FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES
These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

Steps:
- Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
- Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
- Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
- Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

- Heat the oil in a skillet over medium heat. Add the sausages; cook until browned on all sides, following cooking instructions indicated on the packaging. Remove sausages from the pan. Drain grease, leaving about a tablespoon for the vegetables.
- Cook peppers and onions in skillet over medium heat until they begin to soften. Add garlic, salt, and pepper and cook one more minute.
- Stir in Classico Tomato & Basil Sauce. Increase heat until sauce begins to boil; reduce heat and simmer over low heat.

SEASONING FOR GROUND PORK (ITALIAN-STYLE SAUSAGE)
This recipe is to be used in place of Italian sausages without the casings, the amount of spice blend is good for 2 pounds of ground pork, I most always add in an a small onion and 2 tablespoons fresh garlic to the pork mixture in place of the dried, you might want to adjust the seasonings to suit taste, and for spicy add in 1-2 teaspoons crushed chili flakes or to taste --- if desired you may cover and refrigerate the uncooked pork mixture overnight to blend the flavors even more!

CHICAGO STYLE ITALIAN SAUSAGE AND PEPPER DEEP DISH PIZZA

- Divide the dough in half. Roll each half into a 12-inch circle, about 1/2-inch thick. Press the dough into 2 greased 12-inch deep-dish pizza pans. Cover with a clean dish towel and let rise 30 minutes.
- Preheat the oven to 400 degrees F.
- In a large saute pan, over medium heat, add 2 tablespoons of the olive oil. When the oil is hot, add the onions. Season with salt and pepper and saute for 2 minutes. Add the peppers, season with salt and pepper, and continue to saute for 3 minutes. Remove from the heat. Transfer to a bowl and set aside.
- In the same pan, over medium heat, add the sausage and render for 4 to 6 minutes. Remove and drain on paper towels.
- Lay 1/4-pound of the sliced provolone on the bottom of each pizza. Spoon 1/2 the onion and pepper mixture over each pizza. Sprinkle 1/2 of the sausage over the onion mixture on each pizza. Scatter 1 cup sliced mushrooms over sausage. Spread 1 cup of the tomato sauce over the top of each pizza. Layer 1/4-pound mozzarella slices over top of each pizza. Drizzle with remaining olive oil. Bake the pizzas for 25 to 30 minutes or until golden brown.
- Remove the pizza from the oven and cut into individual servings.
- In an electric mixing bowl, whisk the yeast, sugar, water and lard together to make a paste. Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and crawls up the dough hook. Remove the dough from the bowl. Grease the bowl with olive oil and place the dough back in the bowl. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 1 hour. Turn the dough out onto a floured surface and divide dough in half. Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes. The dough is ready to be shaped.
AUTHENTIC ITALIAN FEAST STYLE- SAUSAGE AND PEPPERS RECIPE

- 1. Although you can broil or pan fry them, authentic feast style sausages are always grilled outside in the open air until well browned.
- 2. Place sliced peppers and onions into a saucepan over medium heat, top with oregano and parsley, sprinkle with salt and black pepper and then drizzle with your olive oil.
- 3. Be sure to stir this mixture every few minutes and continue to cook until the peppers and onions and soft but not mushy. (Approximately 20 minutes)
- 4. Slice your fresh Italian bread in half lengthwise and place 2 sausages into the fold. Top with enough sausage and peppers to fill. Go ahead and make them messy, they're more fun that way!
- 5. Serve and enjoy immediately.
HOMEMADE BULK ITALIAN SAUSAGE, CHICAGO STYLE
After having lived in Chicago for over 25 years, I crave Italian sausage and of course it is not available in Denmark, so I have adapted this recipe from one I found on grouprecipes.com. This is excellent to use on deep dish Chicago style pizzas and it also freezes well.

- Using a spice grinder or food processor, pulverize the salt, black pepper and sugar. In a large bowl, mix together the pork shoulder, back fat, garlic powder, mace, coriander, cayenne and ice water. Mix in the salt, pepper and sugar. Use latex gloves when mixing to avoid contamination of the meat, and keep the mixture cold.

