Number Of Ingredients 17

1 3-4 lb. whole chicken (cut into 8 pieces (skin left on))
1/2 c. canola oil
2 TBS grill seasoning
Salt and Pepper to taste
1/2-3/4 c. Jack Daniels (or to taste)
1/2 c. onion (chopped)
4 cloves garlic (minced)
2 c. ketchup
1/3 c. vinegar
3 TBS Worcestershire sauce
1/2 c. brown sugar (firmly packed)
3/4 c. molasses
1/2 tsp. pepper
1/2 TBS salt
1/4 c. tomato paste
1 tsp. Liquid Smoke
1/2 tsp. Tabasco sauce (or to taste)

Steps:

  • Combine onion, garlic and Jack Daniels in a 3 quart saucepan.
  • Sauté until translucent, about 10 minutes.
  • Add all remaining ingredients and bring to a boil.
  • Simmer uncovered until reduced and thickened (about 15 to 25 minutes).
  • Add more Jack Daniels if a stronger flavor is desired.
  • In a large bowl combine chicken, oil, grill seasoning, salt, and pepper. Allow to sit at room temperature about 20 minutes.
  • Heat grill to high. Spray well with cooking spray.
  • Sear chicken on each side for 2 minutes.
  • Reduce heat to medium and continue cooking for about 25 minutes, turning every 3-4 minutes to crisp both sides.
  • Baste with barbecue sauce and continue cooking for 6-7 minutes, turning often and re-basting.

I have not tried this chicken. I'm posting this for safe keeping. I found this recipe at Obesity Help. It was posted by hear_me_roar. Many of you are thinking....wait.....how can this be low carb with pineapple juice? Easy you're simply basting with it...allowing the acids in it to penetrate the meat. the sugars aren't able to penetrate the meat and are only on there during caramelization, so most will drip right off. This is a low carb feel good kinda meal.... so give it a whirl... (the alcohol does burn off, so no carbs from those either....)

2 lbs bone in chicken breasts
4 tablespoons soy sauce
3/4 cup pineapple juice
1 1/2 teaspoons garlic powder
1/4 teaspoon cayenne
1/4 cup Jack Daniels Whiskey
the juice of one fresh lime

Steps:

  • Combine all ingredients and mix well.
  • Place meat in sauce let stand for no less than 2 hours and place on grill
  • over hot coals or hot gas grill. When meat is turned, brush with sauce. (try to only turn once or twice for that nice caramelized coating).
  • Just before meat is removed from grill, brush again with sauce.
  • Serve with green beans on the side to keep it very low carb.

1 tablespoon olive oil
1/2 medium onion, thinly sliced
4 boneless skinless chicken breasts
1/4 teaspoon garlic powder
1/4 teaspoon poultry seasoning
salt & pepper
water
1/4 cup mayonnaise
2 tablespoons ranch dressing (I use Wishbone, it has lower carbs)
1/2 tablespoon grated parmesan cheese
1/8-1/4 teaspoon paprika
2 ounces cream cheese, softened
2/3-1 cup shredded colby-monterey jack cheese

Steps:

  • Preheat the oven to 350°F Sprinkle the breasts with salt & pepper.
  • Pour the olive oil into a hot pressure cooker then add the onions. Cook the onions for 5 minutes then add the chicken along with the garlic powder & poultry seasoning.
  • Put enough water in the cooker to just cover the chicken. Cover with the lid then cook for 10-12 minutes.
  • Meanwhile, mix together the ingredients for the sauce excluding the shredded cheese.
  • Once the chicken is done use a slotted spoon to remove the chicken along with the onions. Place them into a glass baking dish.
  • Spoon the sauce over the chicken then top with the shredded cheese. Bake in the oven for 15 minutes.

1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

1/3 cup jack daniel whiskey
1/2 cup brown sugar, firmly packed
1/3 cup soy sauce
1/3 cup water
1 tablespoon Worcestershire sauce
1 teaspoon lemon juice
1/8 teaspoon garlic powder
2 1/2 lbs chuck roast

Steps:

  • Combine whiskey, brown sugar, soy sauce, water, Worcestershire sauce,lemon juice and garlic powder, mix well.
  • Place roast into a plastic bag; add marinade (saving some back for basting) and seal.
  • Place in a dish;refrigerate overnight,turning occasionally.
  • Grill over medium coals/medium heat (with Jack Daniel's Barrel Chips, soaked in water- if you can find them), about 20 to 25 minutes per side for medium.
  • Baste occasionally with extra marinade.
  • To serve, cut into thin slices.
