This recipe can be doubled, but if you do, don't double the chocolate chips. Best if eaten in a few days.

2 egg whites
⅛ teaspoon salt
⅛ teaspoon cream of tartar
1 teaspoon vanilla extract
¾ cup white sugar
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). To prevent burning you can bake on an air cushion baking sheet or put parchment paper on a regular cookie sheet.
  • Beat egg whites, salt, cream of tartar, and vanilla until very firm. Gradually add sugar and mix. Fold in chocolate chips.
  • Drop by teaspoonfuls on pan. Bake 300 degrees for 25 minutes. They should only be lightly browned.

This recipe has been in my In-law's family for a very long time. Every holiday they are made for parties. They are the first cookie that is gone!!! This is a low calorie cookie - that even for Weight Watchers (WW) they are about 1 point for 2 smallish cookies!!!

3 egg whites
1 teaspoon white vinegar
1 teaspoon salt
3 1/2 tablespoons red gelatin powder
3/4 cup sugar
1 cup chocolate chips

Steps:

  • Carefully seperate egg whites from yolks - ANY yolk left in the egg whites and you will not be able to make the meringue!
  • In a clean dry bowl whip egg whites, white vinegar and salt until stiff (but not dry!).
  • Add in sugar and jello powder (Traditionally we use Red Jello - such as raspberry or Cherry -- ).
  • Fold in chocolate chips
  • On buttered cookie sheet, drop spoonfuls of meringue - I do smaller, bite sized cookies.
  • Bake on a buttered cookie sheet for 30 minutes at 250* then turn off the oven and let them sit there over night.
  • Do not peek or open the oven! They will turn out soft and chewy!
  • Preparation time is to make the meringue - Cooking time is total time to make!

JELLO MERINGUES

I've always wondered if one could flavor the popular meringue cookies with jello, but I never had the nerve to try it. Then I was given this recipe for the very thing! I cannot wait to try these.

2 egg whites
1/4 teaspoon cream of tartar
1/2 cup gelatin powder, any preferred flavor (regular, not diet jello)

Steps:

  • Preheat the oven to 225 degrees F. Move rack to center of the oven. Line cookie sheets with aluminum foil.
  • Beat the egg whites and cream of tartar until foamy. Add the jello powder 2 tablespoons at a time while continuing to beat. The meringue should form stiff peaks.
  • Drop mixture onto lined cookie sheets and bake in preheated oven 1 hour. Turn oven off and allow meringues to stand in unopened oven at least an hour.
  • Store in tightly sealed containers.
  • NOTE: If you prefer, substitute regular sugar for the jello.
  • Chopped drained maraschino cherries, mini-chocolate chips or chopped nuts may be mixed into the batter.

These fluffy, cloudlike cookies get their pink hue and berry taste from strawberry flavor JELL-O Gelatin mix. (But feel free to use your fave flavor!)

4 egg whites
1/4 tsp. cream of tartar
2/3 cup sugar
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin

Steps:

  • Heat oven to 225ºF.
  • Beat egg whites and cream of tartar in small bowl with mixer on high speed 5 min. or until soft peaks form. Gradually add sugar, 1 Tbsp. at a time, beating until stiff peaks form. Gently stir in dry gelatin mix until blended.
  • Drop heaping teaspoonfuls of egg white mixture into 72 mounds on parchment-covered baking sheets.
  • Bake 50 min. Turn oven off. Prop oven door open slightly; let cookies stand in oven 1 hour or until completely cooled.

1 pouch Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
1 egg
1 box (4-serving size) Jell-O™ gelatin strawberry-flavored
1 box (4-serving size) Jell-O™ gelatin berry blue-flavored
1 box (4-serving size) Jell-O™ gelatin lime-flavored
1 box (4-serving size) Jell-O™ gelatin orange-flavored

Steps:

  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper.
  • In large bowl, beat cookie mix, softened butter and egg with spoon or electric mixer on medium speed until well combined. Separate dough into 4 small bowls.
  • Add a half packet of each color gelatin per bowl; knead dough to work color in until well combined. Roll each bowl of dough into 5 small balls of dough each.
  • Pour remaining gelatin onto 4 small plates; roll each ball of dough in its corresponding color. Place on cookie sheet 2 inches apart.
  • Bake about 12 minutes or until lightly golden on edges. Cool completely before serving.

As rosy pink as Santa's cheeks, these merry meringue cookies are drizzled with dark chocolate and almost too pretty to eat. Pecans add a nice crunch to these chewy treats. They lend a "berry" festive touch to my Christmas cookie tray.

3 tablespoons plus 1 teaspoon raspberry gelatin powder
3/4 cup sugar
1 teaspoon white vinegar
1/8 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup finely chopped pecans
TOPPING:
1/4 cup semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. , Beat eggs whites until soft peaks form. Gradually add gelatin, beating until combined. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Beat in vinegar and salt. Fold in chocolate chips and nuts., Drop by rounded teaspoonfuls onto parchment-lined baking sheets. Bake at 250° for 20-25 minutes or until firm to the touch. Turn oven off; leave cookies in the oven with door ajar for about 1-1/2 hours or until cool. , In a microwave, melt chocolate chips and shortening; stir until smooth. Drizzle over cookies.
