SOUTHERN CANDIED SWEET POTATOES

Traditional sweet potato recipe. It is usually served as a side dish.

6 large sweet potatoes
½ cup butter
2 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon vanilla extract
salt to taste

Steps:

  • Peel the sweet potatoes and cut them into slices.
  • Melt the butter in a heavy skillet and add the sliced sweet potatoes.
  • Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve hot.

On the farm we grew many vegetables, fruits etc. One of my favorite things (after digging them and getting them into storage) was Sweet Potatoes. So many different ways to fix them but my favorite was simply BAKED SWEET POTATOES....A great side dish for any meal dressed up or down. Or, a between meal snack, warm or cold, just...

8 medium sweet potatoes
4 Tbsp bacon drippings

Steps:

  • 1. Clean 8 medium sized baking sweet potatoes, not getting any more water on them than you can help. Usually they have been prewashed so cleaning with a paper towel should be enough. If wetting is require permit them to dry completely before going to step 2
  • 2. Trim ragged ends as necessary. Line a 13x9x2 baking pan with foil and sit near you on counter top. Put prepared potatoes in bowl near you on counter top. PREHEAT OVEN TO 425 Degrees
  • 3. Have a small bowl of cooled bacon drippings near potatoes and lined baking pan. Take a paper towel and dip it into bacon drippings. Rub dripping on potatoes coating each one well. Place potatoes in foil lined baking pan.
  • 4. When oven has pre heated to 425 degrees, place pan of coated potatoes in oven and set timmer for one hour.
  • 5. WHEN TIMER ALERT GOES OFF AFTER ONE HOUR TURN OVEN OFF BUT DO NOT OPEN OVEN DOOR. LET POTATOES REMAIN IN OVEN AT LEAST ONE MORE HOUR. THIS IMPROVES THE TASTE.
  • 6. Serve with brown sugar, unsalted butter, and a sprinkle of cinnamon. Top with some chopped, toasted pecans if desired.
