- Mix the egg, milk, and flour and pour on top.
- Bake at 350 for 35 minutes.
- You can use more or less jalapeno according to your taste or you can even use green chilis if you prefer.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a medium bowl, mix the evaporated milk, water, eggs, Cheddar cheese, flour, baking powder, margarine, green onions and jalapeno peppers.
- Spread mixture evenly into the baking dish. Bake in the preheated oven 30 to 35 minutes, or until lightly browned. Cool, cut into 1 inch squares and serve.

SHERRI'S JALAPENO CHEESE SQUARES
A really simple and tasty appetizer or brunch item. I use jalapenos but you can also use the canned green chilies which aren't as spicy-hot. Also, changes/additions include adding salsa, chorizo or spicy breakfast sausage, or use your favorite cheese like monterey jack. I like these served warm (not hot) from the oven. Enjoy!

- 1. Combine all shredded cheeses in a large bowl. Place half of the cheeses in a sprayed 13x9 pan. Layer jalapenos over cheese mixture and then top with remaining cheeses. Beat flour, eggs and evaporated milk til smooth. Spread over cheese mixture. Bake for 40-45 minutes. Let cool for about 20 minutes before cutting.
- 2. For variations I have added minced onion,crumbled bacon or ham.

- Preheat oven to 350 degrees. Line the bottom of a 9-inch square baking pan, lightly coated with cooking spray, with a single layer of pickled jalapeno slices. Beat eggs in a medium bowl. Add both cheeses and mix well. Spread egg mixture over the top of the jalapeno slices. Bake about one hour. Cool 5-10 minutes before slicing into 2-inch squares.

- Preheat oven to 400°. Coat an 8x8-inch baking pan with cooking spray or oil. Set aside. Beat eggs with fork in medium bowl. Add remaining ingredients and blend thoroughly, mixing by hand. Pour into prepared pan and bake approximately 20 minutes or until set. Let cool slightly and cut into squares. Serve hot or cold. Editor's Extra: My friend made half a recipe in a small Corningware dish and it worked perfectly. This can be served as a side dish, or try doubling the recipe for a great breakfast entrée.
