1 whole chicken
1 large onion
1 lb carrot, cleaned
4 celery ribs, cleaned
2 knorr's chicken bouillon cubes
1 knorr's vegetable bouillon cube
1 (8 ounce) can tomato sauce
8 -12 cups water
1 lb cooked egg noodles
1/2 cup grated parmesan cheese
1 lb meatloaf mix (ground pork beef veal)
1 cup seasoned bread crumbs (white or wheat)
1 tablespoon granulated garlic
1 teaspoon salt
1 teaspoon pepper
1/2 cup grated parmesan cheese
1 egg

Steps:

  • Rinse chicken and clean vegetables.
  • Cut the tops off the carrots and remove onion skin but keep whole.
  • Place chicken, vegetables, bullion, tomato sauce and enough water to cover in a large stock pot, covered, over high heat until it boils.
  • Reduce heat and tilt lid to let soup simmer about 4 hours.
  • Strain fat from top of broth.
  • Carefully remove vegetables into a bowl to let cool.
  • Carefully remove chicken, it's HOT! and let rest while you strain the broth through a metal strainer into a smaller pot.
  • Mix all meatball ingredients together in a large bowl, being careful not to over-mix. In a large saucepan, add two or three generous ladles of chicken soup broth.
  • Form small meatballs and cook in soup broth simmering until cooked, about 10 minutes. Add to strained broth.
  • While meatballs are cooking, slice carrots and celery, and shred or slice chicken and add to strained broth.
  • Now, I put some noodles into the bowl and add a ladle of soup on top and top it with grated cheese. (We're Italian. Cheese goes on everything.).
  • I do not add the noodles to the soup directly because they tend to soak up all the broth , which make it difficult to eat as leftovers. This recipe makes enough for two nights for my family of 5. I freeze half for another time.

  • Roast in the preheated oven until an instant-read thermometer inserted into the center of the chicken reads at least 165 degrees F (74 degrees C), 40 to 45 minutes.

  • Rinse the chicken pieces and pat them dry.

  • Heat the olive oil in a large sauté pan over medium-high flame. Add a few chicken pieces at a time and brown them on both sides. Remove the chicken to a plate.

1 1/3 c italian bread crumbs
1/3 c grated parmigiano reggiano
1 clove garlic
1 1/2 Tbsp chopped parsley
2 eggs beaten plus 1 tbsp water
2 lb chicken cutlets
1/2 tsp pepper
1/4 tsp salt
olive oil for frying

Steps:

  • 1. Season chicken cutlets with salt and pepper. Place 2 shallow bowls on a work surface. Add the breadcrumbs, cheese, parsley, garlic and salt and pepper to one bowl. Add the beaten eggs plus 1 tbsp of water to the second bowl.
  • 2. Working with one cutlet at a time, dip the cutlet into the beaten eggs, lift and allow excess egg to drain off, then transfer to bread crumb mixture. With your hand, scoop bread crumbs on top of chicken and press lightly, turn chicken over and repeat to ensure a good layer of crumbs on both sides. Transfer the cutlet to a clean plate and repeat with remaining cutlets.
  • 3. Add oil to a large skillet over medium high heat, enough to cover the bottom. I use a clad stainless steel for this but non-stick and cast iron work well also. If using cast iron, heat over medium heat.
  • 4. Gently lower cutlets into the skillet and fry, adjusting heat as necessary for a steady, slight bubble until bottom is browned, about 3 - 4 minutes. Flip cutlets and fry until the other side is browned, about another 4 minutes.
  • 5. Transfer to paper towels to drain and repeat with remaining cutlets. I keep them in the oven at 200° on a baking sheet lined with paper towels if we are going to eat them immediately.
  • 6. *If you cannot find chicken cutlets at your local grocery, you can buy chicken breasts. Slice them in half the long way and then pound them out with a meat mallet or a heavy skillet.

