1 (9.6 ounce) package Jimmy Dean® Original Hearty Pork Sausage Crumbles
2 cups cubed cooked red potatoes
8 eggs
¼ cup grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup chopped seeded tomato
2 green onions, thinly sliced

Steps:

  • Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
  • Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
  • Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.)
  • Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  • Top with tomato and onions. Cut into 8 wedges to serve.

If you think of a frittata as something that can only be served at brunchtime or on weekends, think again. This easy frittata recipe with Jimmy Dean Premium Pork Sausage, cheese, and veggies will brighten up any morning of the week.

8 large eggs
¼ cup milk
½ cup shredded mozzarella
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
1 tablespoon canola oil
1/2 (1-pound) package Jimmy Dean Premium Pork Sausage
1 ½ cups arugula
½ cup grape tomatoes, halved

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a cast iron skillet or 8-inch cake pan with oil and set aside. In a bowl, beat eggs and milk together until they are an even consistency. Add cheese, salt, pepper, and garlic powder, and mix.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
  • Place sausage, arugula, and tomatoes in the sprayed pan and spread into an even layer. Pour the egg mixture over the vegetables and sausage. Put the pan into the oven and cook for about 20 minutes, until the center is set.
  • Carefully remove the frittata from the oven and let cool for 10 minutes before slicing.

½ cup shredded Cheddar-Monterey Jack cheese blend

  • Combine sausage, eggs, Cheddar-Monterey Jack cheese, bell pepper. onion, and cayenne in a bowl and mix to combine.
  • Preheat the air fryer to 360 degrees F (180 degrees C). Spray a nonstick 6x2-inch cake pan with cooking spray.
  • Place egg mixture in the prepared cake pan.
  • Cook in the air fryer until frittata is set, 18 to 20 minutes.

One of my favorite weekend b'fast dishes. There's usually have enough left over for the two of us to make a light dinner, served with fruit.

8 oz roll jimmy dean maple flavor sausage (that's half a large size roll)
2 1/4 c cubed day old bread (approx. 3 slices) see note below
1 c shredded cheddar cheese
5 slightly beaten eggs
2 c whole milk
1/2 tsp dry mustard
1/2 tsp salt
1/8 tsp california onion powder
pepper to taste
butter to grease casserole dish

Steps:

  • 1. You can assemble this the night before and pop it in the oven to bake the next morning. However, I'm not that organized. I put it together in the morning and bake it as soon as it is done. Works just fine either way.
  • 2. Grease a 2 qt. casserole pan with butter.
  • 3. Trim crusts off bread. Cube slices and spread on shallow baking sheet. Bake or broil until cubes are dry, stir half way through so cubes are flipped over. I usually bake the bread cubes at 350 for about 10 min. You don't want croutons, just slightly dried out bread cubes.
  • 4. Brown crumbled sausage until thoroughly cooked. Drain off fat.
  • 5. Preheat oven to 325 degrees
  • 6. Place bread cubes evenly in bottom of baking dish.
  • 7. Sprinkle cheddar cheese on top of bread cubes. Add sausage on top.
  • 8. Mix salt, dry mustard, pepper and onion powder together (this helps to keep the mustard from getting lumpy).
  • 9. Add milk and spices to beaten eggs. Mix well.
  • 10. Gently pour mixture on top of meat, cheese, bread mixture.
  • 11. Bake uncovered for 1 hour. Cover with foil if the top gets too brown before center is done. (Test with toothpick or wooden skewer. It should come out clean.) Frittata will puff up in oven but sinks a bit when removed.
  • 12. Serve with salsa, green onions, peppers, sour cream, etc. Very good reheated for a quick snack or lunch.

½ cup heavy cream
1 teaspoon salt
½ teaspoon black pepper
4 strips bacon, diced
1 cup onion, diced
½ cup tomato, diced
4 cups spinach
½ cup shredded cheddar cheese
green onion, for topping

Steps:

  • Preheat oven to 350°F (180°C).
  • In a large bowl, whisk the eggs, heavy cream, salt, and pepper. Refrigerate until read to use.
  • In an oven-safe pan, cook bacon. Once fully cooked, take out the bacon and set aside.
  • Add onions to the same pan and cook until translucent.
  • Add tomatoes and spinach ,and cook for a couple minutes until spinach is slightly wilted.
  • Add the bacon back into the pan. Blend together.
  • Add the eggs and cheese into the pan.
  • Give it a good stir, then bake for 15 minutes, or until the eggs do not jiggle in the middle.
  • Top off with green onions, if desired.
