Steps:
- Preheat oven to 350°F.
- BASE:
- Cream butter and sugar.
- Beat in egg, then vanilla and oil.
- Sift in dry ingredients and mix until crumbly.
- Press into prepared cookie sheet.
- FILLING:
- Heat jam in microwave for 1 minute.
- Beat well and leave to cool.
- Spread over raw base when cool.
- TOPPING:.
- Whisk egg whites til very stiff.
- Add sugar and beat til glossy.
- Fold in coconut and spread over jam.
- Place in oven, immediately turn heat down to 325F and bake for 10 minutes.
- Turn heat down to 300F and bake for further 20 minutes.
- Switch off oven and leave for 5 minutes before removing.
- Slice whilst piping hot.

This is a fun recipe that kids love to help make and the easy thing is that they can without worry about them being burned in the jam making process. Simple as pie and taste excellent even if I do say so myself lol

- Cut candy slices into small pieces.
- Mix and cook approximately 20 minnutes or until it starts to set up.
- Seal in prepared jars.

- Line 2 baking sheets with parchment paper. Whisk the flour, baking powder and salt in a medium bowl. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in the egg, then the vanilla and lemon zest. Reduce the mixer speed to low; add the flour mixture and beat until just combined (the dough will be soft).
- Divide the dough into 4 pieces and put 2 pieces on each prepared baking sheet. Shape each piece into a 12-by-1-inch log, about 3 inches apart. Using the handle of a wooden spoon or your finger, press a 1/2-inch-deep indentation down the middle of each log. Refrigerate until firm, about 30 minutes.
- Position racks in the upper and lower thirds of the oven and preheat to 375 degrees F. Fill the indentations with jam. Bake, switching the position of the pans halfway through, until golden brown, 20 to 25 minutes. Let cool completely on the baking sheets, then transfer the logs to a cutting board and slice crosswise into 1-inch-wide cookies.
JAM SLICES
My friend, Kristin, sent me the original recipe for these. I made them per the recipe the first time but discovered that they needed "something" in the dough so my version includes a dash of salt and some vanilla or almond flavoring.

Steps:
- Beat the butter and sugar until light and fluffly. Beat in the eggs one at a time and beat well after each one is added. Add the vanilla or almond flavoring. Combine the dry ingredients and add to the dough mixing until well incoporated.
- Divide the dough into 5 sections. Roll each until about 12 inches in length using a little flour on your hands and the counter so it doesn't stick. Place on parchment lined cookie sheets.
- Make an indentation along the center of each log and fill with preserves. (See photo) Bake on center rack of the oven for about 15 minutes or a little less at 400 degrees.
- Mix the powdered sugar and water and spread over the warm cookie logs. Cut into 1/2 inch wide diagnol slices while they are still warm.
