1 pkg Hormel Beef Roast - Au Jus (pre-cooked, heat and serve)
2 Tbsp fresh cilantro, finely chopped
1/4 cup + 1 tsp. butter, (room temperature), divided
1 French bread, cut into 7-8" pieces vertically (no heels) and then sliced in half horizontally
1 pkg sliced provolone cheese (2-3 slices per sandwich as preferred)
1/2 Vidalia onion, sliced or chopped
1 tsp extra virgin olive oil
1 Tbsp garlic powder

Steps:

  • Preheat oven to 400°F. Heat Hormel Beef in microwave according to package directions.
  • While that is heating, mix minced cilantro and 1/4 cup butter. Spread herbed butter on both halves of sliced French bread, place 2 slices of provolone cheese on bottom half of bread and place on cookie sheet.
  • Saute chopped/sliced Vidalia onions in 1 tsp. butter and 1 tsp. extra virgin olive oil until translucent and starting to caramelize. Keep on warm or low heat until ready to use.
  • Place cookie sheet with buttered bread and cheese in broiler section of oven for 3-5 minutes until toasty and butter and cheese has melted. Remove beef from microwave and pull apart into bite-size pieces.
  • Place toasted herb-buttered bread pieces on a plate. Spread beef. Place sauteed onions over beef. Place top of buttered herb bread on the sandwich and serve warm.

1 medium red onion, halved and thinly sliced
1 tablespoon, plus 2 teaspoons kosher salt, plus more to taste
6 tablespoons red wine vinegar
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup plus 2 tablespoons jarred grated horseradish (with liquid)
1/2 teaspoon grated lemon zest
Freshly ground black pepper
Hot sauce
6 Kaiser rolls
12 slices vine-ripened tomatoes
24 ounces freshly sliced rare roast beef
3 loosely packed cups watercress or arugula, or a combination of both

Steps:

  • In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
  • In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
  • Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. Toast the rolls under the broiler for about 1 minute. Slather the inside of the rolls with the horseradish sauce. On each of the roll bottoms, layer 2 tomato slices and season with salt and pepper to taste. Top the tomatoes with some of the roast beef overlapped into "ruffles" and season with salt and pepper. Top the meat with some of the onions and watercress and cover with the tops of the roll. Serve immediately.

This sloppy joe recipe is quick and inexpensive. In addition to putting it on rolls, try this slightly sweet beef mixture over rice, biscuits, or baked potatoes.

½ pound ground beef
½ onion, chopped
½ cup ketchup
2 tablespoons water
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1 teaspoon white vinegar
1 teaspoon chili powder
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
2 hamburger buns, split

Steps:

  • Heat a large skillet over medium-high heat and stir in ground beef and onion. Cook and stir until beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Stir in ketchup, water, brown sugar, Worcestershire sauce, mustard, vinegar, chili powder, garlic powder, onion powder, and salt.
  • Bring beef mixture to a boil over high heat. Reduce heat to low; cover and simmer until sauce has thickened, 30 to 40 minutes. Serve on buns.
