FRESH CORN AND TOMATO SOUP

1 celery rib, chopped
1 small onion, chopped
1/4 cup chopped green pepper
2 tablespoons butter
4 cups chopped seeded peeled tomatoes
2 cups chicken broth
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon white pepper
2 cups fresh sweet corn
1 tablespoon minced fresh basil
2 tablespoons minced fresh parsley
1 green onion, finely chopped

Steps:

  • In a large saucepan, saute the celery, onion and green pepper in butter until tender. Stir in tomatoes and broth. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Press through a sieve or food mill; return to the pan. Add the sugar, salt and white pepper. Bring to a boil. Stir in corn and basil. Reduce heat; simmer, uncovered, for 3-5 minutes or until corn is tender. Garnish with parsley and green onion.

3 tablespoons olive oil
3 tablespoons butter
1/4 to 1/2 teaspoon crushed red pepper flakes
3 large carrots, peeled and chopped
1 large onion, chopped
2 garlic cloves, minced
2 teaspoons dried basil
3 cans (28 ounces each) whole peeled tomatoes, undrained
1 container (32 ounces) chicken stock
2 tablespoons tomato paste
3 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
1 cup heavy whipping cream, optional
Fresh basil leaves, thinly sliced, optional

Steps:

  • In a 6-quart stockpot or Dutch oven, heat oil, butter and pepper flakes over medium heat until butter is melted. Add carrots and onion; cook, uncovered, over medium heat, stirring frequently, until vegetables are softened, 8-10 minutes. Add garlic and dried basil; cook and stir 1 minute longer. Stir in tomatoes, chicken stock, tomato paste, sugar, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer, uncovered, to let flavors blend, 20-25 minutes. , Remove pan from heat. Using a blender, puree soup in batches until smooth. If desired, slowly stir in heavy cream, stirring continuously to incorporate; return to stove to heat through. Top servings with fresh basil if desired.

i love this recipe. it is fast and simple. I get great feedback every time I use it. You can add so many things to this soup to make it your own. I got it out of a cookbook my mom bought "Mr. Food Cookin' Quickies". I always have to have a yummy grilled cheese sandwich to go with this soup.

1 (10 ounce) package frozen whole kernel corn, thawed
2 teaspoons dried Italian seasoning
1 tablespoon roasted garlic-flavored vegetable oil (see tip below)
1 (14 ounce) can chicken broth
1 (10 3/4 ounce) can tomato soup, undiluted
1/2 teaspoon pepper

Steps:

  • Saute corn and Italian seasoning in hot oil in a large saucepan over medium-high heat 2 minutes.
  • Add broth and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 15 minutes.

2 tablespoons extra-virgin olive oil
2 shallots, coarsely chopped
1 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 1/4 cups (1 pound) frozen corn, thawed
3 cups low-sodium chicken broth
2 medium tomatoes, seeded and chopped into 1/2-inch pieces
1/4 cup fresh basil leaves, chopped

Steps:

  • In a 3-quart saucepan, heat the oil over medium-high heat. Add the shallots, salt and pepper. Cook, stirring occasionally, until soft, about 3 minutes. Place the cooked shallots, corn and chicken stock in a blender. Blend until smooth.
  • Pour the corn mixture back into the saucepan. Bring the mixture to a simmer over medium heat. Cook for 5 minutes, stirring occasionally. Remove the pan from the heat and stir in the tomatoes and basil.
  • Ladle the soup into bowls and serve.

30 g butter or 30 g margarine
1 small onion, peeled and chopped
1 small green bell pepper, cored, seeds removed, and chopped
1 tablespoon flour
2 beef bouillon cubes (diluted in a litre of water) or 2 vegetable bouillon cubes (diluted in a litre of water)
450 g tomatoes, chopped
2 tablespoons tomato puree
120 g orecchiette
1 tablespoon horseradish sauce
salt & pepper
2 tablespoons sour cream
1 tablespoon chopped fresh parsley

Steps:

  • Heat the butter in a pan. Add onion and green pepper, cover and cook for 5 minutes. Add flour and stir.
  • Add stock, tomatoes and tomato puree. Simmer for 15 minutes. Puree soup and pass through a sieve.
  • Return to pan, season with salt and pepper. Add pasta 10 minutes before serving. Simmer and stir occasionally. Add horseradish before serving.
  • Garnish with sour cream and parsley. Serve immediately.