1 small chunk (about one ounce) not-too-hard Parmesan cheese
1/4 cup fresh parsley leaves
1 small onion or 1/2 medium onion, cut into chunks
1 egg
Salt
freshly ground black pepper
2 tablespoons extra virgin olive oil
All-purpose flour for dredging
Lemon wedges

Steps:

  • Put chicken in freezer while you prepare other ingredients. Put Parmesan, parsley and onion in a food processor and process until everything is finely chopped. Add egg, chicken and a good sprinkle of salt and pepper, and continue to pulse until the chicken is coarsely ground - finer than chopped, but not much. Shape into one-inch meatballs, pressing no more than necessary.
  • Put the oil in a large skillet over medium heat. One by one, dredge the meatballs in the flour and add to the oil. Cook, turning as necessary, until nicely browned all over, 10 to 15 minutes. Serve hot or at room temperature, with lemon wedges.

1 lb chicken liver, rinsed and dried
1 small onion, chopped
2 garlic cloves, crushed
2 tablespoons olive oil
3/4 cup dry white wine or 3/4 cup vermouth
1 teaspoon italian seasoning (or 1/2 tsp each basil and oregano, and a pinch of rosemary)
salt and pepper
3/4 cup acini di pepe pasta or 3/4 cup other small shaped pasta
parmesan cheese, if desired

Steps:

  • Cook pasta according to package directions.
  • Drain and set aside.
  • In a skillet, heat olive oil.
  • Add onion and garlic and cook until soft.
  • Add chicken livers in a single layer and saute until firm, about 10 minutes, turning once.
  • Add wine and seasonings.
  • Cover and simmer on LOW heat about 5-10 minutes, or until livers are no longer pink inside.
  • Uncover and continue to simmer until wine is reduced by half.
  • Toss with pasta, warm through, and serve immediately with parmesan cheese if desired.
  • (NOTE) This recipe just evolved, and I usually do not measure, so proportions are approximate.
  • Add more or less wine if desired, and if it seems like too much pasta, then don't add it all.
  • I'd taste it first before you add the cheese.
  • You might like it without.

25g dried breadcrumbs

125g ball mozzarella

1 pint fresh red cherry tomatoes
1/2 pound asparagus, cooked and drained
1 white onion, medium slice (1/8 inch)
3 fresh garlic cloves
8 ounces linguini pasta, dry
1/4 cup extra virgin olive oil
1 1/2 teaspoons black pepper
1/2 cup fresh chopped basil leaves
1/4 cup low-sodium Parmesan cheese, grated
1/4 teaspoon salt

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the cherry tomatoes, asparagus, onion and garlic with 2 tbsp of the olive oil, and 1 tsp of the black pepper, spread on the sheet pan, and roast for 10 - 12 minutes. Stir half way, roast until nicely browned.
  • Meanwhile, cook the linguini according to package instructions, and reserve 3/4 cup of the pasta liquid. Drain pasta and reserve, keeping warm.
  • Prepare a large saute pan with cooking spray, and brown thawed al fresco Italian Style Chicken Meatballs over medium high heat for 4 - 5 minutes. Add the cooked pasta, roasted vegetables, and toss together.
  • Lower heat to medium, add remaining olive oil, basil, Parmesan cheese, salt, 1/2 tsp of black pepper, 1/2 cup of the pasta water (add remaining 1/4 cup if needed), toss well.
  • Serve immediately with crusty Italian bread.

  • Mix cream cheese and peppers until blended.
  • Top each chicken breast with 1 Singles piece. Spread with cream cheese mixture; roll up. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray; top with pasta sauce. Cover.

1 medium green pepper, finely chopped

2 slices good-quality white bread, crusts removed
1/4 cup half-and-half
1 lb ground chicken
1 egg
salt, to taste (optional)
1/4 teaspoon fresh ground black pepper
5 tablespoons butter, 3 of them at room temperature
1/2 cup dry breadcrumbs
1/2 cup grated parmesan cheese
2 tablespoons cooking oil

Steps:

  • Break the bread into pieces. In a large bowl, soak the bread in the half-and-half until the liquid is absorbed, about 2 minutes. Mix in the chicken, egg, salt (if any), pepper, and the 3 tablespoons room-temperature butter. Put in the freezer for about 10 minutes to firm up.
  • Remove the chicken mixture from the freezer; it will still be very soft. Form the mixture into four oval cutlets. Mix the parm and bread crumbs in a small bowl and coat the cutlets with the bread crumb mixture.
