce) can green chilies

Steps:

  • Preheat oven to 325 degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
  • Brown ground beef until no longer pink, drain grease. Then add taco seasoning and water and let simmer for 3-4 minutes.
  • In a medium bowl mix sour cream, mayo, half of the cheese, and half of the onion together and set aside.
  • In another bowl, mix together biscuit mix and water to make a soft dough. Press dough into the bottom and 1/2" up the sides of greased 9 x 13 inch pan.
  • Saute remaining onions and green peppers until barely tender.
  • On top of the biscuit, layer the remaining ingredients in this order: ground beef, diced tomatoes, green peppers and onions, green chilies, sour cream mixture, and remaining cheddar cheese.
  • Bake for 30-35 minutes or until edges are slightly browned.

2 (4 ounce) cans green chilies, drained
1 lb monterey jack cheese, grated
1 lb cheddar cheese, grated
4 egg whites
4 egg yolks
2/3 cup evaporated milk
1 tablespoon unbleached all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground

Steps:

  • Preheat oven to 325 degrees.
  • Dice chiles and combine in a bowl with grated cheeses.
  • Put into a well-greased shallow dish (2-quart , 12x8x2 inch).
  • With an electric mixer on high speed, beat egg whites until peaks form.
  • Set aside egg whites.
  • In a bowl, combine egg yolks, milk, flour, salt and pepper.
  • Fold egg whites into egg mixture.
  • Pour over cheeses.
  • Use a fork to push egg mixture into cheese.
  • Bake for 1 hour.

8 eggs, separated
20 ounces sour cream
1/2 cup whole milk
4 cups monterey jack cheese
4 cups mild cheddar cheese
1/2 teaspoon garlic, minced
1/2 teaspoon black pepper
1 small red pepper
1 small green pepper
1 onion
1 anaheim chili
1 1/2 cups flour
olive oil, extra virgin
1 tomatoes, thinly sliced for topping
ham, diced (optional) or Canadian bacon, cooked (optional)

Steps:

  • Preheat the oven to 325 degrees.
  • Chop the onion and peppers, then saute lightly in the olive oil.
  • Set aside.
  • In a large mixing bowl, separate the egg yolks from the whites, leaving the yolks in the bowl.
  • Add milk, flour, garlic, and black pepper to the yolks, then mix well.
  • Add sour cream, the cheeses, and vegetables to the egg mixture.
  • In another mixing bowl, beat the egg whites until stiff.
  • Fold the beaten whites into the mixture in the other bowl and blend together.
  • Grease a baking dish with butter.
  • Pour the mixture into the baking dish and place in the hot oven.
  • Bake for 45-60 minutes , turning the dish occasionally, until the top starts to crack.
  • Three quarters of the way through baking, top with the tomato slices.

2 pounds ground beef
1 (1.25-ounce) packet taco seasoning
1 (1-pound) package refrigerated biscuits
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons flour
1 (14-1/2-ounce) can petite diced tomatoes, drained of excess liquid
2 (4-ounce) cans diced green chilies
2 cups shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. While oven is heating up, turn on stove to high and start heating a large frying pan. Crumble the ground beef into the heated pan. Use a wooden spoon to break up the ground beef. Let the beef cook for 2 minutes. While beef is cooking, prepare a cookie sheet with parchment paper on it. Place biscuits on top of the parchment paper. Bake the biscuits for about 16 minutes in the preheated oven, or until nice and brown. Add the taco seasoning into the ground beef. Stir and continue using the wooden spoon to break up the beef chunks. While beef continues cooking, combine sour cream, mayonnaise and flour in a medium bowl and whisk together until it's creamy and smooth. When beef is totally cooked through and nice and brown, drain off any excess grease. In a large 6-quart greased slow cooker place as many biscuits on the bottom of the crock that will fit in one layer. Cut any extra biscuits into quarters and fit them carefully into any gaps in the biscuit layer on the bottom of the slow cooker. Place ground beef evenly over the top of the biscuit layer. Then spoon diced tomatoes over the top of the ground beef evenly. Next, add the 2 cans of green chiles and spread over the tomatoes evenly. Next scrape the sour cream/mayo mixture out of the bowl and spread evenly over the top of the green chilies. Finally, sprinkle the cheese over the top. Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours. Using a serving spoon scoop down deep to get all the layers and serve and enjoy!
