FRUITY JELLY BEAN FUDGE
flavors of the rainbow in this sweet treat made from leftover jelly beans from the Easter baskets. I use the smuckers or starburst brand jelly beans so it makes for a delightful fruity treat.

Steps:
- 1. Line an 8x8" pan with foil, coat with cooking spray. In a large saucepan add chips and milk. Over low heat, cook stirring until melted and smooth. Transfer 1/3 mixture(about 2c.)to a bowl, stir in greed food coloring and almond extract. spread evenly in pan, chill until firm. (10 minutes)
- 2. Transfer half of the remaining chocolate mixture(2c.) to another bowl. Add red food coloring and strawberry flavor extract. Gently spread mixture over green layer.Chill until firm (20 minutes)
- 3. Stir Coconut extract into remaining chocolate mixture, reheating if necessary. Spread over (pink) layer. Chill 10 minutes.
- 4. Using a knife gently score fudge lengthwise and crosswise into 8 rows each way, creating squares. Press 2 jelly beans into center of each square. Cover; refrigerate until set. (4 hours) Life fudge from pan, remove foil and cut into 64 pieces.

Steps:
- 1. Line a 9 inch square inch pan with foil.
- 2. Bring sugar,butter, and milk to a full roiling boil in a large saucepan stiring constently on medium heat.
- 3. Boil 4 minutes or until it reaches 234 F On a candy themometer
- 4. Remove move heat
- 5. Add white chocolate and melt stiring till smooth
- 6. Add vanilla stir well
- 7. Stir in Jelly Beans
- 8. Pour into foil lined pan and let cool.

- Line a 9-inch dish with foil and grease lightly. Melt white chocolate according to package directions. Add frosting until mixture is smooth. Remove form heat to cool slightly. Mixture should be warm and "stir-able," but not too warm to melt the jelly beans. Add jelly beans and stir until evenly distributed. Spread mixture in prepared pan and cool to room temperature.
- Put in refrigerator and cool for two hours or more. Remove foil and cut fudge into small pieces. Enjoy yourself or give as a gift!
