STUFFED JALAPEñO-BACON BURGER

Steps:
- Remove seeds from jalapenos, cut up and sauté for 5 minutes; set aside.
- Finely chop three slices of KRAFT Big Slice Colby Jack Cheese and mix with the cream cheese.
- Add jalapenos and three slices chopped bacon. Mix well and set aside.
- Form the eight burger portions into thin patties. Make sure they are similar in size.
- Distribute the jalapeno cheese mixture evenly over four burger patties. Use the remaining patties as tops. Mold together, making sure the edges are crimped tight.
- Cook on a hot grill. Make sure you don't flip them over too much. Try to cook one side completely before turning. When burgers are about ready, add another slice of Colby Jack cheese on top and let melt.
- Garnish burger with lettuce, tomato, onion, 2 slices of bacon and aioli.
- Note: Don't worry if a little stuffing escapes during the cooking process.

BACON, ONION AND CHEESE STUFFED BURGER

- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

- Place bacon in a large, heavy-bottomed pot and cook over medium heat until bacon is crispy and the rendered fat is foaming, about 10 minutes. Pour bacon and rendered fat into a strainer placed over a bowl to drain fat. When fat is drained and bacon is cool enough to handle, remove bacon to a cutting board and finely chop.
- Return pot to medium heat; drizzle 2 teaspoons reserved bacon fat and butter in pan. Saute onions and 1 teaspoon salt until soft and translucent, 7 to 10 minutes.
- Stir brown sugar, sherry vinegar, 1 teaspoon thyme leaves, black pepper, and cayenne into onion mixture; add bacon. Stir water into bacon mixture and cook until jam is a brick-brown bacon color and has a jam consistency, 10 to 15 minutes.
- Remove from heat and stir balsamic vinegar, olive oil, and remaining 1/2 teaspoon thyme into jam; stir until shiny and heated through.
