1 (24 ounce) jar tomato sauce
1 (16 ounce) jar seedless blackberry jam
¾ (10 ounce) jar jalapeno jelly
½ cup brown sugar
¼ cup mustard
3 tablespoons Worcestershire sauce
2 tablespoons ground black pepper
1 ½ teaspoons apple cider vinegar
½ teaspoon garlic powder
5 drops liquid smoke

Steps:

  • Combine tomato sauce, blackberry jam, jalapeno jelly, brown sugar, mustard, Worcestershire sauce, pepper, vinegar, garlic powder, and liquid smoke in a saucepan over medium-high heat and bring to a simmer. Cook until flavors combine, 3 to 5 minutes.

1 small onion, julienned
1 whole jalapeno, chopped finely
2 garlic cloves, minced
1 tablespoon butter
3/4 cup ketchup
1/4 cup pineapple, thinly sliced
2 tablespoons Worcestershire sauce
1 teaspoon salt

Steps:

  • Melt butter in saute pan.
  • Sweat onions in butter.
  • Add a teaspoon of salt.
  • When onions are translucent, add garlic, jalapeno and pineapple.
  • Saute until jalapeno and pineapples become soft.
  • Add ketchup, stirring often until ketchup is heated through.
  • Finish with worcestershire, stir to combine.
  • Remove from heat and allow to cool.
  • Once cooled, move to blender and process to combine.
  • Add ketchup sparingly if sauce is to thick.

2 lbs Strawberries with the green removed and chopped
1 cup white onion, chopped
5 cloves garlic, chopped
2 Tablespoons Olive Oil
5 fresh Jalapenos, seeded and chopped without the seeds (you can add the seeds for a spicier sauce)
3 Tablespoon Tomato Paste
1 cup cider vinegar
2 Table spoons chili powder
1 cup dark brown sugar

Steps:

  • In a large sauce pot set over medium high heat, cook the onions and garlic until translucent. Add the rest of the ingredients and bring to a boil. Simmer until the sauce thickens. Either in a blender or with an immersion blender, purée the sauce until smooth. Season with salt & pepper and refrigerate.

For the chicken
1 1/2 lbs chicken breasts (or thighs w/bone)
1 Tbsp butter
Salt & pepper
1/4 cup bottled BBQ sauce
For the sauce:
1 Tbsp EVOO
1 large shallot, thinly sliced
1 large jalapeño, seeds removed and minced
1 cup tart frozen cherries
1/4 cup dried cherries
2 Tbsp chicken or veggie broth
1 Tbsp brown sugar
1/2 Tbsp cornstarch
1/2 Tbsp water
salt & pepper

Steps:

  • For the chicken: 1. Preheat oven to 450. Heat butter in cast iron skillet over med-hi heat. 2. Season both sides of chicken with S/P. Add chicken to skillet and pan sear about 5 minutes, until golden brown. 3. Flip chicken over and spoon bottled BBQ sauce evenly over top. Transfer skillet to oven and bake 15 minutes or until cooked through. For the cherry jalapeño sauce: 1. Heat EVOO over med-hi heat in sauce pot. Add shallots and jalapeño and sautee 3 minutes, until softened. 2. Add the garlic and cook for 30 seconds, until fragrant. 3. Add both cherries, broth and brown sugar. Mix and bring to simmer. 4. Simmer sauce and cook down for 10 minutes. 5. Mix cornstarch and water in a small bowl. Add the slurry to the sauce and stir until thickened, about 1 minute. 6. Remove sauce from the heat. Use an immersion blender to blend sauce a bit, leaving some chunks. (sauce can also be left as is.) Season with S/P. 7. Spoon sauce over cooked chicken and serve.

1 pound (4 pieces) "cubed" sirloin steak
2 cups your favorite hickory smoked BBQ sauce
1/4 cup scallions, chopped
2 tablespoons chopped fresh garlic
1 tablespoon chopped fresh rosemary leaves
1 whole jalapeno pepper, sliced thin
1/4 cup canola oil, plus 2 tablespoons, plus more oil for grill
1 large Vidalia onion, sliced 1/4-inch thick
4 kaiser rolls, split in half
2 tablespoons butter, melted
8 slices Cheddar
Coleslaw and dill pickles, as an accompaniment

Steps:

  • Pierce the steaks with a fork to make numerous holes.
  • In a medium bowl, mix BBQ sauce, scallions, garlic, rosemary, and jalapeno pepper. Remove 1/2 cup of mixture and reserve for rolls. Add 1/4 cup oil and the steaks to the bowl and let marinate for 30 minutes, or up to 2 hours.
  • Preheat grill to medium and oil grates.
  • Place steaks on the oiled grill and grill 3 to 4 minutes on each side. Remove steaks to a plate and set aside.
  • Rub grill with 2 tablespoons oil. Grill onions until desired char marks are made. Brush the cut sides of the rolls with melted butter and toast (or grill); set aside. Top each steak with 2 slices of cheese and some grilled onions. Place the steaks back on the grill, and cover until cheese is melted. Spread toasted buns with the 1/2 cup of reserved sauce, if desired, and place the steaks on the bottom half of the rolls. Cover with the top halves and serve with coleslaw and pickles.

This is a delicious sauce that has a slow rising heat.

32 oz v8 low sodium
24 oz catsup low sodium, low so optional
12 budweiser
3 large jalapenos
5 clove garlic
1/2 sweet onion
1/2 c brown sugar
3/4 c molasses
3 Tbsp worcestershire sauce
2 tsp liquid smoke
1/4 c apple cider vinegar
2 tsp paprika
ADD AT END OF COOKING
1/2 c brown sugar
1/4 c molasses
1/4 tsp cumin
1 Tbsp granulated garlic
1 tsp liquid smoke flavoring
2 tsp apple cider vinegar

Steps:

  • 1. Place garlic in food processor and mince. Remove and add jalapenos to food processor after removing the stem. Finely chop. Dice onion.
  • 2. Add all ingredients except those you re-season with at the end. Simmer for about 4 hrs.
  • 3. At end of cooking time while sauce is still very hot, add remaining ingredients, stir well to combine and allow to cool to refrigerate.
