- Preheat the oven to 425 degrees F. Place sweet potatoes on a baking sheet. Coat fries with Natural Grapeseed Oil. Sprinkle Jamaican Jerk Seasoning on fries.

SWEET POTATO FRIES
These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

Steps:
- Heat the oven to 400.
- Cut the sweet potatoes into sticks 1/4 to 1/2 inch wide and 3 inches long, and toss them with the oil.
- Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.
- Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes. Serve hot.

JERK SWEET POTATO & BLACK BEAN CURRY

- Gently soften the diced onion in the sunflower oil in a big pan or casserole.
- Meanwhile, whizz together the roughly chopped onion, ginger, coriander stalks and jerk seasoning with a hand-held blender. Add to the softened onion and fry until fragrant. Stir in the thyme, chopped tomatoes, vinegar, sugar and stock cubes with 600ml water and bring to a simmer. Simmer for 10 mins, then drop in the sweet potatoes and simmer for 10 mins more. Stir in the beans, peppers and some seasoning, and simmer for another 5 mins until the potatoes are almost tender. Cool and chill for up to 2 days.
- To serve, gently heat through on the hob. Roughly chop most of the coriander leaves and stir in, then serve scattered with the remaining leaves.

JERK SWEET POTATO FRIES
I saw this in the Salem Statesman Journal and wanted to keep it for later. It comes from chef Carl Conway. Looking forward to trying it this holiday season as a fun and different side dish! Please note that the 'jerk' seasoning amounts make 1.3 cups. YOU ONLY WANT TO USE 2 TABLESPOONS OF IT on each 1.5 lb. measure of potatoes.

- Preheat oven to 425 degrees F.
- Mix jerk seasoning together in a small bowl. Reserve 2 Tablespoons for use in recipe and keep the remainder in an air-tight container.
- Toss sweet potato slices in a bowl with vegetable, jerk seasoning and salt.
- Spread potatoes out onto a prepared baking sheet in a single layer.
- Bake for 30 minutes, stirring every 10 minutes until they are slightly browned.
- Transfer to a paper-towel lines plate and serve warm.
