4 oz jalapeño, 1 can, well drained or 4-6 fresh, roasted and diced. include seeds for extra spice
8 oz cream cheese, softened
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded parmesan cheese, divided
½ cup italian bread crumbs
4 tablespoons butter, melted
1 tablespoon dried parsley
bread, or crackers, for serving

Steps:

  • Preheat the broiler. If using fresh jalapeños, cut them in half and remove the seeds, then place cut side down on a baking sheet. Broil them for 1-2 minutes, until the skins blacken and bubble. Remove from the broiler. When cool enough to handle, peel off and discard the outer skin, then dice the peppers. Set aside.
  • Turn the oven to 400˚F (200˚C).
  • In a medium bowl, mix the cream cheese and sour cream. Add the cheddar cheese, ¾ of the Parmesan, and the diced jalapeños. Mix well.
  • In a separate medium bowl, mix the bread crumbs, melted butter, the remaining Parmesan cheese, and the parsley.
  • Spoon the jalapeño mixture into an 8x8-inch (20x20-cm) baking dish or a medium cast iron pan, spreading evenly. Sprinkle the bread crumb topping evenly on top.
  • Bake for 20 minutes, or until hot and the bread crumbs are golden brown. Serve with bread or crackers.

4 jalapeñoes, seeded, diced, plus 24 sliced for topping

Steps:

  • In a large bowl, combine the bread crumbs, cheddar cheese, eggs, ½ teaspoon of salt, and ½ teaspoon of pepper, and mix well.
  • Grease a 24-cup mini muffin tin with nonstick spray and fill each cup with a heaping tablespoon of the bread crumb mixture. Press into the pan firmly to form wells. Set aside.
  • In another large bowl, combine the cream cheese, bacon, diced jalapeños, the remaining ½ teaspoon of salt, and remaining ½ teaspoon of pepper.

12 jalapeño peppers
1 block pepper jack cheese
4 eggs
2 cups flour, as needed
2 cups bread crumbs, as needed
24 toothpicks

Steps:

  • Cut the top off each jalapeño and core it, scraping out all the seeds, with the back side of a spoon.
  • Fill the jalapeños with pepper jack cheese, either melted or cubed.
  • Place the top back on the jalapeños and secure with two toothpicks inserted diagonally.
  • NOTE: Be sure each toothpick goes through both the top and the bottom of the jalapeño to secure it.
  • Dredge in flour, eggs, then breadcrumbs. For a thicker breading, double bread the jalapeños by repeating the egg and breadcrumb dredging.
  • Heat oil to 325°F (160°C).
  • Fry each jalapeño popper until golden brown (about 2-3 minutes).
  • Cool and allow extra oil to drip off on a plate lined with paper towels. Remove the toothpicks.

Steps:

1 lb ground beef
1 oz taco seasoning, 1 package
2 teaspoons kosher salt, plus more to taste
1 teaspoon ground black pepper
¼ cup fresh cilantro, chopped
2 tablespoons extra virgin olive oil
1 medium white onion, diced
2 cloves garlic, minced
1 cup shredded cheese blend
½ cup cream cheese
4 eggs, beaten
1 ½ cups flour, mixed with 1 tsp salt and 1 tsp pepper
4 cups cornflake cereal, crushed
1 cup cornflake cereal, finely ground
8 cups canola oil
¼ cup fresh cilantro, chopped
1 tablespoon fresh lime juice, for seasoning

Steps:

  • Slice the jalapeños lengthwise down the center, taking care to cut through only one side and leaving the pepper as intact as possible. Remove the seeds.
  • In a large bowl, combine the ground beef, taco seasoning, salt, pepper, and cilantro. Mix to combine.
  • Heat the olive oil in a large pan over medium heat. Cook the onion for 1 minute, then add garlic and cook another minute.
  • Add the beef mixture and cook until browned, approximately 5 minutes. Remove from the heat and let cool completely.
  • In a clean, large bowl, combine the cooled beef mixture, shredded cheese, and cream cheese.
  • Transfer the beef mixture to a piping bag or zip-top bag with a corner snipped off.
  • Pipe the beef mixture into the jalapeños, then close the peppers.
  • Heat a large pot filled with the oil until it reaches 325ºF (170ºC).
  • Add the seasoned flour, eggs, and cornflakes to 3 separate shallow bowls. Dip the peppers in the egg, then the flour, followed by the egg again, and then the cornflakes. Dip once more in the egg and finish with a second dip in the cornflakes.
  • Fry the peppers, in batches, for 2½ minutes until golden brown. Remove with a slotted spoon or tongs and drain on a wire cooling rack.
  • Season the peppers well with salt and fresh lime juice.

Oil for deep-fat frying
