HOT DOG CHEESY MACARONI CASSEROLE
Steps:
- Preheat the oven to 350°F. Spray a 12 x 8 inch baking dish with cooking spray. Set aside.
- Cook the macaroni in salted water per the package directions until al dente. Drain well.
- Meanwhile, in a separate pan over medium-high heat add 6 Tbsp of butter to reserved 2 Tbsp bacon drippings. Add onion.
- Cook for 3 minutes until the onion has softened. Lower the heat to medium and add the flour, garlic salt, mustard and black pepper. Stir until the flour has absorbed the butter. Cook stirring constantly for 1 minute.
- Gradually whisk in the milk. Bring to a boil then immediately lower the temperature to low heat. Allow to bubble gently for 5 minutes to thicken.
- Remove sauce from heat. Add 3 cups cheddar cheese and crumbled bacon. Reserve 2 Tbsp crumbled bacon for garnishing. Stir until the cheese has melted.
- Pour sauce over macaroni. Add hot dogs. Mix until macaroni is evenly coated and hot dogs are evenly distributed. Pour into the baking dish.
- Top with the remaining 1 cup of cheese. Dot with 1 Tbsp butter.
- Bake for 30-35 minutes until golden and bubbly.
- Garnish with bacon crumbles and sliced green onion. Serve immediately.

- Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions; drain.
- Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over medium heat. Add the panko and cook, stirring constantly, until golden brown, about 4 minutes. Transfer to a bowl.
- Combine the half-and-half, mustard, garlic powder and remaining 6 tablespoons butter in the saucepan and bring to a bare simmer over medium-high heat. Add the Cheddar and processed cheese and stir until smooth. Stir in the macaroni and jalapenos and season with salt. Transfer to a serving bowl and sprinkle with the panko and cilantro.

- Cook macaroni according to package directions for al dente; drain. Transfer to a greased 5-qt. slow cooker., Melt 2 tablespoons butter in a large skillet over medium-high heat. Add jalapenos; cook and stir until crisp-tender, about 5 minutes. Add to slow cooker. Stir in the cheeses, milk, soups, mayonnaise and pepper., Cook, covered, on low for 3 hours or until cheese is melted and mixture is heated through. Melt remaining butter; stir in crackers. Sprinkle over macaroni mixture.

Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion.
