Yield Serves 8

Number Of Ingredients 5

a 12-ounce bag of cranberries, picked over
2 large Granny Smith apples (about 1 pound)
1 cup dry white wine
1 1/2 cups sugar
mint sprigs for garnish

Steps:

  • In a large saucepan combine the cranberries, the apples, chopped coarse (not peeled or cored), the wine, and the sugar, bring the mixture to a boil, stirring, and simmer it, covered, stirring occasionally, for 15 minutes. Simmer the mixture, uncovered, stirring occasionally, for 20 to 25 minutes more, or until it is very thick and is reduced to about 3 cups. Force the mixture through a food mill fitted with the fine disk into a bowl, spoon it into an oiled 3-to-4 cup decorative mold, and chill it, covered, overnight. Run a thin knife around the edge of the mold and dip the mold into warm water for 10 seconds. Invert the mold onto a serving plate and garnish the cranberry sauce with the mint sprigs.

JELLIED CRANBERRY SAUCE WITH FUJI APPLE

Jellied Cranberry Sauce With Fuji Apple image

This is from the November 2009 issue of Food & Wine. It tastes like a combination of cranberry sauce and apple sauce. The pectin in the apple eliminates the need for gelatin. This cooks quickly but allow 3 hours to chill.

JELLIED CRANBERRY SAUCE WITH FUJI APPLE

Jellied Cranberry Sauce with Fuji Apple image

Cranberries only need to be cooked for a few minutes before they burst and form a sauce. Melissa Rubel Jacobson has a number of recipes for them, including Cranberry, Clementine and Pumpkin Seed Conserve and Cranberry-and-Dried-Fruit Compote. To mold the sauce so it's sliceable, she adds an apple, which is loaded with pectin, a natural gelling agent.
