1 brie wheel (8- or 9-oz)
1/2 to 2/3 cup pepper jelly

Steps:

  • Preheat oven to 350 degrees. Remove top rind of cheese; leave rind on sides and bottom. Place brie cut side up in brie baker; top with pepper jelly.
  • Place brie baker in center of hot oven for 15 minutes. DO NOT place lid on baker while in oven.
  • Remove from oven and place brie baker cover on top to keep brie warm and soft until ready to serve.

3 Minute Melty Festive Brie (Speed Baked Brie) image

This is one of my greatest secret weapons for gatherings. It looks fantastic, you don't need to use an expensive brie for this, it's adaptable to your taste, it takes minutes to make, and it's an absolute and total crowd pleaser! The flavour combination is a killer: creamy brie with the warm nuttiness of pecans, sweetness from maple syrup and juicy pops of pomegranate. Normally brie served like this is baked, but you can't tell the difference between baking and microwaving!

1 (250 g / 8 oz) whole brie ((Note 1))
1/4 cup roughly chopped pecans (, roasted (Note 2))
1/4 cup pomegranate seeds
1/4 cup maple syrup

Steps:

  • Unwrap brie and place on a small microwave-proof plate with a rim (so maple syrup doesn't go everywhere).
  • Microwave on high for 1 minute 15 seconds, or until the brie is very soft when you prod the centre. Watch the brie as you microwave it - if it starts to puff up too much (i.e. risk of bursting), turn microwave off and leave brie inside - residual heat will continue to melt it.
  • Top with pecans, pomegranate seeds and maple syrup. Serve immediately with crackers of choice (choose ones suitable for scooping). I serve this with a spoon and/or small pate knife.

A totally different baked brie! This is so easy to make and tastes so good, I could eat it all by myself. (But since everyone else seems to like it, I do share.) I usually keep the ingredients for this on hand (there's only 4!) so I can make this on a moment's notice. I serve it on a round platter with crackers surrounding it. Although the recipe calls for green pepper sauce, you can use whatever kind you like. I usually use one of the A**-Kicking Brand ones, for some real heat! I like to save just a little bit of the dough, which I cut with an appropriate cookie cutter (i.e. angels for Christmas, stars for 4th of July, etc.). I use this to cover the seam of the dough, which serves to both seal the dough and make it look pretty! The recipe comes from the Tabasco hot sauce company.

2 (4 ounce) packages crescent roll dough
8 ounces brie cheese
2 tablespoons Tabasco jalapeno sauce
1 egg, beaten

Steps:

  • Preheat oven to 375°F Cut away rind from Brie.
  • Remove crescent roll dough from tubes and place on a floured surface; knead all the dough together and roll or press into a thin circle large enough to encase the cheese.
  • Move the dough to an ungreased baking sheet.
  • Place the Brie in the center of the dough.
  • Use a fork to poke the top of the cheese several times.
  • Pour half of the hot sauce on the cheese, spreading it around with a spoon; let it sit a minute or two so the sauce can sink inches Spread the rest of the sauce on the cheese- it's ok if some dribbles down the sides.
  • Fold the dough up over the top of the cheese and pull it shut with your fingers.
  • Brush the edges of the dough with the egg to help seal.
  • Bake for about 10 minutes or as the dough package directs; or until browned.
  • Don't overbake or the cheese will run out.
  • Remove from pan to a serving dish and serve hot.

1 small wheel of Brie or Camembert (about 9 ounces)
1/2 cup pecan pieces
3 tablespoons light-brown sugar
3 tablespoons pure maple syrup
crackers or sliced baguette, for serving

Steps:

  • Preheat oven to 350 degrees. Place cheese on a rimmed baking sheet; bake until softened, 15 to 20 minutes. Transfer to a serving plate; cool about 20 minutes.
  • While cheese cools, place nuts on a clean baking sheet; bake until toasted and fragrant, 7 to 10 minutes. Sprinkle nuts over cheese.
  • In a small saucepan, combine sugar and maple syrup. Bring to a boil over medium heat; simmer until foamy, 1 to 2 minutes. Drizzle warm sauce over slightly cooled cheese and nuts; serve with crackers or baguette.
