Noodle kugel is a traditional Jewish holiday dish of egg noodles baked in a sweet or savory custard.

Number Of Ingredients 14

1 cup packed dark brown sugar
1¼ cups all purpose flour, spooned into measuring cup and leveled off
1 teaspoon ground cinnamon
¼ teaspoon salt
1 stick unsalted butter, cold, cut into ½-inch chunks
One 12-oz bag wide egg noodles
4 large eggs
One 8-oz container sour cream
One 8-oz package cream cheese, softened (microwave for 15-20 seconds to soften)
2 cups half & half
½ cup granulated sugar
1 teaspoon salt
2 teaspoons vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Combine the brown sugar, flour, cinnamon, and salt in a medium bowl. Using your fingers, mix until no lumps of brown sugar remain. Rub in the butter with your fingertips until the mixture has a clumpy, crumbly texture. Refrigerate until ready to use.
  • Preheat the oven to 325°F and set an oven rack in the middle position. Butter a 9 x 13-inch baking dish.
  • Bring a large pot of unsalted water to a boil. Cook the noodles for 6 to 8 minutes, or according to package instructions, until tender. Drain well.
  • In a large bowl, whisk the eggs. Add the sour cream and softened cream cheese and whisk to combine. Add the half & half, sugar, salt, vanilla, and cinnamon, and whisk until completely smooth.
  • Spread the cooked noodles evenly in the prepared baking dish. Pour the custard mixture evenly over top. Cover the dish tightly with aluminum foil and bake for 35 minutes. Remove and discard the foil. The custard should be just set. Sprinkle the streusel topping evenly over the top, making sure to cover all the noodles. Bake for 35 to 40 minutes more, until the streusel topping is crisp. Let cool for about 20 minutes, then cut into squares and serve.
  • Make Ahead: The kugel and topping can be assembled and stored separately in the fridge up to a day ahead of time, and then baked before serving. (The kugel with the streusel topping may also be fully cooked a day ahead of time and reheated, however the texture will be denser than if baked fresh. To reheat, cover with foil and place in a 325°F oven for 25 minutes; remove and discard the foil, and continue baking for 20 to 25 minutes more, or until warm throughout and crisp on top.)

3 cups 4% cottage cheese
1 teaspoon vanilla extract
1/4 teaspoon salt
5 medium tart apples, peeled and thinly sliced
1 teaspoon ground cinnamon
2 cups applesauce
2 cups raisins
1 package (16 ounces) lasagna noodles, cooked and drained
1 cup shredded cheddar cheese

Steps:

  • In a blender, combine the cottage cheese, vanilla and salt; cover and process until smooth. Toss apples with cinnamon., Combine applesauce and raisins; spread 3/4 cup into a greased 13x9-in. baking dish. Layer with a fourth of the noodles, and a third of the applesauce mixture, cottage cheese mixture and apples. Repeat layers twice. Top with remaining noodles; sprinkle with cheddar cheese., Cover and bake at 350° for 60-70 minutes or until apples are tender. Let stand for 15 minutes before cutting.

1 apple, diced
1 pear, diced
1/4 cup raisins
1/3 cup prune, chopped
2 tablespoons Smart Balance butter spread
1 cup egg substitute
1 cup nonfat cottage cheese
1 tablespoon honey
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 and spray a 9 x 13 dish.
  • Cook and drain noodles. Place into large bowl.
  • Add fruit and Smart Balance, mix well. Add remaining ingredients.
  • Spoon into prepared dish, and bake 35-45 minutes.

This is the classic noodle kugel that my mom always made for Shabbat dinner. It is incredibly easy to make and tastes so good!

1 (16 ounce) package egg noodles
½ cup margarine
4 eggs, beaten
1 cup white sugar
1 ½ cups applesauce
1 teaspoon vanilla extract
ground cinnamon, for dusting

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, applesauce, and vanilla extract. Pour noodle mixture into a 9x13 inch baking pan, then sprinkle with cinnamon. Cover baking pan with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

Inspired by an Italian tart, torta sbrisolona, this almond-studded batter does double duty. Three-quarters is pressed into rounds, and the remainder is sprinkled around the jam center like a streusel.

1 1/2 cups blanched almonds
1 3/4 cups unbleached all-purpose flour
3/4 cup sugar
1/2 teaspoon kosher salt
1/4 teaspoon pure almond extract
1 1/2 sticks unsalted butter, room temperature
1/2 cup assorted jams, such as cranberry, apricot, blueberry, and cherry, separately whisked until smooth

Steps:

  • Finely grind almonds in a food processor. Preheat oven to 350 degrees. Whisk together almonds, flour, sugar, salt, and almond extract. Cut in butter with a pastry blender until it'scompletely incorporated.
  • Line 2 baking sheets with parchment. Firmly press 2 tablespoons dough into the bottom of a 2 1/2-inch round cookie cutter, then gently lift cutter to leave dough on parchment. Repeat, spacing cookies evenly on sheets, until you've made 24 rounds. Dollop 1 teaspoon jaminto center of each round, alternating flavors. Sprinkle 1 tablespoon of remaining dough around border of each cookie.
  • Bake, rotating sheets once, until golden brown at the edges, about 24 minutes. Transfer cookies on sheets to wire racks; let cool completely. Cookies can be stored in an airtight container at room temperature up to 2 days.

12 oz broad egg noodles
1 cup grated Cheddar cheese (1/4 lb)
4 oz cream cheese
3 eggs
1 1/2 cups milk
1/4 cup soft butter
1 cup sour cream
½ cup sugar
½ cup creamed cottage cheese
½ tsp salt
½ cup dried bread crumbs
1/4 tsp cinnamon

Steps:

  • Prepare pasta according to package directions. Drain and rinse well. Return to saucepan. Process cream cheese with eggs in food processor or blender until smooth. Add remaining ingredients except cereal and cinnamon to egg mixture. Process until smooth, once again, (about 20 seconds) and then pour over noodles and mix well. Pour into a well-greased 9 X 13" glass baking dish. Sprinkle with crumbs and cinnamon, mixed. Bake at 350̊F for 1 hour, or until golden. Serve hot with more sour cream.
