6 eggs
1 ¼ pounds shredded Cheddar cheese
1 (4 ounce) can canned diced jalapeno peppers

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x12-inch baking dish.
  • Beat eggs together in a bowl; stir Cheddar cheese and jalapeno peppers into the eggs. Pour mixture into the prepared baking dish.
  • Bake in the preheated oven until cheese is bubbling and lightly browned, 20 to 25 minutes. Cool and cut into squares.

Jalapeno Cheese Fudge image

This fudge is so delicious! Spicy and good! Great with beer or a cocktail or Soda.

1 lb sharp cheddar cheese
1 lb monteray jack cheese
2 eggs
1/2 c flour
1 can(s) evaporated milk
1 c pickled jalapeno whole or chopped

Steps:

  • 1. Preheat oven to 350 Degrees F
  • 2. Grate cheese and mix together or grate in pan. Spread evenly on a square 8x8 or 9x9 cake pan or cookie sheet. (not greased).
  • 3. Chop or keep jalapenos whole, then scatter jalapenos over cheeses.
  • 4. Mix eggs, flour and evaporated milk with a fork.
  • 5. Pour over cheese and jalapeno Mixture.
  • 6. Bake 40 minutes at 350 degrees.
  • 7. Cut in squares when cool. Serve with club crackers or any crackers of your choice or vegetables.

As a cheese lover, there is nothing better than Jalapeno Mexican Fudge. It reminds me of a dense version of a cheese soufflé, with a crusty caramelized top, savory, soft cheesy inside and a jalapeno kick...indulgent and INCREDIBLE!

2 lbs Cheddar cheese (mild or medium), grated
2 lbs Monterrey Jack cheese, grated
7 whole eggs, beaten
7 oz cream or evaporated milk (Just a little over 3/4 cup)
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 jar (12oz) pickled, sliced jalapenos, drained**

Steps:

  • Step 1 Preheat oven to 350 degrees. Lightly grease a 9×13 pan.Step 2 Spread sliced jalapenos across the bottom of the pan into one layer. **Test your jalapenos heat. If you want less heat, you can use less jalapenos or chop them up.Step 3 In a large mixing bowl, combine shredded cheeses, eggs, milk, garlic and onion powder. Mix will. ( I use my hands here.)Step 4 Pour cheese mixture over jalapenos and spread evenly.Step 5 Bake for 45-55 minutes or until golden brown and bubbly.Step 6 Cool at least 20 minutes before cutting. For best cutting results cool completely.Step 7 For a 9×9 pan: Use 1lb of each cheddar and monterrey jack, 3 beaten eggs, 6 tablespoons of evaporated milk or cream, 1/4 teaspoon garlic powder and 1/8 teaspoon onion powder. Prepare pan the same, using half a jar of jalapenos. Bake for 25-35 minutes.

1 whole garlic bulb
2 teaspoons olive oil
1/8 teaspoon salt
6 jalapeno peppers
1 package (8 ounces) cream cheese, softened
2 tablespoons shredded Parmesan cheese
2 tablespoons Worcestershire sauce
2 tablespoons butter, softened
12 slices multigrain bread
6 slices smoked provolone cheese
12 cooked bacon strips

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with oil. Sprinkle with salt. Wrap in foil. Bake until cloves are soft, 25-35 minutes. Unwrap and cool to room temperature., Meanwhile, cut peppers lengthwise in half; remove stems and seeds. Place peppers on a foil-lined baking sheet, skin side up. Broil 4 in. from heat until skins blister, about 5 minutes. Immediately place peppers in a small bowl; let stand, covered, 10 minutes. Peel off and discard charred skin. Cut pepper strips in half., Preheat large cast-iron skillet or electric griddle for medium heat. In a small bowl, squeeze garlic from skins; mash with a fork. Beat in cream cheese, Parmesan cheese and Worcestershire sauce until blended. Spread butter over one side of each bread slice. Spread cheese mixture over unbuttered side of six bread slices. Layer each with jalapeno pepper pieces, one slice provolone cheese and two bacon strips. Top with remaining bread slices, buttered side up. Cook sandwiches until golden brown and cheese is melted, 4-6 minutes on each side.

1 (8 ounce) package cream cheese, softened
1 cup shredded Monterey Jack cheese
1 (4 ounce) can diced jalapeno peppers
2 cloves garlic, pressed
3 green onions, diced
1 (16 ounce) package wonton wrappers
1 quart vegetable oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Monterey Jack cheese, jalapeno peppers, garlic and green onions.
  • Fill wonton wrappers with approximately 1 teaspoon cream cheese mixture each. Fold wrappers into triangles and press the edges with a moistened fork to seal.
  • In a large, deep skillet, heat the oil over medium high heat. Drop 4 wontons at a time into the oil and quickly fry, turning once. Remove when golden brown and drain on paper towels.

24 medium fresh jalapeno peppers
1 package (8 ounces) cream cheese, softened
3 cups finely shredded cheddar cheese
1-1/2 teaspoons Worcestershire sauce
4 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.
