This cheesy scalloped potatoes and ham-layered casserole dish features buttery potatoes and sweet hickory ham baked in a double Jack and Cheddar cheese sauce. 3 tablespoons butter
1 small yellow onion, diced
3 tablespoons all-purpose flour
1 cup half-and-half
½ cup whole milk
salt and ground black pepper to taste
1 teaspoon garlic powder
½ teaspoon Worcestershire sauce
½ teaspoon onion powder
¼ teaspoon paprika
4 large russet potatoes, peeled and thinly sliced
1 ½ cups chopped hickory smoked ham
½ cup grated Cheddar cheese
½ cup grated Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
  • Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.
  • Place half the sliced potatoes into the baking dish; top with half the chopped ham. Sprinkle half the Cheddar cheese and half the Monterey Jack cheese on top. Pour in half the sauce from the skillet. Repeat layering the remaining potatoes, ham, cheeses, and sauce, ending with a layer of cheese and sauce. Cover dish with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Remove the foil and bake until the cheese on top is golden and sauce is bubbling, 20 to 30 minutes more.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.

1 (30 ounce) package frozen hash brown potatoes, thawed
1 (12 ounce) package pre-cooked ham steak, diced
2 cups shredded sharp Cheddar cheese, or more to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir hash browns, ham, Cheddar cheese, onion, cream of chicken soup, sour cream, and butter in a large bowl; season with salt and black pepper. Transfer mixture to prepared baking dish and cover with aluminum foil.

A delicious recipe if you have leftover holiday ham. This casserole is full of flavor and made with very simple ingredients. The savory ham and cheese pair well the potatoes to make one yummy meal. Sauteing the onions adds some sweetness to the recipe and balances the savory ham. Fran's daughter came up with one mighty tasty way...

Number Of Ingredients 10

6-8 white potatoes, depending on size
8 oz cheddar cheese (or any variety)
2-3 c ham, cubed
1 medium onion, diced
some butter for sautéing
3 Tbsp butter
2 Tbsp all-purpose flour
1½ c milk
some salt & pepper, to taste
½ - 1 c additional milk

Steps:

  • 1. Peel and slice the potatoes. Then set aside.
  • 2. Shred the cheese and cube the ham.
  • 3. Sauté the onion in a little butter; then set aside.
  • 4. Make a roux in a medium saucepan over medium heat. (Or just use the sauté pan.) Melt the 3 tablespoons of butter, then sprinkle in the flour.
  • 5. Whisk in the milk, stirring constantly, until the white sauce starts to thicken. Salt & pepper, to taste. Remove from heat and set aside.
  • 6. To assemble, butter a 3 qt. (or up to a 13 x 9") baking dish. Spread 1/3 of the white sauce over the bottom of the dish.
  • 7. Layer 1/2 of the potatoes, 1/2 of the onions,1/2 of the ham, and 1/2 of the cheese.
  • 8. Spoon over ½ of the remaining white sauce.
  • 9. Repeat layers of the rest of the potatoes, onion, white sauce, and finish with ham and cheese on top.
  • 10. Drizzle additional milk over the top of the prepared casserole. If the white sauce was barely thickened, just add ½ cup of milk. If the white sauce got more thickened while making it, add a little more milk, but no more than 1 cup or the casserole will be soupy. But if you like it that way... =^..^=
  • 11. Bake uncovered at 350˚ F for about 45 minutes or until the potatoes are cooked through and the cheese is bubbling.
  • 12. Serve immediately and stand back to avoid the stampede.
