Raspberry Jam Bars image

Sweet, tart and gooey, these raspberry jam bars are a happy marriage of blondies and jam.

½ cup pecans
1 cup all-purpose flour, spooned into measuring cup and leveled-off with a knife
½ cup unsweetened coconut flakes
¼ cup old-fashioned rolled oats
Heaping ¼ teaspoon salt
¼ teaspoon baking powder
1 stick unsalted butter, softened
½ cup granulated sugar
¼ cup packed light brown sugar
1 large egg
½ cup raspberry jam

Steps:

  • Preheat the oven to 350°F and adjust the oven rack to the middle position. Line an 8-inch square baking dish with heavy-duty aluminum foil so that it overlaps the sides and spray with nonstick cooking spray.
  • In the bowl of a food processor fitted with the steel blade, place the pecans, flour, coconut, oats, salt, and baking powder. Blend until the mixture has a fine, sand-like texture. Set aside.
  • In the bowl of an electric mixer, beat the butter with the granulated sugar and brown sugar on medium speed until light and creamy, a few minutes. Add the egg and beat until well combined. Add the flour mixture to the butter mixture and beat on low speed until just combined. The dough will be sticky. Place ⅔ of the dough on the bottom of the prepared baking dish, using an offset spatula to spread it into an even layer. (If you don't have an offset spatula, lightly wet your fingers and press the dough into an even layer.) Spread the jam over the surface of the dough, leaving ¼-inch space between the jam and the sides of the baking dish so the bars won't stick to the foil. Pinch off 1-inch clumps of the remaining dough and scatter evenly over top of the jam. The dough won't cover the entire surface; that's okay. Bake for about 35 minutes, until the topping is golden brown.
  • Let the jam bars cool in the baking dish on a rack for about 15 minutes. Using the foil overhang, lift the bars out of the pan and onto the countertop. Pull the foil away from the sides to prevent sticking, and then let sit until completely cool, a few hours. Cut into 16 bars. Cover the bars with foil and store at room temperature for up to two days.
  • Freezer-Friendly Instructions: These can be frozen for up to 2 months. Let the cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove the bars from the container and let them come to room temperature.

4 1/2 ounces old fashioned rolled oats, not quick cooking, instant, or thick cut (about 1 1/3 cup; 128g)
4 1/2 ounces all-purpose flour (about 1 cup, spooned; 128g)
6 ounces light brown sugar (about 3/4 cup, firmly packed; 170g)
1 teaspoon baking powder
1 teaspoon (4g) Diamond Crystal kosher salt, plus more for sprinkling; for table salt, use about half as much by volume or the same weight, plus additional salt for sprinkling
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
6 ounces cold, unsalted butter, cut into 1/2-inch cubes (about 3/4 cup; 170g)
1 large egg, straight from the fridge (about 1 3/4 ounces; 50g)
For the Filling:
8 ounces jam (volume will vary; 225g) or 12 ounces "juicy" fruit, such as whole blueberries or raspberries, pitted cherries, sliced strawberries, or peeled and diced peaches (volume will vary; 340g)
Lemon juice, to taste

Steps:

  • Getting Ready: Adjust oven rack to lower-middle position and preheat to 350°F (180°C). Line an 8- by 2-inch square, anodized aluminum pan with two long strips of parchment to cover the bottom and sides, creasing as needed to ensure a secure fit.
  • Making the Bars: Scatter 16 ounces (about two-thirds of the mixture; 455g) into the bottom of the prepared cake pan, and gently press into an even layer. The idea is to encourage the pieces into a single sheet, without compressing the dough with excessive force.

3/4 cup butter or margarine, softened
2/3 cup granulated sugar
2 teaspoons vanilla
1 egg
2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/2 cup favorite jam or preserves
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening. In medium bowl, mix butter, granulated sugar, vanilla and egg with spoon. Stir in flour and baking powder until dough forms. Pat dough evenly in pan.
  • Beginning 3/4 inch from short side of pan, press 1/2-inch-wide and 1/4-inch-deep groove in dough, using end of wooden spoon. Make 8 more grooves, each 1 1/2 inches apart. Fill each groove with slightly less than 1 tablespoon jam.
  • Bake 20 to 25 minutes or until light golden brown. Cool completely, about 1 hour. Sprinkle with powdered sugar. For bars, cut into 8 rows by 4 rows.
