A quick and easy sandwich with ham, turkey and swiss slices, dipped in an egg/milk mixture and fried to a golden brown. A hot alternative to the usual lunch or snack. Try it with berry jam on the side.

2 slices bread
1 teaspoon mayonnaise
1 teaspoon prepared mustard
2 slices cooked ham
2 slices cooked turkey meat
1 slice Swiss cheese
1 egg
½ cup milk

Steps:

  • Spread bread with mayonnaise and mustard. Alternate ham, Swiss and turkey slices on bread.
  • Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

1/2 cup seedless red raspberry jam
2 tablespoons Dijon mustard
1/2 teaspoon chopped fresh rosemary
8 slices brioche bread
8 thin slices Swiss cheese
16 thin slices prosciutto cotto
4 large eggs, at room temperature
3/4 cup heavy cream, at room temperature
1/8 teaspoon kosher salt
2 tablespoons extra-virgin olive oil
3 tablespoons powdered sugar

Steps:

  • In a small bowl, mix together the jam, mustard and rosemary. Lay out the slices of bread. Divide the mustard mixture evenly over the 8 slices of bread and spread almost to the edges. Put a slice of cheese on each piece of bread, followed by 2 slices of prosciutto. Put together 2 of the bread slices for each sandwich.
  • In a medium bowl, whisk together the eggs. Add the heavy cream and salt and whisk to combine.
  • Heat a large skillet over medium heat. Add the oil to the pan and heat for 1 minute. Working with one sandwich at a time, dip both sides of the sandwich in the batter and place directly into the hot pan. Repeat with the remaining sandwiches. Cover with a lid and allow to cook until the first side is golden brown, 3 to 4 minutes. Remove the lid, flip each sandwich and continue to cook on the remaining side until golden brown and the cheese is melted, approximately another 4 minutes. (Or cook in batches if needed.)
  • Sprinkle one side of each sandwich with powdered sugar and serve warm.

6 eggs
1/4 cup heavy cream
1 teaspoon vanilla extract
2 tablespoons sugar
1 1/4 teaspoon ground cinnamon
1 teaspoon salt
8 slices white bread
8 slices Swiss cheese, thinly sliced
1/2 pound ham, thinly sliced
1/2 pound turkey, thinly sliced
4 tablespoons butter
1 (16-ounce) can cranberry sauce
1/4 cup maple syrup
1 teaspoon freshly ground black pepper
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, whisk together eggs, cream, vanilla, sugar, cinnamon, and salt and set aside.
  • Lay the 8 slices of bread out on a flat surface. Lay 1 slice of cheese on each slice of bread. Then on 4 slices of the bread lay 1 slice of ham. On the other 4 slices lay 1 slice of turkey. Top all 8 slices with 1 slice of Swiss. Make 4 sandwiches and coat with egg mixture.
  • *Cook's Note: You may add more Swiss, turkey or ham, if desired
  • In a large skillet over medium-heat melt the butter.
  • Add the sandwiches to the pan and cook until golden brown, about 3 minutes on each side.
  • Remove the sandwiches to a sheet pan and place in the oven. Bake until the cheese has melted and the sandwiches are warm throughout, about 5 minutes.
  • In a large bowl, whisk all of the ingredients together until smooth.
  • Cut the sandwiches into quarters and serve with the cranberry syrup.

I know it was a "newsletter" recipe, I just can't remember which one....I didn't print that part. Maybe, with all of my recipes in one place they will get made and not forgotten about.

8 slices whole wheat bread
6 ounces mozzarella cheese, cut into 4 slices
1 tomatoes, cut into 8 thin slices
1/3 cup yellow cornmeal
2 tablespoons parmesan cheese, freshly grated
1 teaspoon dried basil or 1 tablespoon fresh basil, chopped
3 large eggs, beaten
1/4 cup milk
2 tablespoons butter, divided
1 cup marinara sauce, warmed for dipping

Steps:

  • On 4 of the slices of bread, place 1 cheese slice and 2 tomato slices.
  • Top with remaining bread slices.
  • On a sheet of wax paper/parchment paper combine together cornmeal, Parmesan cheese, and basil.
  • In a shallow bowl, combine the eggs and the milk, mix well.
  • In a large nonstick griddle or skillet melt 1 Tbs of butter over medium - medium high heat.
  • Dip sandwiches in egg mixture, then coat with the cornmeal mixture. Do this 2 sandwiches at a time.
  • Place 2 sandwiches on the griddle/skillet and cook for 3 min on each side or until golden.
  • Repeat with last 2 sandwiches.
  • Cut sandwiches in half; serve warm with marinara sauce for dipping.