- Poach raw sausages in 1/2 cup water in a covered skillet, simmering until almost done.
- This takes about 8 to 10 minutes.
- Sautè onions and peppers with olive oil, salt, pepper and oregano 4 minutes on medium-high heat.
- Add the wine, cover and cook 4 minutes more.
- Uncover and cook until moisture is absorbed.
- On either a grill or in a skillet with a little extra-virgin olive oil, cook the poached sausages over medium-high heat 7 to 10 minutes, turning often to ensure even browning.
- In a large baking dish or pan, place the opened rolls.
- Fill the rolls with 1 sausage in each roll and evenly distribute the onions and peppers.
- Mix the 3 shredded cheeses and evenly sprinkle that on top.
- Place in oven, uncovered, on 400°F or until the cheese is melted.
- Remove from oven, top with some Marinara sauce, close the sandwiches and serve.

- In a small skillet, toast fennel seeds over high heat, shaking the pan to keep seeds from burning, until fragrant, about 1 minute. Transfer seeds to a bowl. Add ground fennel, salt, black pepper, sugar, and nutmeg or anise. If making hot sausages, add red-pepper flakes and cayenne pepper as well. Stir to combine. Set seasoning blend aside.
- If you are grinding your own sausage, fit meat grinder with a 1/2-inch die (or the larger of the two dies, if using a grinder with only two sizes). Pass meat through grinder into a large bowl. Meanwhile, mix seasoning blend with 1 1/2 ounces water. Sprinkle seasoning blend over meat and toss gently with hands to distribute evenly. Pass meat through grinder a second time, using the same die. (If using preground meat, gently toss with seasoning.) Cover bowl and refrigerate until ready to stuff sausages.
- Transfer meat to a sausage stuffer or stand mixer fitted with a sausage stuffing attachment and plastic stuffing tube. Put a baking sheet or bowl below stuffing tube to catch sausages as they are stuffed.
- Carefully slide the casing onto stuffing tube. Leave about 3 inches of casing hanging off end of tube. Begin cranking sausage meat into casing, guiding stuffed sausage with one hand to keep meat moving consistently through casing so sausages are neither overstuffed nor understuffed. As casing is stuffed, curl sausage into a coil.
- When all sausage has been stuffed, slide remaining casing off tube and tie a knot at both ends as close to the meat as possible. Twist sausages several times to create links every 4 inches, alternating the direction you twist. Store in a resealable bag and cook within 1 week of making, or freeze up to 3 months.

- To prepare casings: Let casings soak in cool water about five minutes to remove salt on outer surface (no longer, or they will become too tender to stuff) and flush salt from the inside by placing one end on faucet nozzle and turn on cold tap water (if you see holes or water leaking, cut and discard).

- 1. I am using 1 thick cut pork chop per person and 2 sausage links per person, so you can portion size this dish according to how many your feeding. Could be 6 or 8, size pan accordingly.
- 2. POTATOES FIRST: With skins on, clean and boil until fork tender all your potatoes, set aside and cool. When cooled and remove skins and cut into wedges, set aside.
- 3. PORK CHOPS AND SAUSAGE: Pan should be the size needed to hold all chops,sausage and potato wedges. Put in the bottom of the pan just a sprinkle of olive oil and 3/4 cup of water. Place your pork chops, sausage and potato wedges on top of olive oiland water for all to fit. Sprinkle with just a little grated cheese.
- 4. TOPPING: Chop vidalia onion, add grated cheese, Italian seasoned bread crumbs and mix together. Sprinkle all of this all over the chops, sausage and potato wedges. Sprinkle with a little more olive oil and BAKE 350 for 1 hour until pork chops are done, check that they are done and sausage is done according to your ovens heat. - 1. Begin by rinsing and seeding the peppers,slicing them and the onions. Saute the onions and garlic on high with two tablespoons of olive oil until just beginning to brown,add the bell peppers and saute for two or three minutes more,remove to a mixing bowl using a slotted spoon.

NEW YORK STYLE ITALIAN SAUSAGE TOPPING
Steps:
- If possible, use a cast iron skillet to cook veggies. Heat skillet to medium high then add olive oil. Add onions, bell pepper and roma tomatoes on top of each other, in that order. Sprinkle basil and season salt on top of mixture. Grill for 10 minutes undisturbed. Then mix the veggies up and cook for another 15-20 minutes until browned. Serve over italian sausage in a bun with other condiments of your choice like mustard.

I like to add Italian sausage as a topping on my homemade pizza. Came up with this blend after much experimentation. I fry it all and freeze in portions for use as pizza topping. It's ground pork with all fixings to make a simple sausage you can prepare at home.
