2 tablespoons ground coriander
2 tablespoons ground ginger
2 tablespoons light brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon kosher salt
1 tablespoon cayenne powder
2 teaspoons coarse black pepper
2 teaspoons dry thyme
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ground cloves
8 chicken thighs
Sliced fresh mango
Homemade Mango Habanero Sauce, recipe follows
Cilantro leaves, for garnish
1 tablespoon canola oil
1 small Spanish onion, finely chopped
2 cloves garlic, finely chopped
2 ripe mangoes, peeled, pitted and coarsely chopped
1 habanero, chopped
1 cup white wine vinegar
Salt

Steps:

  • Combine all spices in a small bowl. Rub the skin side of the chicken with the rub and let rest for 30 minutes. Heat the grill to medium heat and grill the thighs, skin side down for 12 to 15 minutes, or until golden brown. Turn the chicken, close the cover of the grill and move the chicken to the side (or cooler part) of the grill. Continue cooking for 6 to 7 minutes or until completely cooked through. Remove to a platter and let rest 5 minutes before serving. Serve fresh mango slices and Mango-Habanero Hot Sauce. Sprinkle leaves of cilantro on top.
  • Heat oil in medium saucepan over medium heat. Add onions, garlic, mangoes, habanero and vinegar and cook over low heat for 15 to 20 minutes. Place the mixture in a blender and blend until smooth. If the mixture is too thick, add a few tablespoons of warm water or vinegar. Season with salt.

1 mango, peeled and diced
¾ cup water
1 tablespoon seasoned rice vinegar
1 clove garlic, minced
1 pinch salt
½ cup brown sugar, divided
2 habanero peppers, seeded and minced
2 tablespoons water
1 teaspoon cornstarch
3 tablespoons vegetable oil, divided, or as needed
6 chicken thighs, diced
1 tablespoon jerk seasoning, or more to taste
1 shallot, finely chopped
1 clove garlic, minced
1 head green cabbage, shredded
1 (12 ounce) package shredded carrots
2 very ripe yellow plantains, peeled and diced
1 (16 ounce) package egg roll wrappers
1 egg
1 tablespoon water
vegetable oil for frying

Steps:

  • Combine mango with 3/4 cup water, rice vinegar, garlic, and salt in small saucepan. Add most of the brown sugar, reserving 1 teaspoon. Bring to a boil. Reduce heat to medium-low. Cook for 5 minutes. Add habanero peppers and simmer on low for 2 minutes. Mix 2 tablespoon water with cornstarch; stir slurry into the pan. Cook over medium-high until thick, 3 to 5 minutes. Leave mixture chunky or blend for a smoother texture.
  • Heat 1 tablespoon oil in a large saucepan over medium-high heat. Add chicken thighs and saute until browned, 5 to 7 minutes; sprinkle jerk seasoning over chicken. Add shallot and garlic; cook and stir until shallot begins to soften, about 3 minutes. Reduce heat to medium. Add cabbage, carrots, and reserved sugar. Cook until cabbage is translucent but still a little crunchy, 3 to 5 minutes. Taste for seasoning. Let mixture cool.
  • Heat remaining vegetable oil in a pan over medium-high heat. Fry plantains until they start to brown, about 5 minutes. Transfer plantains onto a paper towel and let cool.
  • Separate and place egg roll wrappers onto your work surface. Mix egg with water for the egg wash.
  • Lay out one wrapper with a corner pointed toward you. Use a slotted spoon to add some of the chicken and cabbage mixtures across the center. Sprinkle plantain bits on top. Use your finger or a pastry brush to lightly moisten edges of wonton wrappers with egg wash. Fold one corner of the wrapper over the filling onto the opposite corner to form a triangle. Press edges together to seal. Fill and fold remaining egg rolls.
  • Heat oil in a large saucepan over medium-high heat. Fry egg rolls in batches in the hot oil, turning occasionally, until golden brown, about 5 minutes. Remove from oil and drain on paper towels or rack. Serve with the mango-habanero sauce.

