This Jalapeño Coleslaw is creamy, easy and packed with flavor! Sweet and subtly spicy, this coleslaw is far from bland or boring and is the perfect summer side!

1/2 small Head Green Cabbage (- thinly sliced (about 8 ounces)*)
1/2 Head Purple Cabbage (- thinly sliced (about 8 ounces)*)
1 small Red Onion (- thinly sliced, rinsed in cold water, and drained well)
2 small Carrots (- peeled and shredded)
2 Jalapenos ( - seeded and minced)
2 Green Onions ( - thinly sliced)
1/2 Cup Mayonnaise (or more to taste*)
2 TBS Spicy Brown Mustard
1 TBS Apple Cider Vinegar
4 tsp Granulated White Sugar
1/4 tsp Celery salt
1/4 tsp Cumin
1/8 tsp EACH: Cayenne & Black Pepper
8 Pieces Texas Toast (- Cooked (I used the Garlic & Parsley flavor, it was excellent for this sammie))
10-12 Oz Pulled Pork
Carolina BBQ Sauce

Steps:

  • Jalapeno Coleslaw: Combine Cabbage, Carrots, Jalapeno, Red and Green Onion in a mixing bowl.
  • In a separate, small mixing bowl combine remaining (dressing) ingredients. Whisk well to combine.
  • Pour 1/4 cup of the Dressing over Cabbage mixture. Toss to combine. Add more dressing until desired level of creaminess is achieved. OPTIONAL, but recommended: Cover and refrigerate for at least 1 hour to allow flavors to incorporate.
  • Pulled Pork Sandwich: (I don't really think you guys need a written recipe for this, but I will include instructions for those of you who simply feel more comfortable with instructions.)
  • Layer in this order: Slice of Texas Toast, (4 ounces) Pulled Pork, Smear of BBQ Sauce, Coleslaw & Top with Slice of Texas Toast. Enjoy!

6 cups preshredded cabbage or 6 cups coleslaw mix
2 tomatoes, seeded and chopped
6 green onions, coarsely chopped
2 jalapeno peppers, finely chopped (see note)
1/4 cup cider vinegar
3 tablespoons honey
1 teaspoon salt

Steps:

  • Combine cabbage,tomatoes,green onions,jalapenos,vinger,honey and salt in serving bowl;mix well. Cover and chill at least 2 hours before serving.
  • Stir well immediately before serving.
  • Note:jalapeno peppers can sting and irritate the skin;wear rubber gloves when handling peppers and do not touch eyes. Wash hands after handeling peppers.
  • For a milder coleslaw,discard the seeds and veins when chopping the jajapenos, because this is where much of the heat of the pepper is stored.

A spicy coleslaw my family enjoys that is great on sandwiches or with BBQ.

1 head green cabbage, shredded
1 onion, chopped
2 carrots, shredded
2 jalapeno chile peppers, chopped
1 egg
1 small lemon, juiced
1 tablespoon white vinegar
¼ teaspoon salt
1 cup vegetable oil
2 tablespoons prepared mustard
2 tablespoons white sugar
1 tablespoon cider vinegar
½ teaspoon ground chipotle chile pepper
½ teaspoon celery salt

Steps:

  • Combine cabbage, onion, carrots, and jalapeno peppers together in a bowl.
  • Blend egg, lemon juice, white vinegar, and salt in a food processor until smooth. Slowly drizzle oil into egg mixture through the feeding tube while the food processor is running until mayonnaise is smooth and thickened.
  • Mix mustard, sugar, cider vinegar, chipotle chile pepper, and celery salt into mayonnaise until dressing is smooth and evenly combined.
  • Stir dressing into cabbage mixture until evenly coated. Cover bowl with plastic wrap and refrigerate until flavors blend, at least 2 hours.

2 tablespoons vegetable oil, divided
1 pound skirt or flank steak
Kosher salt, freshly ground pepper
1/2 cup fresh cilantro leaves with tender stems, divided
4 radishes, trimmed, chopped
2 spring onions or 4 scallions, white and pale-green parts only, thinly sliced
1/2 serrano chile or jalapeño, seeds removed if desired, finely chopped
2 tablespoons fresh lime juice
8 corn tortillas, warmed
2 ounces queso fresco or Cotija cheese, crumbled

Steps:

  • Heat 1 tablespoon oil in a large skillet over high heat. Season steak with salt and pepper and cook about 5 minutes per side for medium rare. Let steak rest 5 minutes.
  • Meanwhile, chop half of cilantro and toss with radishes, onions, chile, lime juice, and remaining 1 tablespoon oil in a medium bowl. Season radish salsa with salt and pepper.
  • Slice steak and serve on tortillas topped with radish salsa, queso fresco, and remaining cilantro.
