ISLAND FRUIT AND MIXED GREEN SALAD

1/2 cup pineapple juice
1/4 cup red wine vinegar
1 shallot, minced
Salt and pepper
1 1/2 cups canola oil
1 mango, peeled, seeded and cut into 1/4-inch strips
1 papaya peeled, seeded and cut into 1/4-inch strips
1/2 cup dried cranberries
1/2 cup banana chips
1/2 cup macadamia nuts, chopped
Salt and pepper
6 cups mizuna (or other leafy green), loosely packed

Steps:

  • For the vinaigrette:
  • Whisk together the pineapple juice, red wine vinegar, shallot and salt and pepper. Slowly incorporate the canola oil. Taste, for seasoning.
  • For the salad:
  • In a large salad bowl, toss together the mango, papaya, cranberries, banana chips and macadamia nuts with 1 cup of the vinaigrette. Season lightly with salt and pepper. Place the mizuna on a large serving tray and top with the mixed fruit. (The salad greens hold up longer if only the fruit is tossed with the vinaigrette. However, if serving promptly, combine the greens and the fruit and toss with the vinaigrette.) Drizzle the salad with the extra dressing or serve on the side.

900 g penne or 900 g corkscrew macaroni
2 (13 fluid ounce) bottles jamaica mistake salad dressing
125 g feta cheese, crumbled
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, sliced
sweet cherry tomatoes

Steps:

  • Mix all together and top with cherry tomatoes. Let sit in fridge overnight.

So simple, yet different. We just got back from Jamaica, and this was a salad we ate quite often. Most restaurants we went to served this as their "garden salad" and it was always served with thousand island dressing. We loved it so much, we made it as soon as we got back.

4 cups cabbage (shredded or thinly sliced)
4 carrots (shredded)
1 green pepper (sliced into rings)
1 tomatoes (cut into 8 wedges)
1/2 English cucumber (peel on, round slices)
thousand island dressing

Steps:

  • Place cabbage into bottom of serving bowl.
  • Top with carrot.
  • Next, the green pepper.
  • Slide the cucumber slices down the side of the bowl, so that they are"standing" on the inside of the bowl, surrounding your salad, and you can see half of each slice sticking out.
  • Put the tomato wedges on the top of the salad.
  • Serve with thousand island dressing.

My sister-in-law, Vicki, brought this salad to Christmas dinner one year. It was such a big hit, that we have served it at family get-togethers ever since.

10 oz cut and washed romaine lettuce
6 oz washed baby spinach
1 small can mandarin oranges, drained
1/2 medium red onion, thinly sliced, rings separated
4 oz chopped pecans
12 oz bottle johnny's jamaica mistake salad dressing

Steps:

  • 1. In a large bowl, combine first five ingredients.
  • 2. When ready to serve, pour Jamaica Mistake salad dressing over lettuce mixture. Toss until greens are well coated with dressing. Serve immediately.
