CUCUMBER AND RADISH SALAD WITH YOGURT AND CUMIN



Cucumber and Radish Salad With Yogurt and Cumin image

This is based on a recipe from Mark Peel's "New Classic Family Dinners." Slice the cucumbers and radishes as thin as you can. I use an inexpensive plastic Japanese mandolin for this. (Make sure to use the guard so you don't cut your fingertips!) I eat this as a salad and also as a delicious bruschetta or crostini topping.

3/4 pound cucumbers, peeled if the skin is thick, preferably seedless (Japanese, Persian or hothouse)
Salt to taste
1 medium-size bunch radishes (about 5 ounces), trimmed and sliced very thin
1/2 to 3/4 teaspoon black sesame seeds or nigella seeds (to taste)
1/2 teaspoon cumin seeds, lightly toasted and ground
1/8 to 1/4 teaspoon freshly ground black pepper (to taste)
1/8 teaspoon turmeric
1/2 teaspoon curry powder
1/3 cup thick Greek style yogurt
1 small garlic clove, puréed
1 tablespoon fresh lemon juice
Chopped chives for garnish

Steps:

  • Cut the cucumbers in half and using a teaspoon, scoop out seeds if necessary. Slice paper-thin. Toss with a generous amount of salt and place in a colander over a bowl or in the sink for 10 minutes. Place in a bowl of cold water and swish them around, then salt again and let sit for another 10 minutes. Rinse and drain on a clean kitchen towel. Transfer to a salad bowl and add the radishes and sesame seeds or nigella seeds.
  • In a small bowl stir the cumin, pepper, turmeric and curry powder into the yogurt. Whisk in the garlic and lemon juice. Add salt to taste. Toss with the cucumbers and radishes, garnish with chopped chives and serve, or refrigerate until ready to serve.

3 japanese cucumbers (Seeded, Sliced Thin)
2 cups daikon radishes (Sliced Thin)
1 cup maui onion (Sliced Thin)
2 cups grape tomatoes (Sliced in Half)
1 tablespoon fine sea salt
1 teaspoon fresh ground black pepper (Fine)
1 garlic clove (Minced)
1/4 cup seasoned rice vinegar
2 teaspoons fine sugar
2 fresh bay leaves
4 tablespoons fresh chives (Chopped)

Steps:

  • Place cucumbers, radishes, onion, tomatoes, salt, pepper, garlic clove, 1-bay leaf in a salad bowl and toss salad.
  • In a small saucepan add rice vinegar, bay leaf and bring boil. Wisk in sugar until completely disolved. Pour warm dressing over salad. Season salad with sea salt and black pepper. Toss salad until completely coated.
  • Chill salad for 15-minutes before service.
  • Remove garlic clove and bay leaves. Add 2 tablespoons chives. Season with salt and pepper to taste. Serve salad on a chilled plates.
  • Garnish salads with fresh chopped chives.

Once upon a time I had a similar recipe from Cooks Illustrated, but can't seem to find it. This is the closest I can come from memory. It's pretty good (pat on back...) but something is not quite the same. The amount of red pepper is for average heat - adjust to your taste! COOKING TIME IS REFRIGERATION TIME.

1 cucumber, about 8 inches
3 tablespoons rice wine vinegar
1 tablespoon water
2 teaspoons sugar
1 tablespoon mirin
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 teaspoon fresh mint leaves

Steps:

  • Wash cucumber very well, or peel it.
  • Cut cucumber in half crosswise and then in half lengthwise. Remove seeds.
  • Thinly slice cucumber and place in a glass bowl.
  • Thickness depends on how crisp you want the cucumbers to be when finished. Thicker = Crisper, but Thinner = Yummier!
  • Place remaining ingredients into a magic bullet jar or a small food processor bowl. Process for about 30 seconds or until the mint looks like small specks.
  • Pour marinade over sliced cucumbers, mix well and refrigerate for at least an hour.
  • To serve, I usually place in individual shallow white prep bowls or little japanese ceramic serving dishes, spooning a little bit of the marinade over the top.

2 cups thinly sliced cucumbers (Japanese, English, or regular)
1/2-1 teaspoon salt (to taste)
1/4 teaspoon pepper
1 tablespoon sugar (or slightly less honey)
1 tablespoon soy sauce
1/4 cup rice wine vinegar
1 teaspoon sesame oil
2 teaspoons sesame seeds

Steps:

  • If using English or regular cucumbers, they need to be peeled, cut lengthwise, seeded and sliced into thin half moons.
  • In a large bowl, combine cucumbers, salt and pepper, mix well.
  • Add sugar(or honey), soy sauce, rice wine vinegar and sesame oil and mix well.
  • Sprinkle with sesame seeds and mix.
  • Let marinate for 20 minutes before serving.