2 tablespoons ground ginger
2 tablespoons light brown sugar
1 tablespoon onion powder

1 tablespoon kosher salt
1 tablespoon habanero powder
2 teaspoons coarse black pepper
2 teaspoons dry thyme
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
4 bone-in, skin-on chicken breasts (8 ounces each)
Canola oil
Kosher salt
Habanero-Mint Glaze, recipe follows
Mango Relish, recipe follows
2 cups red wine vinegar
2 cups white wine vinegar
1 habanero chile
3 cups sugar
1/2 cup packed fresh mint leaves, coarsely chopped
Salt
1 large mango, peeled, pitted and finely diced
1/2 small red onion, finely diced
1 jalapeno or serrano chile, stemmed, seeded and finely diced
1/4 cup fresh lime juice
1 to 2 tablespoons honey (depending on the sweetness of the mango)
1/4 cup olive oil
1/4 cup coarsely chopped cilantro leaves
Salt and freshly ground black pepper

Steps:

  • Heat grill to medium. Combine all spice ingredients in a medium bowl.
  • Brush chicken on both sides with the oil and season with salt. Rub 1 side of each breast with some of the jerk seasoning. Place the chicken on the grill, rub side down and grill until slightly charred and the rub has formed a crust, about 5 minutes. Turn the chicken over, brush the top side with some of the Habanero-Mint Glaze and continue cooking until just cooked through, brushing with more of the glaze every few minutes. Remove from the grill to a serving platter, brush with more glaze and let rest 5 minutes. Serve with Mango Relish on the side.
  • Place vinegars and habanero in a medium nonreactive saucepan and bring to a boil over medium heat. Add the sugar and cook over medium-high heat, stirring occasionally, until the sugar is completely melted and the mixture has thickened and reduced by about half. *Carefully transfer the mixture to a blender, add the mint and blend until smooth. Season with salt and let the glaze cool to room temperature.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
  • Combine all ingredients in a large bowl and season with salt and pepper, to taste. Let sit at room temperature for 30 minutes before serving to allow flavors to meld. May be prepared and refrigerated, covered, up to 1 day ahead. Bring to room temperature 1 hour before serving.

This recipe was created for the Ready Set Cook #8 contest. It's best to make this delicious sweet and spicy glaze ahead of time, and keep it refrigerated until needed. It will make about 1/2 cup. Because it's very hot and spicy, it doesn't take much to glaze the chicken breast. If you have some left over, it can be used like pepper jelly for other uses too. (I doubled the glaze recipe to keep on hand in the fridge.) Habaneros are delicious but extremely spicy. If you want to tone down the heat, use less habanero, or use a milder pepper. Also, use extreme care when mincing the habanero. I use a paper towel wrapped around my fingers, to prevent my fingers from coming in contact with it. If you get it on your fingers, and touch your eye - YOWSA!

1/2 cup sugar
1/2 mango, ripe, chopped
1/2 teaspoon ginger (grated fresh or ground)
1/2 habanero pepper, minced finely
1 teaspoon cider vinegar
2 teaspoons dark rum (like Meyers)
1/4-1/2 orange (used to provide 1 tbsp freshly squeezed juice)
4 boneless skinless chicken breast halves
salt
chopped cilantro (to garnish)

Steps:

  • Add the first five ingredients (sugar through cider vinegar) in a medium saucepan. Heat over medium and stir frequently, mashing the mango, until the ingredients are incorporated and begin to boil. Lower the heat to simmer, and let cook slowly for about 10 minutes, stirring occasionally. Squeeze 1 tbsp juice from the orange and add with the rum to the sugar/mango mixture. Stir and simmer gently for 2 - 3 more minutes. Set aside and cool. Refrigerate until ready to use.
  • Salt chicken to taste. Grill chicken until nearly finished. Baste chicken with glaze and grill a few more minutes on each side, basting lightly with glaze with each turn until the chicken is done.
  • Garnish with chopped cilantro and serve. Reserve and refrigerate extra glaze for future use.

1 tablespoon chopped onion
1 teaspoon dried thyme leaves
2 teaspoons sugar
1 teaspoon salt
1 teaspoon ground nutmeg
2 teaspoons Tabasco sauce (habanero or regular)
1 1/2 lbs boneless skinless chicken breasts
1 tablespoon butter
1 tablespoon vegetable oil

Steps:

  • Mix onion, thyme, sugar, salt, nutmeg and tabasco sauce in a small bowl.
  • Remove fat from chicken and stab a couple of times with a fork.
  • Spoon or rub seasoning mixture over both sides of each breast half and let it marinate for 20 minutes (it's still pretty good without marinating).
  • Heat butter and oil in large skillet over medium heat.
  • When bubbling, add chicken and cook for 5 to 10 minutes on each side (depending on size of chicken breasts) until brown and cooked through.
