CHICKEN WITH PEANUT SAUCE

- In a small bowl, combine the first five ingredients; set aside. In a large skillet, saute the chicken, garlic and ginger in oil for 5 minutes. Add peanut butter mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until chicken juices run clear, stirring frequently., Serve with rice; sprinkle with green onions if desired.

JIM'S PEANUT BUTTER CHICKEN
We love dinner recipes that are super easy to prepare and pack a punch of great flavors. This chicken recipe is one of them! The sauce is sweet, spicy, and peanut buttery. Each ingredient compliments the other. The flavors remind us of a few Thai dishes we've tried. Serve over a bed of warm rice and you have a delicious meal.

- Prepare chicken according to package directions. Set aside.
- Bring nectar and soda to a boil. Once boiling, add pepper flakes and brown sugar. Continue boiling until reduced by about half.
- Reduce heat to a simmer. Add soy sauce, vinegar, and garlic.
- Add peanut butter; blend in until smooth. Add peanuts.
- Mix water and cornstarch (about 2 tablespoons each). Bring sauce to high heat and add cornstarch mixture until sauce thickens.
- To serve, pour sauce over chicken. Goes well with rice.
