Steps:

  • Preheat oven to 400°F (200˚C).
  • Slice the jalapeños in half, then remove the seeds by scraping out the insides.
  • Spread the cream cheese evenly among the jalapeño shells.
  • Wrap each jalapeño in bacon.
  • Place the bacon-wrapped jalapeños on a baking sheet lined with parchment paper. Bake for 20 minutes, until bacon is browned and peppers are tender.

2 cups panko breadcrumbs
2 cups shredded cheddar cheese, plus more for topping
2 large eggs
1 teaspoon kosher salt, divided
1 teaspoon black pepper, divided
nonstick cooking spray, for greasing
10 oz cream cheese
4 strips bacon, cooked and chopped
4 jalapeñoes, seeded, diced, plus 24 sliced for topping

Steps:

  • In a large bowl, combine the bread crumbs, cheddar cheese, eggs, ½ teaspoon of salt, and ½ teaspoon of pepper, and mix well.
  • Grease a 24-cup mini muffin tin with nonstick spray and fill each cup with a heaping tablespoon of the bread crumb mixture. Press into the pan firmly to form wells. Set aside.
  • In another large bowl, combine the cream cheese, bacon, diced jalapeños, the remaining ½ teaspoon of salt, and remaining ½ teaspoon of pepper.
  • Preheat oven to 375°F (190°C).
  • Fill the bread crumb wells with a 2 tablespoons of the cream cheese mixture. Top each cup with a bit of shredded cheddar and a jalapeño slice.
  • Bake for 10 minutes, or until the cups are golden brown.

8 sheets phyllo dough
½ stick unsalted butter, melted
1 cup shredded Cabot Habanero Cheese
1 cup shredded Cabot Seriously Sharp Cheddar Cheese
8 oz cream cheese, softened
3 cloves garlic, minced (about 1 tablespoon)
1 teaspoon kosher salt
1 bunch scallions, sliced, white and green parts separated
3 jalapeñoes, seeded and diced

Steps:

  • Preheat the oven to 350°F (180°C).
  • Place a sheet of phyllo dough on a clean, flat surface and brush with melted butter. Place another sheet of phyllo on top of the buttered sheet and brush with more butter. Repeat with another sheet of phyllo, then stack a final sheet of phyllo on top and press to flatten. Repeat with the remaining 4 sheets of phyllo and melted butter.
  • Using a 4-inch round cutter, cut 6 circles from each layered phyllo square for a total of 12 rounds. Press each round into a cavity of a 12-cup muffin tin.
  • Par-bake the phyllo cups until beginning to turn golden brown, about 5 minutes.
  • In a medium bowl, combine the Cabot Habanero Cheese, Cabot Seriously Sharp Cheddar Cheese, cream cheese, garlic, salt, scallion whites, and the jalapeños. Mix well.
  • Evenly distribute the filling between the phyllo cups, about 1 heaping tablespoon per cup.
  • Bake until the cheese is melted and bubbly, about 10 minutes. Remove from the oven and let the cups cool slightly, about 2 minutes.
  • Garnish with the scallion greens, then serve.

2 1/4 teaspoons active dry yeast (1 packet)
12 ounces warm beer (110°-120°), I used Blue Moon *see cooks note
2 tablespoons granulated sugar
3 1/2 cups all-purpose flour + more for dusting counter
1 teaspoon kosher salt + more for pretzel tops
2 tablespoons baking soda
2 cups water
8 ounces cream cheese
8 ounces Mexican cheese blend, shredded (or cheddar cheese)
1 (4 ounce) can diced jalapeños
12 ounces bacon, cooked and chopped into bite size pieces

Steps:

  • Preheat oven to 450°. Pour beer into the bowl of a stand mixer fitted with a dough hook (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add sugar and stir. Allow yeast to bloom for 5-10 minutes. Once it is nice and foamy, it is ready. *It should look like the 'head' of a beer poured too quickly and smell yeasty. Meanwhile in a medium mixing bowl combine cheeses, bacon and jalapeños. Mix together. You may need to use a wood spoon to get it well mixed. In a small bowl beat egg, set aside. Sprinkle clean counter top with ¼ cup flour. Line a baking sheet with parchment paper or spray with cooking spray. Set aside. Add flour and salt to stand mixer. Knead for 3- 5 minutes until the dough comes together in one ball. Add more flour a tablespoon at a time as needed, if bread is too sticky to come together. Dough should be tacky when you pull it out of the mixer, not sticky. Place dough on floured counter top and knead in flour until it is no longer tacky, just a minute or two. Form dough into a ball. We are going to cut this ball into 36 (somewhat) even pieces. First quarter the ball of dough. *I used a bench scraper, but a butter knife would work too. Roll each quarter into a fat log. Cut that into 3 pieces. Roll each piece into a log and cut into 3 pieces. When you are done you will have 36 pieces. Fill a medium (4 cup) bowl with 2 cups of hot water and add baking soda. Place baking sheet, baking soda water and cheese mixture on the counter that you are working on. Roll each dough piece (one at a time) into a ball and then flatten it into a circle. Add 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper. Carefully pull each side over the cheese to create a 'cheese package', pinching the edges closed. Roll the dough into a ball. Be careful to make sure you can not see the cheese through the dough. Tap fingers in flour, pinch any tears and roll again. Set aside and repeat until you have 3 stuffed dough balls. Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3. Prepare the next 3 dough balls. Remove dough balls from water with a slotted spoon and place on prepared baking sheet. Place 3 newly prepared balls into the water and prepare 3 more. Repeat until all dough balls are on the cookie sheet. Cooks Note: You can mix the dough by hand if you do not have a stand mixer. Add water, yeast and sugar to a large bowl. Once the yeast blooms stir in the salt and the flour. Mix with a spoon. Turn dough out onto floured counter top and knead for 3-5 minutes until dough is no longer sticky. Proceed with remaining instructions. I microwaved the beer in a glass microwave safe measuring cup, 15 seconds at a time until it was 110-120 degrees.

24 jalapeñoes
1 lb ground beef
1 oz taco seasoning, 1 package
2 teaspoons kosher salt, plus more to taste
1 teaspoon ground black pepper
¼ cup fresh cilantro, chopped
2 tablespoons extra virgin olive oil
1 medium white onion, diced
2 cloves garlic, minced
1 cup shredded cheese blend
½ cup cream cheese
4 eggs, beaten
1 ½ cups flour, mixed with 1 tsp salt and 1 tsp pepper
4 cups cornflake cereal, crushed
1 cup cornflake cereal, finely ground
8 cups canola oil
¼ cup fresh cilantro, chopped
1 tablespoon fresh lime juice, for seasoning
salsa, for serving

Steps:

  • Slice the jalapeños lengthwise down the center, taking care to cut through only one side and leaving the pepper as intact as possible. Remove the seeds.
  • In a large bowl, combine the ground beef, taco seasoning, salt, pepper, and cilantro. Mix to combine.
  • Heat the olive oil in a large pan over medium heat. Cook the onion for 1 minute, then add garlic and cook another minute.
  • Add the beef mixture and cook until browned, approximately 5 minutes. Remove from the heat and let cool completely.
  • In a clean, large bowl, combine the cooled beef mixture, shredded cheese, and cream cheese.
  • Transfer the beef mixture to a piping bag or zip-top bag with a corner snipped off.
  • Pipe the beef mixture into the jalapeños, then close the peppers.
  • Heat a large pot filled with the oil until it reaches 325ºF (170ºC).
  • Add the seasoned flour, eggs, and cornflakes to 3 separate shallow bowls. Dip the peppers in the egg, then the flour, followed by the egg again, and then the cornflakes. Dip once more in the egg and finish with a second dip in the cornflakes.
  • Fry the peppers, in batches, for 2½ minutes until golden brown. Remove with a slotted spoon or tongs and drain on a wire cooling rack.
  • Season the peppers well with salt and fresh lime juice.
  • Serve warm with salsa for dipping.
