I am sure that many of you have had different variations of this yummy jello treat before. However, I didn't see the recipe on the site, so I decided to add it, it's one of my favorites! Plus it's gluten free. Cooking time is the time the jello takes to set.

1 (85 g) package cherry Jell-O
1 (14 ounce) can sliced peaches in juice
1 (8 ounce) can whipping cream or 1 (8 ounce) can Cool Whip

Steps:

  • In medium size bowl add jello crystals and 1 cup hot water. Stir until the crystals desolve.
  • Then open can of peach slices and pour the fruit juice in a liquid measruing cup. The fruit juice should fill the liquid measuring cup up to about 2/3 cup full. Then add cold water to the measuring cup so that it equals 1 cup.
  • Pour the one cup of fruit juice/water into the bowl and mix.Set aside.
  • Place sliced peaches in the bottom of large bowl, or in the bottom of small portion size bowls.
  • Pour the jello liquid into your bowl(or bowls) over top of the peaches.
  • Cover bowl, or bowls with saran wrap and place in fridge for a few hours, overnight, or until set.
  • When jello is set top with whipped cream or cool whip.

I have tried many recipes for different variations of lemon surprise puddings, and delicious as they are, none of them transferred well to being gluten free. The egg whites are what helps in this recipe, however, it is the ban Marie that is key to its success.

2 ounces butter
2 lemons, juice and zest of
6 ounces sugar
2 eggs, separated
4 ounces gluten, free flour mix
1 teaspoon gluten free baking powder
1/2 pint milk

Steps:

  • Preheat the oven to 180c,
  • In a bowl, beat the butter lemon zest and sugar together until light and fluffy.
  • Add the egg yolks, flour and baking powder, beat well together.
  • Gradually add the milk and lemon juice. (Don't panic if it curdles).
  • In a separate bowl, whisk the eggs whites until they form stiff peaks.
  • Using a metal spoon, gently fold the egg whites into the lemon mixture.
  • Pour into a greased 2 pint ovenproof dish.
  • Place the dish in a ban Marie and bake for 45-50 minutes.

A wonderful treat for dessert or an appetizer for dinner. I first had this at my mother-in-laws and loved it so much, I now make it for holidays! Very light and tasty!

1 (3 ounce) box orange Jell-O
2 cups boiling water
1 (8 ounce) can crushed pineapple
2 (2 ounce) packages Dream Whip
1 (8 ounce) package cream cheese

Steps:

  • Boil 2 cups of water and add to Jello till dissolved.
  • In blender add Jello mixture to cream cheese, (let cream cheese soften 10-15 minutes). Blend Jello mixture and cream cheese together till combined.
  • In separate bowl whip 2 packages of Dream Whip according to instructions on box.
  • Fold Dream Whip mixture into Jello/cream cheese mixture.
  • Add crushed pineapple and mix well.
  • Pour into 9x13-inch baking dish and refrigerate overnight.

2 small packages any sugar free flavored jello
1 large tub of cool whip (fat free)
2 can(s) any flavor diet soda to match the jello flavor or close to it.

Steps:

  • 1. Combine 2 cups boiling water and jello in mixing bowl. Stir until well dissolved.
  • 2. Add 2 cans of diet soda and stir. Put into freezer until very sludgy, or looks like a slurpee.
  • 3. Take out of freezer and mix with a electic mixer until frothy. Fold in the cool whip and put in refridgator until set.
  • 4. YOU CAN MAKE THIS WITH REGULAR INGREDIENTS FOR THE NON-DIETERS!!!!!

COTTAGE CHEESE SURPRISE (SOUTH BEACH - PHASE 1)

This is a variation on "Lime Jello Marshmallow Cottage Cheese Surprise" but much more low-calorie and a good alternative to the ricotta salads offered in South Beach - Phase 1 - and it contains no fruit.

  • Stir the jello into the cottage cheese thoroughly.
  • Fold in the Cool Whip.
  • Stir in the nuts.
  • Chill.
